Date Bars, Matrimonial Cake image

A wholesome, fruit filled dessert in about an hour!

Number Of Ingredients 9

3 cups chopped pitted dates (1 lb)
1 1/2cups water
1/4 cup sugar
1 cup packed brown sugar
1cup butter, softened (or Earth Balance for vegan version)
1 3/4 cups flour
1 1/2 cups quick-cooking oats
1/2 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Preheat oven to 400
  • Combine dates, water, and 1/4 cup sugar over low heat until thickened, stirring constantly, about 10 minutes
  • Cool 5 minutes
  • Grease the bottom and sides of 13×9-inch pan
  • Cream the brown sugar and butter until well mixed
  • Stir in flour, oats, baking soda and salt until crumbly
  • Press half of the crumb mixture evenly in bottom of pan
  • Spread the date mixture over the bottom crust
  • Top with remaining crumb mixture; press lightly
  • Bake 25 to 30 minutes or until light brown
  • Cool 5 minutes in pan
  • Cut into 6 rows by 6 rows while warm

1 ½ cups quick-cooking oats
1 ¼ cups all-purpose flour
1 ¼ cups brown sugar
1 teaspoon baking soda
1 teaspoon baking powder
¾ cup butter
½ pound dates, pitted and chopped
¾ cup water
1 tablespoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Stir oats, flour, brown sugar, baking soda, and baking powder together in a bowl; cut in butter using a pastry blender until mixture is mealy and butter pieces are uniformly small.
  • Press half of oat mixture evenly into the bottom of a 9x13-inch baking pan.
  • Cook dates with water in a small saucepan over medium heat until they fall apart and are easily mashed with a wooden spoon, about 10 minutes; remove from heat and stir in vanilla extract.
  • Spoon date mixture evenly over oat mixture in baking pan; sprinkle remaining oat mixture evenly over top and press into place.
  • Bake in the preheated oven until crust is golden at the edges, about 30 minutes; remove to cool completely on a wire rack. Cut into bars.

Here's my Mom's recipe for these yummy bars.

1 ¾ cups quick cooking oats
1 ¾ cups all-purpose flour
1 cup packed brown sugar
1 cup butter
1 teaspoon salt
1 teaspoon baking soda
2 cups dates, pitted and chopped
½ cup water
½ cup white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 13x9 inch baking pan.
  • Combine the oats, flour, brown sugar, butter, salt and baking soda. Mix well. The mixture will be crumbly.
  • In a saucepan over low heat, cook the chopped dates with the water and the white sugar until the pulp is soft and well mixed.
  • Layer 1/2 of the oat mixture onto the bottom of the prepared pan. Top with the date mixture and then finish off with the remaining oat mixture. Press down slightly on layers to compact.
  • Bake at 350 degrees F (175 degrees C) for 45 minutes or until top crust begins to brown.

Number Of Ingredients 13

Unsalted butter, softened, for baking sheet
2 cups raisins (about 13 ounces)
1 cup sugar
1 teaspoon cornstarch
1/2 cup apple cider
2 1/2 cups all-purpose flour
1 1/4 teaspoons baking soda
1 1/4 teaspoons coarse salt
1 1/4 cups vegetable shortening
1 1/4 cups packed light-brown sugar
1 large egg
1 1/4 teaspoons pure vanilla extract
2 1/2 cups old-fashioned rolled oats

Steps:

  • Preheat oven to 350 degrees. Butter a 10-by-15-inch rimmed baking sheet. Line bottom with parchment paper, and butter parchment; set sheet aside.
  • Make filling: Pulse raisins and sugar in a food processor until almost pureed. Transfer to a saucepan. Whisk cornstarch into 1 cup cold water; whisk into raisin mixture. Stir in cider. Simmer over medium-low heat, stirring occasionally, until mixture thickens and sugar has dissolved, about 6 minutes.Let cool completely.
  • Make dough: Whisk together flour, baking soda, and salt in a medium bowl; set aside. Put shortening in the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until smooth. Add brown sugar, and mix until pale and fluffy, 2 to 3 minutes. Add egg and vanilla, and mix until combined. Reduce speed to low. Add flour mixture; mix until just combined. Mix in oats.
  • Press half the dough into prepared baking sheet. Spread raisin filling evenly over top of dough. Crumble remaining dough on top of filling using your fingers, gently pressing down so that topping covers filling. Bake, rotating sheet halfway through, until top is golden brown, about 35 minutes. Let cool completely in sheet on a wire rack. Cut into 2-inchsquares. Bars can be stored between layers of parchment in airtight containers at room temperature up to 5 days.

This is a very old recipe, a delicious golden oldie which remains one of my favorites to serve family and friends. A favorite at coffee hour and potlucks as well.

Number Of Ingredients 12

1 lb dates
1 cup cold water
4 tablespoons brown sugar
2 tablespoons orange juice
2 teaspoons lemon juice (can use realemon)
2 1/4 cups flour
3/4 teaspoon baking soda
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 1/2 cups margarine
1 1/2 cups brown sugar
2 1/4 cups oatmeal (I use Quaker Oats)

Steps:

  • FILLING.
  • In pot over medium heat bring cold water and dates to a boil, and simmer two minutes, until dates nicely softened.
  • Add Brown sugar, simmer until sugar is dissolved.
  • Remove from heat, blend in the orange and lemon juice and set aside while making crumb crust.
  • CRUMB CRUST.
  • In large bowl put in the flour, soda, baking powder, salt and blend with a whisk to mix.
  • Add the brown sugar and rub in the margarine with the tips of fingers to mix.
  • Add the oatmeal and mix well.
  • ASSEMBLY.
  • Spread and pat half the crumbs in bottom of a greased 9x13 pan, saving the other half for the top.
  • Cover base with cool date filling and spread evenly.
  • Top with the rest of crumb mix.
  • Bake at 325 for 30- 35 minutes or (until top nice and gold).
  • Servings will depend on on the size of slice you wish to serve, small for the dainty tray or large and generous for dessert.

2 kiwis
2 ripe passion fruits
1 large knob preserved ginger stem*
1 1/2 tablespoons ginger syrup*
Juice of 1/2 lime
Ice cream or cream, as needed
*Can be found at specialty Asian markets.

Steps:

  • Cut both cheeks from the mango stone (pit) and crosshatch the flesh, making sure your knife goes right down to the skin but not through it. Press the center of each mango skin with your fingers so that the straight-cut flesh side becomes rounded and the cubes will protrude.
  • Peel and quarter the kiwis and carefully carve out the central white core. Slice each quarter into 3 long pieces to get curved, elegant slithers of fruit. Combine the mango cubes and kiwi slices in a serving bowl with the scooped-out flesh of the passion fruits.
  • Finely dice the preserved ginger and scatter it over the fruit salad. Drizzle with the ginger syrup, and squeeze over the lime juice. Toss the ingredients together carefully. Serve the fruit on its own or with ice cream or cream, and enjoy the sweet rewards of bliss.
