TO-DIE-FOR THANKSGIVING STUFFING

To-Die-For Thanksgiving Stuffing image

This is a basic recipe that continues to evolve each year (one that was itself extrapolated from an intriguing Bon Appetit recipe). Add, subtract, go wild: the rich flavors of pumpernickel, bacon, and rye can stand up to just about anything! Warning: This is a HUGE recipe. Stuffs a 24 lb. turkey with leftovers to spare. Adjust as needed.

Provided by Food Network

Categories     main-dish

Number Of Ingredients 11

1 dense store-bought loaf dark pumpernickel bread, torn or cut into 1-inch cubes, stale (or dried in a 200-degree warm oven)
1 dense store-bought loaf light rye bread, torn or cut into 1-inch cubes, stale
1 lb. thick-cut bacon, chopped and browned, fat reserved
8 eggs, lightly beaten
2 large onions, chopped
8 cloves garlic (or more to taste), crushed
2 tbsp. rosemary
1 tbsp. thyme leaves
1 lb. toasted pecans
2 quarts rich chicken or turkey stock (more or less depending on your preference for dry or wet stuffing)
1 cup bourbon

Steps:

  • Saute onions, garlic, and rosemary in 4 tablespoons of the reserved bacon fat until golden and soft.
  • In a huge bowl (or the nearest thing you've got--I use the turkey roaster), combine bread cubes, eggs, and remaining bacon fat. Then add onion/garlic mixture, the thyme, and pecans.
  • Combine the bourbon and chicken stock; starting with 1 quart, add enough stock to produce the consistency YOU recognize as "stuffing."
  • When combined, stuff bird or place in separate large baking dish(es).
  • Bake at 350 for at least 45 minutes--longer if you prefer a dark crust on your stuffing.
  • Serves 12 or more as part of a Thanksgiving feast.

MARYLOU'S THANKSGIVING STUFFING

MARYLOU'S THANKSGIVING STUFFING image

Categories     Poultry     Bake     Christmas     Thanksgiving     Dinner     Stuffing/Dressing

Yield 12+ Servings

Number Of Ingredients 14

1/4 lb butter
3-4 Large Sweet Onions
12 Cups of Bread
1 Bunch of Celery
2 lbs Bob Evans Sausage
Fresh Sage
Fresh Rosemary
Marjoram
(a holiday herb pack of these three is just about right)
Celery Salt
Thyme
2 pints Heavy Cream
3-4 eggs
Chicken Stock as required, if needed

Steps:

  • Cut bread into 3/4" cubes. Soak bread in cream in extra large bowl and set aside. Brown Sausage in large fry pan in manageable portions (depends on pan size) Drain off excess grease from sausage. Sauté onions and celery with butter (use enough only as much butter as needed) Add onions, celery, browned sausage and deconstructed herbs to cream soaked bread and mix well with your hands or a large wooden spatula. If the mixture is too dry add chicken stock to bring it to a nice moist but not sopping consistency. If your not to chicken, stuff the turkey with the mix until the cavity is full. Bake the remaining stuffing in covered pyrex baking dish along side the turkey or in an oven at the same temperature as your turkey. Ok this is hella bad for you but tastes oh so good

THANKSGIVING STUFFING

Thanksgiving stuffing image

Get set for a Thanksgiving feast and bake this special stuffing for the celebrations. You can make it with any stale bread, but sourdough works well

Provided by Adam Bush

Categories     Side dish

Time 2h

Number Of Ingredients 8

250g butter, plus extra for the dish
500g stale bread, cut into 4cm cubes (we used sourdough)
2 onions, finely chopped
4 celery sticks, finely chopped
handful of sage leaves, finely chopped
4 rosemary sprigs, needles picked and finely chopped
400ml chicken stock
2 eggs

Steps:

