MARY'S CHICKEN
This recipe was given to me by my girl friend Mary, and is DELICIOUS....has a sweet and sour flavor. We ate this chicken with brown rice and a green veggie. The sauce is AWESOME over the rice!!!! YUMMY!!!!

Steps:
- In 9x13 glass baking dish, mix with a whisk: onion soup mix, cranberry sauce, and catalina dressing.
- Place chicken in the mixture; then flip chicken, so that it is coated.
- Bake at 325 degrees for 45-60 minutes.

SALSA CHICKEN
Someone gave me this recipe a few years back and it's become a household favorite. You can use mild, medium or hot salsa depending on your taste. I usually serve it with Spanish rice and Mexican-style canned corn. Very easy and quick!

- Preheat oven to 375 degrees F (190 degrees C)
- Place chicken breasts in a lightly greased 9x13 inch baking dish. Sprinkle taco seasoning on both sides of chicken breasts, and pour salsa over all.
- Bake at 375 degrees F (190 degrees C) for 25 to 35 minutes, or until chicken is tender and juicy and its juices run clear.
- Sprinkle chicken evenly with cheese, and continue baking for an additional 3 to 5 minutes, or until cheese is melted and bubbly. Top with sour cream if desired, and serve.

MARY'S MEXICAN RANCHERO SALSA
This is my favorite salsa. I got the recipe from my mother who has been making it since she was a young girl living with her grandparents on their ranch in Mexico. You can adjust the hotness according to your preference. Serve it over scrambled eggs or on anything you like.

Steps:
- Heat a medium skillet over medium heat. Add oil to the hot skillet and place whole tomatoes and jalapenos in the pan. Cook, turning every 2 minutes, until all sides are scalded. Remove from the heat.
- Transfer tomatoes and jalapenos carefully to a blender and process until pureed.
- Cook and stir onion in the same skillet over medium heat until translucent, about 5 minutes. Add tomato-jalapeno puree and pour in water; bring to a simmer. Simmer until thickened, about 5 minutes. Season with salt and serve warm.

MARY'S SALSA CHICKEN
I read a lot of recipes for Salsa Chicken and used ingredients from several, plus added my own special ingredients. The finished product was great! Everyone raved about it! I like things hot, so you may want to adjust the seasoning for your tastes.

Steps:
- Preheat oven to 375 degrees.
- If chicken breasts are large, cut them in half. Liberally sprinkle Emeril's Southwest seasoning on both sides of chicken and let set while the skillet is heating up.
- Put your olive oil in a large oven-proof skillet (I used an enameled cast iron skillet) over medium heat and let it heat up. Add seasoned chicken breasts and brown on one side for about 4 minutes. Turn chicken over and throw in the jalepeno slices and brown chicken for another 3-4 minutes. Take skillet off the fire and add the tequila and deglaze the pan, scraping up all the good browned bits. Add the salsa.
- Place skillet in oven and bake for 20 minutes.
- Remove from oven and sprinkle cheese and green onion over chicken pieces. Return to oven for another 5 minutes.
- Serve over rice (my recipe for Mexican rice is great). Enjoy!
