MARY BETH'S SPICY PIMENTO CHEESE
My friends beg me to make this for their birthdays and Christmas. It is ridiculously easy and a little spicy. Duke's mayonnaise is the secret ingredient... it just doesn't taste the same without it!

Steps:
- Mix cheeses, pimentos, mayo and mustard until well-blended. Add spices and continue to stir until distributed throughout cheese mixture. Spice measurements may be adjusted to taste...I add more essence and red pepper for an extra spicy kick. Die-hard spice addicts may enjoy using pepper jack cheese for the white cheese.
- Keep refrigerated. Excellent on sandwiches, crackers, celery or crispy breads such as pita chips or bagel chips.

- Grate all cheese and place in large mixing bowl with mayo and pimentos. Stir well to mix.
- Add hot sauce and cayenne pepper. Stir until well combined.
- Cover and refrigerate several hours or overnight. Serve on toasted bread, plain bread, or your favorite crackers.
