ROTISSERIE EYE ROUND OF BEEF

Rotisserie Eye Round of Beef image

Summer is grilling time and I love an outdoor grill with a rotisserie. Here is what I did with a small roast and I wanted to share with you.

Recipe From food.com

Provided by mer5901

Categories     Roast Beef

Time 1h15m

Yield 4 serving(s)

Number Of Ingredients 7

2 lbs eye of round roast
1/4 cup McCormick's Montreal Brand steak seasoning
1 medium carrot
1/2 medium onion
1/4 cup water
1 (10 1/2 ounce) can beef gravy (any brand)
aluminum foil, to serve as drip tray (or an aluminum throw away pan)

Steps:

  • Set up your outdoor rotisserie grill for indirect cooking.
  • Move lava rocks to one side and place aluminum drip pan in its place.
  • If you have a newer grill like mine that uses no rocks, but has a dome over the burners, bend your aluminum to mold to the dome and create a pan for drippings.
  • Light your grill and use the burner opposite from where you placed your drip pan.
  • Leave the burner on high.
  • Prepare your meat by sprinkling it with the seasoning.
  • Rub into meat.
  • Secure the meat on your rotisserie skewer so that it is over the drip pan.
  • Place the roast on the grill and let the rotisserie run, covered for 20 minutes.
  • At this time quarter your onion and carrot and place in drip pan.
  • Continue to roast meat covered for 40 minutes, checking the drip pan occasionally for dryness and add water.
  • After an hour use a meat thermometer to check for your desired doneness (160 degrees for medium).
  • Place roast on a platter.
  • Take drip pan, add 1/4 cup water and scrape pan drippings.
  • Discard vegetables and mix pan drippings in with your favorite gravy Add a baked potato and a salad and enjoy!

MUSTARD CRUSTED EYE ROUND ROAST ON THE ROTISSERIE
mustard-crusted-eye-round-roast-on-the-rotisserie image
From grillingcompanion.com
2009-12-12  · The eye round is not the best cut of beef from the hind leg, but if cooked properly it can make a good meal and even better sandwich meat. Better to use a top round if you want a more tender roast, but I’ll leave that for another recipe. In this recipe we add some incredible flavor to this roast by encrusting it with Dijon mustard. • First mix the mustard mix in a bowl large enough to hold the roast, adding all the ingredients except the roast, and stirring thoroughly. If you want a thicker mustard crust, reserve 1/4 cup of the mustard mix and set it aside. Add the roast to bowl with the mustard mix and let it rest for 1/2 hour as it comes up to room temperature and as you warm your grill up to high temp, about 450° F. We're gonna start off on high direct heat to get a good sear and crust on the outside.
  • Once the roast has marinated, center it on the skewer and secure it well, adding some string if needed. Balance the skewer following your manufacturers instructions. I do all this work over the bowl used to marinate since things can get a bit drippy. Use a spoon to reapply some of the mustard mix to the roast and then put in on the grill and start the rotisserie. Cook it over the direct heat for 10 minutes or until you have a good brown crust on the roast. If you reserved some mustard mix, spoon it on the rotating roast about 3 minutes into the searing process.
  • Once the roast is crusted, we want to slow the cooking process down in order to avoid making the roast tough and dry. Change the grill set up to indirect heat. I also add a shallow pan of water under the roast at this point to add more moisture and catch any drippings. Reduce the heat so the grill maintains about 250° F when the lid is closed. This can be difficult on some grills, and charcoal grills need to be monitored regularly. If you can't do this on your grill, you may not want to try cooking this piece of meat on your grill.
  • Cook the roast at 250° F for about 1 hour (depends on the grill and the size of the roast) until the temp is about 135° F to 140° F. This is the sweet spot for this roast. If you cook it rarer, it will be harder to slice thin, which helps keep it tender for sandwiches. Cook it much more, and the roast will be tough. So when it gets close, watch it closely. If you have one of those fancy remote thermometers that works on a rotisserie, this is the time to use it.

