SOUTHERN SWEET POTATO PIE
Traditional Southern-style sweet potato pie. This is my mother's recipe, but she's Mimi to my kids, so in our house we call this dish Mimi's sweet potato pie. It's delicious right out of the oven, at room temp, or right out of the refrigerator.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Bring a pot of water to a boil; add sweet potatoes and boil until soft, 20 to 30 minutes. Remove and discard skin; mash potatoes in a bowl until lumps are removed.
- Mix 1 cup mashed sweet potatoes, sugar, condensed milk, butter, eggs, flour, cinnamon, nutmeg, allspice, and cloves together in a bowl. Divide batter evenly between the 2 pie crusts.
- Bake in the preheated oven until firm, about 45 minutes.

SARAH CONTONA'S SWEET POTATO PIE
This is different from your normal sweet potato pies, especially the crust and the cream cheese. My grandmother used to make it, then my mother and her sisters made it for many years. Now that I've moved away from New York and are no longer with them, I make it for my girlfriend's family. Eat it with Thanksgiving dinner, just like we did! Enjoy!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch springform pan.
- In a medium bowl, mix graham crackers, cinnamon, 2 tablespoons brown sugar, and butter. Press mixture into the prepared springform pan to form a crust. Bake 10 minutes in the preheated oven, until lightly browned.
- In a large bowl, blend cream cheese, sweet potatoes, 1/4 cup brown sugar, light cream, eggs, and vanilla. Pour into the baked crust.
- Bake pie 1 hour in the preheated oven, placing marshmallows on top to melt during the last 10 minutes.

SOUTHERN SWEET POTATOE PIE
This recipe has been in my family for a long time. We make it every Thanksgiving and Christmas. My kids request this all the time. I hope you enjoy.

Steps:
- To prepare Sweet Potatoes:.
- With the oil cover the sweet potatoe skin with the oil 1 teaspoon =1 sweet potatoe.
- Poke holes in the sweet potatoe on all sides with a fork.
- Place on a cookie sheet and bake @ 375 degrees for about an hour or until the sweet potaotes are mushy to touch.
- Take them out of the oven and let cool. Once cooled the skin has to be peeled. It will peel off very easily to be careful not to tear up the sweet potatoe.
- Once they are all peeled put in a big bowl and with an electrical mixer start blending the sweet potatoes.
- Blend all wet ingredients together except the egg whites.
- Blend all dry ingredients together. The potatoes will be a little heavier than pudding consistency.
- Once all blended taste to adjust sugar sweetness to your liking.
- Next beat egg whites until you have high peaks.
- Fold in egg whites . Potoaotes will fluff up with air. ( Don't mix the potatoes will flatten).
- Pour potatoes into pie crusts and bake @ 350 degrees for 45 minuets. You'll start to see dark brown areas on the top of the pies.
- Take out let it cool.
- Once cool serve with cool whip. Yummy!

- Preheat oven to 350°. Unroll crust into a 9-in. pie plate; flute edge. In a small bowl, combine sugar, flour, nutmeg and salt. In a large bowl, beat potatoes, eggs, butter, corn syrup and flour mixture. Gradually stir in milk. Pour into crust., Bake for 55-60 minutes. Cool on a wire rack for 1 hour. Refrigerate for at least 3 hours before serving. Refrigerate leftovers.

This is simply the best-tasting sweet potato pie our family has ever eaten. We don't like the pies that have an orange or lemon bite to them. This pie tastes sweet, nutty, and earthy. Steps:
- Place sweet potatoes into a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender, 10 to 15 minutes. Drain well and let cool.
- Preheat oven to 425 degrees F (220 degrees C). Line a 9-inch pie plate with pastry.
- Mash sweet potatoes with a potato masher or fork. Measure 1 3/4 cup of the mash into a large bowl. Add milk, sugar, eggs, butter, salt, cinnamon, nutmeg, and ginger. Beat with a rotary beater until mixture has the consistency of cake batter. Pour into the pastry-lined plate.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 45 to 55 minutes. Cool until center is set, about 15 minutes.
