CHEF JOHN'S BUTTERMILK BISCUITS

This deceptively simple recipe can come out a million different ways with some very minor variations on the ingredients and amounts. This one's my favorite - flaky, but not dry; chewy, but not tough; crisp in just the right spots.

2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
¼ teaspoon baking soda
7 tablespoons unsalted butter, chilled in freezer and cut into thin slices
¾ cup cold buttermilk
2 tablespoons buttermilk for brushing

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Line a baking sheet with a silicone baking mat or parchment paper.
  • Whisk flour, baking powder, salt, and baking soda together in a large bowl.
  • Cut butter into flour mixture with a pastry blender until the mixture resembles coarse crumbs, about 5 minutes.
  • Make a well in the center of butter and flour mixture. Pour in 3/4 cup buttermilk; stir until just combined.
  • Turn dough onto a floured work surface, pat together into a rectangle.
  • Fold the rectangle in thirds. Turn dough a half turn, gather any crumbs, and flatten back into a rectangle. Repeat twice more, folding and pressing dough a total of three times.
  • Roll dough on a floured surface to about 1/2 inch thick.
  • Cut out 12 biscuits using a 2 1/2-inch round biscuit cutter.
  • Transfer biscuits to the prepared baking sheet. Press an indent into the top of each biscuit with your thumb.
  • Brush the tops of biscuits with 2 tablespoons buttermilk.
  • Bake in the preheated oven until browned, about 15 minutes.

2 cups AP flour
1 TBS sugar
1 1/2 tsp salt
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 cup butter ; COLD
1/2 cup buttermilk
1/4 cup milk
2 TBS butter ; melted

Steps:

  • Preheat oven to 400 degrees F.
  • In a medium-sized bowl, whisk together all dry ingredients; flour, sugar, salt, baking powder, and baking soda.
  • Slice butter into small chunks and add into the dry ingredients. Use a knife to mix as you cut the butter into small pieces or use a pastry blender.
  • Stir in buttermilk and milk until dough forms.
  • On a lightly floured surface, roll out the dough into ½ inch.
  • Using a biscuit cutter or glass, cut biscuits and place on a lightly greased baking sheet.
  • Bake for 22 to 24 minutes or until light brown.
  • Top with melted butter and serve.

2 tablespoons margarine, melted and divided

Steps:

  • Preheat oven to 450 degrees.
  • Combine the baking mix, buttermilk, sugar, salt, and half of the melted margarine in a medium bowl. Mix until well blended.
  • Turn dough out onto a floured surface and knead for about 30 seconds, or until dough becomes elastic.
  • Roll dough to about 3/4-inch thick and punch out biscuits using a 3-inch cutter. Arrange the punched-out dough on an ungreased baking sheet, and bake for 10 to12 minutes or until the biscuits are golden on top and have doubled in height.
  • Remove the biscuits from the oven and immediately brush each one with a light coating of the remaining melted margarine. Serve warm.

2 cups all purpose flour
1 teaspoon sugar
1 tablespoon baking powder
1 teaspoon salt
8 tablespoons cubed butter
3/4 cup (more or less if needed) milk

Steps:

  • Preheat oven to 425 °F.
  • In a large bowl combine flour, sugar, baking powder and salt together. Cut butter into mixture until it begins to look like cornmeal.
  • Make a well with flour mixture and slowly add milk into the middle. Knead dough with your fingers and add milk when necessary. Roll out dough onto a lightly floured surface and roll out to desired thickness. Cut with small biscuit cutter.
  • Butter bottom of skillet and place biscuits in pan. Bake for 12 minutes or until golden brown.
