Steps:
- Cut the cabbage into roughly 2 cm/1 inch pieces.
- Toss it into a bowl with the soy sauce, garlic, sesame oil, chili pepper, and sesame seeds and massage it to really rub in the flavours.
- Heat 2 teaspoons of vegetable oil in a skillet on high heat. Once the oil is hot, toss in the cabbage.
- Saute for about 5 minutes, mixing often so it cooks evenly.
- Top with more sesame seeds and some green onion if you're feeling frisky.
SESAME SAUTéED CABBAGE

- In a large dry skillet cook sesame seeds over medium-low heat for 1 to 2 minutes or until lightly toasted, shaking skillet occasionally to toast seeds evenly. Transfer seeds to a small bowl; set aside to cool.In the same skillet, heat oil over medium heat. Add carrot, sweet pepper, and onion. Cook for 5 minutes, stirring occasionally. Add cabbage; toss to combine (skillet will be full). Add water. Cover and cook for 10 minutes or until cabbage is tender, stirring occasionally.Meanwhile, transfer cooled sesame seeds to a clean coffee grinder. Grind until the seeds are coarsely ground. Sprinkle ground seeds over cabbage mixture. Sprinkle with salt and black pepper. Toss to combine. If desired, sprinkle with additional white and/or black sesame seeds before serving. Enjoy!
STIR-FRY CABBAGE
Steps:
- In a large saute pan over medium-high heat, add the canola oil and heat. Add the onion, garlic and ginger and saute, stirring, for 1 minute. Add the cabbage and cook until just starting to wilt, about 2 minutes. Add the soy sauce and rice vinegar and stir well and cook just until cabbage is wilted, about 3 minutes. Remove from heat and drizzle with the sesame oil.

- If serving the vegetables with grains, begin cooking the grains of your choice first.
- Heat 1 tablespoon of the olive oil over medium heat in a large, heavy skillet or a wok and add the onion. Cook, stirring, until it begins to soften, about 3 minutes. Add the shredded winter squash and the garlic and a generous pinch of salt. Cook, stirring often, until not quite tender, about 10 minutes, and add the remaining oil, the cabbage, sage, thyme, and salt and pepper to taste. Continue to cook, stirring often, until the vegetables are tender and fragrant, 8 to 10 minutes. Serve with grains or use the vegetables for the gratin below.
- If making a gratin, preheat the oven to 375 degrees and oil a 2-quart baking dish or gratin dish. In a large bowl, whisk together the eggs and milk. Add salt to taste (about 1/2 teaspoon) and freshly ground pepper, and stir in the cooked grains (I used cooked purple barley, and it was a beautiful and tasty combination with lots of texture) and the cooked vegetables. Add the cheeses and stir everything together, then scrape into the prepared baking dish.
- Bake 40 to 45 minutes, or until the top is lightly browned and the gratin is set. Allow to cool for 15 minutes or longer before cutting into wedges and serving. The gratin is good hot, warm or at room temperature, and you can cut it into smaller pieces to serve as an hors d'oeuvre.

- In a saucepan or fry pan, put the oil, half the sesame seeds, the soy sauce and the red pepper flake on a medium high heat. Heat the oil to a light sizzle and until the sesame seeds turn golden brown.

- Trim outer leaves off cabbage. Cut cabbage in half lengthwise. Cut out and discard core, and cut crosswise into long, thin shreds. (A bread knife is good for this.)
- Heat half the oil in a wide skillet over high heat. When hot, add half the cumin and half the sesame seeds. When sesame seeds begin to pop add half the onions, and cook, stirring often, until golden, about 5 minutes. Add half the cabbage, and cook, stirring often, until wilted and lightly browned but not cooked through, about 5 minutes more. Remove to a bowl, and repeat with remaining oil, cumin and sesame seeds, onion and cabbage. (Recipe can be made to this point up to 2 hours in advance and held at room temperature.)
- Just before serving return all the cabbage-onion mixture to pan over medium heat. Add salt and cayenne, and cook, stirring, until cabbage is soft and sweet, about 7 minutes more. Stir in lemon juice and garam masala, and serve.