ROTISSERIE SIRLOIN ROAST - DADCOOKSDINNER

  • Truss the roast into a tight cylinder with butcher’s twine, tying it about every inch and a half. Mix the salt and pepper and sprinkle them evenly over the roast. (If you have the time, truss and season this the night before cooking. Rest the seasoned roast in the refrigerator, uncovered. Salting early dry brines the roast, seasoning it more thoroughly.) Put the first spit fork on the roast, run the spit through the center of the roast, and secure the roast to the spit with the second spit fork. Let the roast rest at room temperature until the grill is ready.
  • For my Weber Summit, this means removing the grates, turning the two outer burners (burners 1 and 6) to high, and turning the infrared burner to high. Then I put my drip pan in the middle, over the unlit burners, and let the grill preheat for ten to fifteen minutes. (For a kettle grill, I light a Weber charcoal chimney 3/4 full of charcoal, and divide it into two piles on the sides of the grill.)
  • Put the spit on the rotisserie and start it spinning. (Close the lid and cook with the lid closed as much as possible.) After 30 minutes, check the roast – it should be browning well – and cut the heat back to medium-low, about 300°F. (On my Summit, I turn off my infrared rotisserie burner – the two outer burners on high give me about 300°F. On a charcoal kettle, don’t do anything – let charcoal burn-down take care of dropping the heat.) Continue to cook on medium-low with the lid closed, checking the temperature of the roast every 15 minutes. The roast is done when it reaches an internal temperature of 120°F for medium-rare, about 60 minutes of total cooking time. (Cook to 110°F to 115°F for rare, 125°F to 135°F for medium. If you want to go higher than that, don’t tell me; I don’t want to know.)
  • Remove the spit from the grill. Be careful – the spit is branding-iron hot. Remove the roast from the spit and immediately remove the trussing twine. Cover the roast with aluminum foil and let it rest for 15 to 30 minutes. Carve the roast, serve, and enjoy!

  • Sprinkle the salt evenly all over the roast, patting it down as you go to make it stick to the meat. Repeat this step with black and cayenne peppers, followed by herbs.
  • Secure the roast on a spit and roast over direct heat, lid closed, at 325F (at the dome), for about 1 1/2 hours, until desired doneness. I pulled my roast at 130F internal temperature for medium well doneness. Add a couple of chunks of wood for some color and smoky flavor in your grill. I used wild cherry wood for this roast.

  • The night before cooking, season the roast with the salt and pepper. Put the roast in a baking dish, using the bones as a rack to lift it off the bottom of the dish, and refrigerate overnight. One hour before cooking, remove the roast from the refrigerator. (Or, salt and pepper the roast right before trussing and spitting, below.)
  • Set the grill up for rotisserie cooking at medium-low heat (300°F). For my Weber Summit, this means removing the grates, turning the two outer burners (burners 1 and burner 6 or the smoker burner) to medium, and leaving the infrared rotisserie burner off. Then I put my drip pan in the middle, over the unlit burners, and let the grill preheat for ten to fifteen minutes.
  • While the grill is preheating, truss and spit the roast. Tie a truss around the roast every two inches, pulling it into into a tight cylinder. Run the spit through the center of the roast, and secure the roast to the spit with the spit forks.
  • If you don’t have a smoker box, on your grill, wrap the wood chips in an envelope of aluminum foil and poke a few holes in it for the smoke to escape. Put the wood chips in the smoker box (or put the foil envelope under the grill grate, directly on the burner cover over a lit burner.)

HOW TO COOK EYE ROUND ROAST ON A ROTISSERIE | EHOW
From ehow.com

  • Prepare the roast while the grill heats. Apply your seasoning. You can marinate your meat, use a dry rub, or some combination of the two. Grilling Companion recommends leaving the roast out for at least a half hour prior to cooking so it can reach room temperature.
  • Secure the roast to the spit. Center the roast on the spit and secure the spit to the grill. Cook the roast for 10 minutes at 450 degrees using direct heat.
  • Change the grill to indirect heat and reduce the cooking temperature to 250 degrees. At this point put a shallow pan of water under the roast. This will ensure the roast doesn't dry out and will catch drippings so you don't have flare ups.
  • Remove the roast from the grill and cover it loosely with foil for about 15 minutes before you carve it. Tip. If you are using a charcoal grill, check the temperature often as maintaining the proper temperature can be difficult.
