12 slices Italian bread, each 1/2 inch thick
1/4 cup olive or vegetable oil
1 large tomato, chopped (1 cup)
3 tablespoons chopped fresh basil leaves
1 tablespoon large capers or chopped ripe olives
1/2 teaspoon salt
1/2 teaspoon pepper
12 slices (1 ounce each) mozzarella cheese

Steps:

  • Heat oven to 375°F. Place bread slices on ungreased cookie sheet. Drizzle 1 teaspoon oil over each bread slice.
  • Mix tomato, basil, capers, salt and pepper. Spread half of the tomato mixture over bread slices; top each with cheese slice. Spread remaining tomato mixture over cheese.
  • Bake about 8 minutes or until bread is hot and cheese is melted. Serve hot.

1 French baguette, cut into diagonal 1/2 inch slices
¼ cup olive oil
¼ cup butter or margarine
2 cloves garlic, minced
salt and pepper to taste
¼ cup grated Parmesan cheese

Steps:

  • Set the oven to broil at 425 degrees F (220 degrees C).
  • In a small saucepan, combine the olive oil, butter and garlic. Set over medium heat, and cook until butter has melted and the mixture starts to bubble. Season with salt and pepper. Remove from the heat.
  • Dip each slice of bread into the garlic mixture, turning to coat each side. Place Parmesan cheese on a plate. Press one side of each piece of bread into the cheese, and place cheese side up on a baking sheet.
  • Broil on the middle rack of the preheated oven for about 8 minutes, or until golden brown.

These crostini party appetizers will start your next holiday gathering off to a tasty start. They are made with home made French bread crudites and are simple to prepare.

4 baguette slices
4 tbsp of a Sharp Cheddar Cheese Ball
8 thin slices of ripe pears
4 pecan halves
2 tbsp of raspberry preserves
Sea Salt and Fresh rosemary to garnish
4 baguette slices
4 tbsp of a Smoky Bacon Cheese Ball
4 cooked shrimp
4 tbsp mashed avocado mixed with a bit of lemon juice
Cracked black pepper and Cilantro to garnish.
4 baguette slices
4 tbsp of a Sharp Cheddar Cheese Ball
4 grape tomatoes/halved
4 thin slices of prosciutto
fresh basil to garnish
4 baguette slices
1/3 cup of button mushrooms, quartered
2 pieces of bacon, cooked and crumbled
4 tbsp of a Smoky Bacon Cheese Ball
sprigs of fresh thyme
1 baguette
1/3 cup Olive Oil
Sea Salt & cracked black Pepper to taste

Steps:

  • Preheat the oven to 375º. Slice the baguette diagonally into 1/2" slices. Lightly brush both sides of the baguette slices with olive oil, using a pastry brush. Season both sides with salt and pepper. Bake 10 minutes, flip the slices and bake another 8 minutes until golden. Serve warm, or store in an airtight container for 3-4 days.
  • For the Mushroom Bacon Crostini
  • Saute the mushrooms in a small amount of olive oil until they are tender.
  • Spread the cheese on baguette slices, top with the cooked mushrooms, crumbled bacon, and add a small sprig of fresh thyme.
  • For the Cheddar Prosciutto Crostini
  • Spread 1 tbsp of the cheese on each baguette slice. Arrange the halved grape tomatoes and slices of prosciutto and garnish with the fresh basil.
  • For the Avocado Shrimp Crostini
  • Spread 1 tbsp of the cheese on each baguette slice. Mash the avocado and mix in a bit of lemon juice to keep it from going brown. Add it to the top of the cheese, and layer with a single shrimp. Add some cracked black pepper and a sprig of fresh cilantro.
  • For the Rosemary Pear Crostini
  • Spread 1 tbsp of the cheese on each baguette slice. Layer the cheese with two thin slices of pear. Add a half tbsp of raspberry preserves and a single pecan half. Add some sea salt and a few leaves of fresh rosemary to garnish.
  • Enjoy!

1 long baguette (sliced into 1/2" thick rings)
Olive oil (to brush the baguette)
2-3 roma tomatoes (sliced into 1/4" thick rings)
Fresh mozarella cheese (sliced into 1/4" thick (buy cheese the width of your baguette))
Fresh basil (thinly sliced)
1 Tbsp balsamic vinegar
1 Tbsp extra virgin olive oil
Salt and black pepper (to taste)

Steps:

  • Slice bread and brush both sides lightly with extra virgin olive oil. Bake 5 minutes at 350˚F to lightly toast it (toasting the bread keeps the bread from getting moist from the cheese).
  • Top with a slice of mozzarella and a slice of tomato. Sprinkle the tops with salt and pepper and bake at 350˚F for 8-10 minutes or until cheese is melted.
  • A few minutes before the crostini are finished baking, in a small ramekin, mix together 1 Tbsp balsamic vinegar and 1 Tbsp extra virgin olive oil until well combined. Toss in the sliced fresh basil and stir gently. Top each crostini with the marinated basil.
