These are a flavourful biscuits (cookies) with a crunch that doesn't break your teeth. One of my clients gave me this old family recipe.

Number Of Ingredients 7

4 ounces butter
5 ounces sugar
2 teaspoons golden syrup (equivalent here in NZ is 1 Dessertspoon)
4 teaspoons milk (equivalent here in NZ is 2 Dessertspoons)
1 teaspoon baking soda
7 ounces flour
2 teaspoons ginger (slightly rounded)

Steps:

  • In a medium to large size pot slowly melt the first four ingredients (butter, sugar, golden syrup and milk) stirring constantly until all are blended together. Don't worry about dissolving every last bit of sugar.
  • Remove from heat and then add baking soda and stir until dissolved. Leave to cool for 5 minutes.
  • Preheat oven to 150°C.
  • Sift in the flour and ginger and mix well. The mixture will be quite loose.
  • Roll into small balls and put onto a baking tray. Flatten with the heel of the hand, allowing room for spreading.
  • Bake in a slow oven, 150C - 13-15 minutes. I bake these on the rack above the middle of the oven. Simply because my oven tends to be a bit hot on the bottom.

Number Of Ingredients 8

1 lb self-raising flour
6 ounces unsalted butter
1/2 lb caster or 1/2 lb granulated sugar
1 large egg
1 teaspoon baking soda
1 teaspoon salt
4 teaspoons ground ginger
8 fluid ounces golden syrup or 8 fluid ounces light corn syrup (or, for variation, use molasses or maple syrup)

Steps:

  • Melt the butter and syrup and allow to cool slightly.
  • Sift the dry ingredients thoroughly, add the egg and lastly the melted butter and syrup.
  • Mix thoroughly, and then chill the dough until it is fairly stiff.
  • Divide the mixture into pieces the size of a small walnut, place on a greased baking sheet and flatten very slightly.
  • NOTE: Place them a few inches apart on the baking sheet (s) as they will expand during the baking process.
  • Bake for 15 minutes at 175C/350F degrees.
  • Store in a cookie tin at room temperature.
