Steps:
- Preheat broiler. (500º).
- Place tomato quarters and pepper halves, cut side down, on broiler pan.
- Broil 4 inches from the heat for 5-7 minutes, 'til skins start to blacken.
- Remove from broiler pan; cool.
- Remove skins from tomatoes and peppers; finely chop.
- Cook onion and garlic in hot oil, in a small saucepan for 3 minutes.
- Stir in tomatoes, peppers and cumin. Bring to a boil.
- Reduce heat and simmer, uncovered, for 10 - 15 minutes or 'til most of the liquid has evaporated.
- Cool completely.

This recipe came to me while I was just dabbling in the kitchen. I have tried a few different Mexican Salsa recipes but nothing really that taste like a fancy Mexican restaurant. This recipe is super easy and takes about 20 minutes. I hope you enjoy! I would love your feedback!

Steps:
- Start by boiling the 8 Chili De Arbol Chili's for about 5 to 10 minutes until they soften.
- In the meantime, heat the diced tomatoes under high heat.
- When The Chili De Arbol Chilis are soft, drain and add to diced tomatoes. Add the Cumin, Pepper, Salt and Brown Sugar to the diced tomatoes and Chili De Arbol Mix. Let simmer.
- In a Kitchen Blender, combine Sweet Chilis, Garlic, Red Onion.
- When diced tomatoes and Chili De Arbol mix are simmered. Turn off heat and pour to add diced tomatoes and Chile de Arbol into the Blender mix.
- Mix ingredients on high until a smooth consistency.
- Add the juice of 2 Limes and 1 handful of Cilantro and blend again until a smooth consistency.
- Place in refrigerator and let cool for 20 minutes.
- When Salsa is Chilled, serve with Chips. Enjoy!

- Place roma (plum) tomatoes and serrano peppers in a medium saucepan over medium high heat with enough water to cover. Bring to a boil. Boil 15 minutes. Remove from heat and drain.
- Place roma tomatoes, serrano peppers, onion, cilantro and garlic in a blender or food processor. Puree about 30 seconds, or to desired consistency. Transfer to a medium serving bowl, and salt to taste.

- Heat a pot over medium heat, then add all the ingredients. Cook, stirring, until the onion is translucent and the meat is cooked, about 5 minutes. Most of the liquid should evaporate, but the mixture shouldn’t be dry. Keep warm while you prepare the other components.
- Combine the avocados, lemon juice, granulated garlic, and oil, mashing everything slightly. The mixture should be chunky, not smooth. Stir in the tomato and season with salt.
- Bring 3/4 cup water to a boil in a small saucepan. Add the celery, bell pepper, onion, poblano, and tomato and boil briefly to cook everything, about 1 minute. Turn the heat down to low, and gradually whisk in the cheese. Heat for a few minutes, stirring constantly. If the cheese seems too thick once all melted, add 1 Tablespoon of hot water at a time until the desired consistency is achieved. When all the cheese is melted and everything is heated through and smooth, remove from the heat so it doesn’t overcook. Do this step right before serving: If you used American cheese the dip will separate as it cools; if you used processed cheese it will develop a skin on top as it sits. Pour the hot queso into a wide, shallow serving bowl. Add a scoop of meat and a scoop of guacamole, about ½ cup of each. Do not mix. Guests should combine the queso, guacamole, and ground beef together with tortilla chips as they eat it.