  • Heat the oven to 140C/120C fan/gas 1 and lightly butter a deep 20 x 30cm baking dish. Tip the bread out onto a baking sheet and bake for 40 minutes until crisp and dry.
  • Meanwhile, melt three-quarters of the butter in a large pan over a medium heat and cook the onion and celery with a pinch of salt for 10 minutes until softened. Stir in the herbs, then season with plenty of black pepper. Tip in the bread, toss to combine, then pour in half the chicken stock and toss again. Tip the stuffing mixture into the prepared dish and leave to cool slightly.
  • Turn the oven up to 180C/160C fan/gas 4. Whisk together the remaining stock and the eggs, then pour this evenly over the stuffing in the dish. Dot the remaining butter over the top, then cover with foil and bake for 30 mins before removing the foil and baking for another 30 mins until golden.

MY GRANDMA'S HEIRLOOM - THANKSGIVING STUFFING

My Grandma's Heirloom - Thanksgiving Stuffing image

When my grandmother passed away, I received a number of things from her estate. None were as important to me as her handwritten recipe for dressing. Not only is it the BEST dressing I've ever tasted, but it's also not too "sage"y...wonderful for those of us who don't adore sage. I add mushrooms and sometimes finely chopped oysters for personal preference. The shared secret recipe is written out on "General Shale Brick" notepaper, the company my grandfather worked for before he died.

Provided by Tornado Ali

MARILYN MONROE'S STUFFING

Marilyn Monroe's Stuffing image

In the 1950s, a Hollywood star was not expected to squander her talents (or risk her manicure) chopping onions. But this recipe, scrawled by Marilyn Monroe on letterhead from an insurance company, suggested that she not only cooked, but cooked confidently and with flair. It bears the mark of the Bay Area and influences of Italian cooking, possibly picked up from her marriage to Joe DiMaggio at San Francisco City Hall in 1954. It is also a fussy, complicated affair -- but do not let that stop you. The result (almost 20 cups' worth!) is handsome, balanced and delicious.

Provided by Matt Lee And Ted Lee

Categories     side dish

Time 2h

Yield About 20 cups

Number Of Ingredients 18

A 10-ounce loaf sourdough bread
1/2 pound chicken or turkey livers or hearts
1/2 pound ground round or other beef
1 tablespoon cooking oil
4 stalks celery, chopped
1 large onion, chopped
2 cups chopped curly parsley
2 eggs, hard boiled, chopped
1 1/2 cups raisins
1 cup grated Parmesan
1 1/4 cups chopped walnuts, pine nuts or roasted chestnuts, or a combination
2 teaspoons dried crushed rosemary
2 teaspoons dried crushed oregano
2 teaspoons dried crushed thyme
3 bay leaves
1 tablespoon salt-free, garlic-free poultry seasoning (or 1 teaspoon dried sage, 1 teaspoon marjoram, 1/2 teaspoon ground ginger and 1/2 teaspoon ground nutmeg)
1 tablespoon kosher salt, plus more to taste
1 tablespoon pepper

Steps:

  • Split the bread loaf in half and soak it in a large bowl of cold water for 15 minutes. Wring out excess water over a colander and shred into pieces.
  • Boil the livers or hearts for 8 minutes in salted water, then chop until no piece is larger than a coffee bean.
  • In a skillet over medium-high heat, brown the ground beef in the oil, stirring occasionally and breaking up the meat, so no piece is larger than a pistachio.
  • In your largest mixing bowl, combine the sourdough, livers, ground beef, celery, onion, parsley, eggs, raisins, Parmesan and nuts, tossing gently with your hands to combine. Whisk the rosemary, oregano, thyme, bay leaves, poultry seasoning, salt and pepper together in a bowl, scatter over the stuffing and toss again with your hands. Taste and adjust for salt. Refrigerate, covered, until ready to use as a stuffing or to bake separately as dressing. To serve as a dressing, pile about two quarts of the mixture into a 9-inch square baking dish and bake at 350 degrees until the top is evenly browned, about 1 hour.
