MATZO FARFEL
This quick dinner side dish made with matzo has a humble look but a rich flavor, thanks to duck fat. Serve with roast meats.

- Preheat oven to 375 degrees. Melt fat in a medium skillet over medium-high heat. Add onion and celery; cook 8 minutes. Let cool. Whisk together eggs, broth, 1 1/4 cups hot water, spices, and salt. Stir in farfel and onion mixture. Spoon into 10 (1/2-cup) ramekins. Bake until set, 30 to 35 minutes.

Steps:
- In a medium bowl, combine the matzo, currants, almonds, apricots, egg yolks, matzo meal, salt, 1/3 cup granulated sugar, cinnamon, lemon zest and juice. Mix lightly and set aside.
- Using an electric mixer with a whisk attachment, mix egg whites just until stiff peaks form; do not overbeat. Fold into the matzo mixture. Refrigerate for about 30 minutes.
- Set aside a plate lined with paper towels. Fill a wok or sauté pan with 2 inches vegetable oil. Place over medium-high heat and bring to 375 degrees on an instant-read thermometer. Working in batches, carefully spoon the batter, one heaping tablespoon at a time, into the hot oil, without crowding the pan. Fry until golden and crisp, 30 seconds to 1 minute a side. Using a slotted spoon, transfer to paper towels to drain.
- Serve warm, if possible, sprinkled with the granulated sugar or confectioners' sugar. If desired, chremsel may be reheated in a 350-degree oven just before serving.

MATZO KRIMSEL

- Soak matzos in lukewarm water for a minute or two, and squeeze very dry. Crumble matzos into a bowl and stir in salt, almonds, raisins, egg yolks, 1/3 cup sugar, juice and grated zest of the lemon, cinnamon and matzo meal.
- Beat egg whites until stiff, and fold into the matzo mixture. Refrigerate for 30 minutes to 2 hours.
- Heat about 2 inches of oil in a medium pot over medium heat to about 375 degrees. Carefully place a heaping tablespoon of mixture at a time into oil, turning after about a minute. After a minute, when golden brown on each side, remove and drain. Sprinkle with the additional sugar, and serve with stewed dried plums and apricots.

CARAMEL MATZOH CRUNCH

- Cover two rimmed baking sheets completely with foil.
- Cut a piece of parchment paper to fit the bottom of each pan and place it on top of the foil.
- Line the bottom of each cookie sheet evenly with the matzo, breaking extra pieces, as required, to fit any spaces.
- In a 3-quart, heavy-bottomed saucepan, combine butter and brown sugar.
- Cook over medium heat, stirring constantly, until the mixture comes to a boil (about 2 to 4 minutes).
- Boil for 3 minutes (use a timer; this is important), stirring constantly.
- Remove from heat and pour over the matzo, covering completely.
- Place the baking sheets in a preheated 375-degree oven and immediately reduce the heat to 350 degrees.
- Bake for 15 minutes, checking every few minutes to make sure the mixture is not burning (if it seems to be browning too quickly, remove the pan from the oven, lower the heat to 325 degrees and replace the pan).
- Remove pans from oven and sprinkle immediately with the chopped chocolate or chips.
- Let stand five minutes, then spread the melted chocolate over the matzo with an offset spatula or knife.
- While still warm, break into squares or odd shapes.
- Place pans in freezer to chill until set.
- Remove and store in airtight container for up to a week.

- Preheat the oven to 375°F. Line a large (or two smaller) cookie sheet completely with foil. Cover the bottom of the sheet with baking parchment - on top of the foil. This is very important since the mixture becomes sticky during baking.
- Line the bottom of the cookie sheet evenly with the matzohs, cutting extra pieces, as required, to fit any spaces.
- In a 3-quart, heavy-bottomed saucepan, combine the butter or margarine and the brown sugar. Cook over medium heat, stirring constantly, until the mixture comes to a boil (about 2 to 4 minutes). Boil for 3 minutes, stirring constantly. Remove from the heat and pour over the matzoh, covering completely.

- Variation:
- You can also use coarsely chopped white chocolate (or a combination of white and dark), and chopped or slivered toasted almonds (sprinkled on top as the chocolate sets). You can also omit the chocolate for a caramel-alone buttercrunch.
KREMSILS - MATZOH MEAL PANCAKES
These are a favorite around our household and you don't have to wait for Passover to eat them. They are a nice change from the ordinary pancakes because they are flourless. This is one of the recipes that I am using from memory - let's hope it works. It worked - hurray!

Steps:
- Melt 2 Tablespoons butter in large skillet.
- Turn off the heat.
- Break eggs into mixing bowl.
- Beat until thick and lemon colored.
- Add milk, matzoh meal, cottage cheese, butter, nuts, vanilla and salt.
- Beat until smooth.
- Turn heat on to moderate heat.
- Drop by spoonsful onto the skillet, this is where you can decide on the size of your pancakes.
- Fry until golden on both sides.
- Keep warm in oven, while making others.
- Serve on platter with maple syrup &/or the granulated sugar.
- Enjoy!
