Quick Beef Stir-Fry image

Quick and easy. I make this on my busiest weeknights.

2 tablespoons vegetable oil
1 pound beef sirloin, cut into 2-inch strips
1 ½ cups fresh broccoli florets
1 red bell pepper, cut into matchsticks
2 carrots, thinly sliced
1 green onion, chopped
1 teaspoon minced garlic
2 tablespoons soy sauce
2 tablespoons sesame seeds, toasted

Steps:

  • Heat vegetable oil in a large wok or skillet over medium-high heat; cook and stir beef until browned, 3 to 4 minutes. Move beef to the side of the wok and add broccoli, bell pepper, carrots, green onion, and garlic to the center of the wok. Cook and stir vegetables for 2 minutes.
  • Stir beef into vegetables and season with soy sauce and sesame seeds. Continue to cook and stir until vegetables are tender, about 2 more minutes.

Quick N' Easy Chicken Stir

Quick, easy, healthy, versatile and makes the recipe makes a large quantity. And my toddler loves it! I use my Foreman grill for the chicken and it always comes out juicy, tender and delicious. Is also a good vegetarian dish; almost any steam-able veggie can be added. Pineapple with juice can be added for sweetness. Can be served as a side dish, entree, or wrapped in a whole wheat tortilla.

6 cups brown rice, prepared
1 tablespoon extra virgin olive oil
4 chicken breasts, cooked and diced
2 stalks celery, diced
1 medium onion, diced
1 large green pepper, diced
8 ounces mushrooms, diced
6 tablespoons low sodium soy sauce
16 ounces pineapple, diced, with juice

Steps:

  • Begin rice preparation. (Olive Oil is added to rice at start).
  • While rice is cooking, cook chicken.
  • Dice and steam vegetables. Reserve steaming liquid.
  • Dice chicken.
  • When rice is finished, mix all diced ingredients with rice and soy sauce.
  • Add steaming liquid until rice is desired consistency.
  • Optional:.
  • Instead of reserved steaming liquid, add pineapple and juice.
  • Mix all ingredients and simmer, covered for 10 minutes, or until liquid is absorbed, stirring frequently.

Maz's Quick 'n Easy Stir Fry image

This can be made using diced chicken, thinly sliced beef or diced pork. The meat you use can be leftovers. I specifically use the Asparagus Stir Fry because it doesn't contain water chestnuts as my husband doesn't like them.

Number Of Ingredients 9

2 tablespoons cornstarch
1 teaspoon sugar
2/3 cup chicken broth or 2/3 cup beef broth
1/4 cup white wine
1/4 cup soy sauce
cooking oil
1 -2 cup meat (sliced thin or diced)
16 ounces asparagus (1 package flav-r-pac quick & easy asparagus, stir fry)
1 (12 ounce) package fresh yakisoba noodles

Steps:

  • Combine first 5 ingredients in a bowl.
  • Set aside.
  • Place frozen vegetables in a bowl and cover with water.
  • Place noodles in another bowl and cover with hot water.
  • After vegetables have separated and thawed, drain.
  • Tear noodles into 4 pieces or just separate them, leave in bowl for a few more minutes, then drain.
  • Brown meat in oil.
  • Add drained vegetables and noodles.
  • Stir together; then add first 5 ingredients which you have set aside.
  • Stir until sauce thickens and vegetables are done.

  • Heat a large nonstick or cast iron skillet over medium to medium-high heat. Add the oil and heat for 30 seconds. Add the chicken and cook until the chicken is cooked through and no longer pink in the center.
  • While the chicken is cooking, add all of the sauce ingredients to a quart mason jar, add a lid, and shake well to combine.
  • When the chicken is cooked through, reduce the heat to medium and pour the sauce over the chicken. Stirring continuously, cook until the sauce thickens and the color changes from a muddy brown to a cleaner, reddish color. This should take about 3 minutes.
