This was originally my daughter's recipe, and she or I will make it for one or more of our holiday get-togethers. It can be served as a fruit salad along with the meal or as a light dessert. It's particularly pretty in a cut-glass bowl on a buffet. -Ruth Bolduc, Conway, New Hampshire

Ingredients

4 cups cranberries
1-1/2 cups sugar
3/4 cup water
1 envelope unflavored gelatin
1/4 cup lemon juice
2 tablespoons orange juice
1-1/2 cups heavy whipping cream
3 tablespoons confectioners' sugar
1 teaspoon vanilla extract

Steps:

In a saucepan, bring the cranberries, sugar and water to a boil. Reduce heat and cook until berries burst. Strain through a food mill or sieve into a large bowl. , Stir in the gelatin, lemon juice and orange juice. Cool until mixture coats the back of a spoon. , In a small bowl, whip cream until soft peaks form. Add confectioners' sugar and vanilla; beat until stiff peaks form. Fold into cranberry mixture. Chill until set.

Ingredients

1 can (20 ounces) crushed pineapple, juice drained and reserved
1 cup water
1 package (6 ounces) strawberry gelatin
1 can (14 ounces) whole-berry cranberry sauce
3 tablespoons lemon juice
1 teaspoon grated lemon zest
1/2 teaspoon ground nutmeg
2 cups sour cream
1/2 cup chopped pecans
Fresh strawberries, optional

Steps:

Combine pineapple juice and water in a 2-qt. saucepan; heat to boiling. Remove from heat; add gelatin and stir until it dissolves. Stir in cranberry sauce, lemon juice, zest and nutmeg. Chill until mixture thickens slightly. Add sour cream; stir until thoroughly combined. Fold in pineapple and pecans. Pour into an 8-cup mold; chill until firm. Unmold onto a serving plate. Garnish with fresh strawberries, if desired.

2 (3 ounce) packages apricot gelatin
2 cups boiling water
2 cups cold water
2 large bananas, sliced
1 (20 ounce) can crushed pineapple
1 cup colored miniature marshmallows
1/2 cup pineapple juice (from reserves)
1/2 cup sugar
1 egg, slightly beaten
2 tablespoons flour
1 tablespoon butter
1 (8 ounce) package cream cheese
1 (8 ounce) container Cool Whip

Steps:

Drain pineapple and reserve juice for topping. Dissolve jello in hot water. Then add cold water. Let partially set. Add crushed pineapple & banana slices and chill in refrigerator.
While chilling in refrigerator, prepare topping. Cook pineapple juice, sugar, egg, flour and butter together on the stove. When thick, remove from heat and cool slightly. Fold in cream cheese. Whip prepared topping and fold into mixture. When completely cool, spread on jello mixture.

1 (3 ounce) package lemon Jell-O gelatin
1 (3 ounce) package cherry Jell-O
3 cups boiling water
1/2 cup sugar
1 tablespoon lemon juice
1 (8 ounce) can crushed pineapple
3 cups fresh cranberries
1 small orange, quartered and seeded
1 cup celery, finely diced
1/2 cup nuts, chopped

Steps:

Dissolved gelatin in boiling water. Add sugar. Add lemon juice and undrained pineapple. Chill until partially set.
Grind oranges and cranberries in grinder or food processor. Fold into gelatin mixture along with celery and nuts.
Let chill until firm.
