A wonderful hearty main dish.. meat and potatoes all in one dish.. a great way to use up any leftover mashed potatoes..this casserole with worth making, it's very good!

1 lb Italian sausage
3 cups mashed potatoes
1 cup chopped onion
3/4 cup green bell pepper, chopped
3 cloves minced fresh garlic, to taste
2 tablespoons oil
2 cups sliced fresh mushrooms (can use canned also if desired, but fresh is better!)
2 cups chopped fresh tomatoes
3/4 cup sliced ripe olives, drained,to taste
1 teaspoon dried basil
salt and pepper
1/3 cup grated parmesan cheese, to taste
1 -2 tablespoon chopped fresh parsley or 1 -2 teaspoon dried parsley flakes

Steps:

  • Set oven to 350 degrees.
  • Grease a 9-inch square baking dish.
  • In a skillet, cook the sausage until no longer pink; drain fat, can cut in large pieces or leave whole.
  • Place in the bottom of the prepared baking dish.
  • Top/spread evenly with the 3 cups of mashed potatoes.
  • In the same skillet, saute the onion, garlic and green pepper in oil for 5 minutes, or until the veggies are crisp-tender.
  • Stir in mushrooms, tomatoes, olives, basil, salt and pepper; mix to combine (do not cook).
  • Spoon over potatoes to within 1-inch of edge.
  • Sprinkle with Parmesan cheese and the chopped parsley on top.
  • Bake, uncovered for 30-35 minutes, or until the top is lightly browned.

1 cup onion-seasoned beef broth (from 14 oz can)
3 tablespoons Gold Medal™ all-purpose flour
1 pouch Betty Crocker™ roasted garlic mashed potato mix
Water, milk and butter called for on potato mix pouch

Steps:

  • Heat oven to 425°F. Spray with cooking spray 8-inch square (2-quart) glass baking dish. In 10-inch skillet, cook sausage over medium-high heat, stirring frequently, until no longer pink; drain. In baking dish, mix sausage and frozen vegetables. In small bowl, mix broth and flour until smooth; pour over sausage mixture. Gently stir.
  • Cover with foil; bake 35 to 45 minutes, stirring occasionally, until mixture is hot, bubbly and slightly thickened.
  • Make potatoes as directed on pouch using water, milk and butter. Let stand 3 to 5 minutes. Spoon onto sausage mixture. Bake uncovered 8 to 10 minutes longer or until potatoes begin to brown.

1/2 cup reduced-fat sour cream
1/4 cup reduced-sodium chicken broth
1 package (14 ounces) smoked turkey kielbasa, sliced
1/2 pound sliced fresh mushrooms
1 cup chopped onion
1 garlic clove, minced
1/4 cup shredded reduced-fat cheddar cheese
1 teaspoon dried parsley flakes
1 teaspoon dried oregano

Steps:

  • Place potatoes in a large saucepan; cover with water. Bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until very tender; drain. , Transfer to a large bowl. Add sour cream and broth; beat on low speed until smooth; set aside. In a large skillet, cook the sausage, mushrooms and onion until vegetables are tender. Steps:

4 russet potatoes, washed and scrubbed
1 cup leftover apple sauerkraut from the Turkey Sausage with Apple Sauerkraut recipe
2 leftover cooked sausages from the Turkey Sausage with Apple Sauerkraut recipe, finely chopped
1/2 cup shredded Cheddar

Steps:

  • Preheat the oven to 350 degrees F.
  • Using a paring knife, poke 3 small slits into each potato. Bake in the oven for 1 hour and 15 minutes. Remove the potatoes from the oven and turn the oven temperature up to 425 degrees F. Let the potatoes cool for 5 minutes.
  • Using a fork punch some holes in the top of each potato. Press inward on the ends of each potato so that the tops break open. Divide the apple sauerkraut evenly between the potatoes and then top them with the sausage and Cheddar. Arrange the potatoes on a sheet pan and bake until the cheese is melted, about 5 minutes. Remove from the oven to a serving platter and serve.

1 dash pepper
parmesan cheese, freshly grated (for the top)

Steps:

  • Peel and cook potatoes.
  • Meanwhile, combine sauerkraut and onion; place in a 2 to 3 cup casserole.
  • Brown sausage meat; drain; spoon over sauerkraut.
  • Drain potatoes; mash with milk, butter, salt and pepper.
  • Spread potatoes over sausage; sprinkle with Parmesan cheese.
  • Bake in a 400 degree oven for 25 to 30 minutes or till lightly browned.
  • This recipe can be doubled, tripled or made for a large gathering.

3 large baking potatoes, peeled and thinly sliced
ground black pepper to taste
1 cup shredded Cheddar cheese
1 pound Polish kielbasa
½ teaspoon dried dill weed
¼ teaspoon caraway seed
⅔ cup milk

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Using two long sheets of aluminum foil on top of each other, fold one long edge together and open out to make a large sheet of foil. Line a 13x9 pan with the foil, allowing edges to hang outside pan
  • Arrange the sliced potatoes, overlapping slightly, in bottom of pan. Pepper to taste. Top with half of the cheese. Cut sausage in half crosswise and lengthwise and place, cut side down on top. Top with remaining cheese, the dill weed, caraway seed and milk. Seal edges of foil tightly.
  • Bake at 375 degrees F (190 degrees) for 1 hour.
