MARY'S MEATLOAF

This meatloaf recipe is the only one I use now because my family loves it, and it is very easy to make.

1 ½ pounds lean ground beef
1 large onion, chopped
salt to taste
ground black pepper to taste
garlic powder to taste
6 slices white bread, cut into cubes
½ cup milk
1 egg
3 tablespoons yellow mustard, divided
½ cup ketchup, divided
3 tablespoons brown sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, thoroughly mix ground beef, onion, salt, pepper and garlic powder. Mix in bread, milk, egg, 2 tablespoons mustard and 1/4 cup ketchup.
  • Press the meat mixture into a 9x5-inch loaf pan. In a small bowl, stir together remaining mustard, ketchup and brown sugar; pour on top of the meat loaf.
  • Bake in the preheated oven until an instant-read thermometer inserted into the center reads 165 degrees F (74 degrees C), about 2 hours.

1 cup quick oats
1/2 cup butter or 1/2 cup margarine
1 1/4 cups boiling water
2 eggs, well beaten
1 cup sugar
1 cup brown sugar
1 teaspoon vanilla
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon allspice
1/2 teaspoon salt
1/4 teaspoon clove
1/2 cup brown sugar
1/4 cup melted butter
3 tablespoons milk
3/4 cup coconut, shredded
1/3 cup nuts, chopped

Steps:

  • Combine oats, butter and boiling water. Set aside for 20 minutes.
  • Beat together the eggs, sugars and vanilla. Sift dry ingredients and add, along with the oats. to the sugar mixture. Beat well.
  • Pour into a greased 9x13-inch baking dish. Bake at 350°F for 30-35 minutes.
  • Cool for a few minutes. Then combine frosting ingredients, spread on cake and place under broiler for 1 minute or until frosting begins to bubble.

Number Of Ingredients 9

2 (1/4 ounce) packages active dry yeast
1/2 cup warm water
1 1/4 cups milk
1 cup cold water
1/4 cup butter or 1/4 cup margarine
1/4 cup sugar
2 1/2 teaspoons salt
6 -6 1/2 cups flour
2 cups oats, uncooked

Steps:

  • Dissolve the yeast in warm water. Combine milk and cold water, then heat in sauce pan. Pour the hot liquid over the butter, sugar and salt; stir until butter melts. Cool till lukewarm. Stir in 2 cups flour, dissolved yeast and oats. Stir in enough additional flour to make soft dough.
  • Turn out onto lightly floured surface; knead about 8-10 minutes or until smooth and elastic. Shape to form ball; place in greased bowl, turning to coat surface of dough. Cover and lets rise in warm place for about 1 hour or until double in size.
  • Punch dough down. Cover; let rest 10 minute Shape to form 2 loaves. Place in 2 greased loaf pans (9x5). Brush lightly with melted butter. Cover, let rise about 45 min or until nearly doubled in size.
  • Bake at 375 degrees for 45-50 minute.
