Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish with cooking spray.
- Stir ground beef, onion, oats, Cheddar cheese, milk, egg, and salt together in a bowl; mix well. Divide meat mixture into 8 equal portions and form each into a loaf shape. Place loaves in prepared baking dish.
- Stir ketchup, brown sugar, and mustard together in a bowl until smooth. Spread ketchup mixture over meat loaves.
- Bake in the preheated oven until no longer pink in the center, about 40 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

MEXICAN MEATLOAF

- Preheat the oven to 375 degrees F.
- In a heavy skillet, add the oil and heat over medium-high heat. Add the onion, carrot, celery, and garlic. Cook, stirring often until vegetables are soft, about 8 minutes. Set aside until cool enough to handle.
- In a large bowl combine the sauteed vegetables, ground beef, chorizo, and diced poblano chile.
- In a medium bowl, combine the salt, pepper, cayenne, cumin, and eggs. Add the ketchup and sour cream. Mix well with a fork and pour it on top of the mixed meats. Sprinkle with bread crumbs and mix thoroughly with clean hands.
- Put the mixture into a 9 by 13-inch loaf-pan. Bake until an instant-read thermometer inserted into the center of the meatloaf registers 160 degrees F, about 40 to 45 minutes. Remove from the oven and carefully pour off any accumulated pan juices.
- Meanwhile, heat a heavy skillet over high heat. Add the whole tomatoes, onion, garlic cloves, and serrano chiles. Cook, turning frequently, until lightly charred on all sides. Peel the garlic cloves. Add all the charred ingredients to a blender. Pulse until chunky, then pour into a small skillet. Stir in the sugar, chipotle chile and mustard. Bring the mixture to a boil over medium heat. Cook until slightly thickened, about 4 to 5 minutes. Season with salt, to taste.
- Slice the meatloaf and arrange on a platter. Spoon the salsa-glaze over the meatloaf and serve.
MOMMA'S MMM-MMM-MAGNIFICENT MEATLOAF

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, thoroughly mix ground beef, onion, salt, pepper and garlic powder. Mix in bread, milk, egg, 2 tablespoons mustard and 1/4 cup ketchup.
- Press the meat mixture into a 9x5-inch loaf pan. In a small bowl, stir together remaining mustard, ketchup and brown sugar; pour on top of the meat loaf.

- Set oven to 350°F.
- Prepare a 9 x 5-inch baking pan and a baking sheet covered with foil to place underneath to catch any drippings.
- In small mixing bowl add the eggs, milk, garlic, Worcestershire sauce & Garlic Plus seasoning, stirring constantly until blended well.
- Using a large mixing bowl, dump in the mixed ingredients from the small bowl and add the diced onion, corn flake crumbs and chili sauce, mixing well.
- The apple cider vinegar, brown sugar and ketchup are for the sauce. DON'T mix them in with meatloaf.
- Last, using clean hands mix the beef and pork into the bowl, continuing until all ingredients are well combined.
- Pack the mixture into prepared pan.
- Place the pan on a foil-lined baking sheet to catch any spills.
- Bake for 1 hour.
- While baking, mix together the apple cider vinegar, brown sugar and ketchup for the sauce.
- After the 1 hour of baking, remove the meat loaf (at this point you can carefully drain off some of the fat if desired) and spread the sauce over the top.
- Place back in the oven and bake for another 20-30 minutes, or until the meat loaf is pulling away from the sides of the pan. (Meatloaf should be 140°F at centre.).
- Enjoy!

MARVELOUS MEAT LOAF
I have to give my husband credit for this recipe. He ate some meatloaf at a roadside diner that he really enjoyed. It had very small diced potatoes in it and they served it with gravy on top. He came to the conclusion that the small potatoes came from corned beef hash. So the next time I made meatloaf, I added corned beef hash to my recipe and instead of ketchup, brown gravy was the topping. It was awesome! We always use the excess gravy for mashed potatoes on the side. P.S. I will add a pic next time I make it.

- Wet hamburger buns with water, then squeeze out excess.
- Dice onion.
- Mix hamburger, corned beef hash, eggs, wet buns, onion, salt, and pepper.
- Bake in 9 x 13 casserole dish for 1 hour.
- Drain excess grease.

- In a large bowl, combine the egg, tomato juice, bread crumbs, parsley, Italian seasoning, oregano, salt, pepper and garlic salt. - Heat the olive oil in a large pan over medium-high heat. Once the oil begins to shimmer, add the onion and cook, stirring often, until softened and golden brown, about 7 minutes. Add the garlic and cook, stirring constantly, until aromatic, about 1 minute. Add the tomato paste and cook, stirring often, until the tomato paste turns deep red in color, about 2 minutes. My daughter and I came up with this meat loaf. It is a kind of a combo of several different recipes with our own special twists ... it calls for oats instead of saltines or bread and we used 95% lean ground beef. Next time we are going to double the sauce and serve it on the side. YUM!

- Mix all the meat loaf ingredients together in a large bowl.
- Place meat mixture in a 5 x 9 loaf pan.
- Bake in a 325 F oven for 75 minutes.
