1 tsp Oil
2 lbs . Butternut Squash (peeled, seeded & cut into 1" cubes)
1 large onion (cut into a large dice)
Salt & Pepper (to taste)
1/2 lb Penne Pasta (or mini penne)
4 oz . Goat Cheese (or if you are vegan, consider vegan cream cheese)
1/2 C Parmesan (or if you are vegan, consider vegan parmesan)
Fresh Parsley (chopped)
OPTIONAL: Add a few chopped walnuts or pecans

Steps:

  • Preheat oven to 425 degrees.
  • On a large sheet pan, add the oil, squash cubes, onions, salt and pepper.
  • Roast until tender and golden.
  • Set aside.
  • Prepare pasta to box instructions and drain but reserve 1 CUP of the pasta water
  • In the same pasta pot, add the pasta, goat cheese (or vegan cream cheese) and pasta water creating a sauce.
  • Add the squash and onions back in and fold gently.
  • Season with additional salt and pepper, if needed.
  • Serve with a sprinkling of parmesan (or vegan parmesan) cheese and chopped fresh parsley.
  • Optional, add a few chopped walnuts or pecans, if desired.
  • Serve immediately.

Vegetable oil cooking spray
1 (2-pound) butternut or kabocha squash, peeled, seeded and cut into 3/4-inch cubes
1 onion, diced into 1/2-inch pieces
Olive oil, for drizzling
Kosher salt and freshly ground black pepper
1 pound penne pasta
1 cup (8 ounces) goat cheese, crumbled
1 cup coarsely chopped walnuts, toasted (see Cook's Note)
1 packed cup chopped fresh basil leaves
1/3 cup finely grated Parmesan

Steps:

  • Put an oven rack in the upper third of the oven. Preheat the oven to 425 degrees F.
  • Spray a baking sheet, liberally, with vegetable oil cooking spray. Set aside.
  • Mix the squash and onion together and arrange in a single layer on the prepared baking sheet. Drizzle with olive oil and season with salt and pepper, to taste. Bake for to 40 to 45 minutes until the vegetables are golden and cooked through. Remove from the oven and set aside to cool slightly.
  • While the squash mixture is cooling, bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain and reserve about 2 cups of the pasta water. Put the pasta, goat cheese and 1 cup of pasta water in a large serving bowl. Toss until the cheese has melted and forms a creamy sauce. Add the squash and onion mixture, the walnuts and the basil. Toss well and season with salt and pepper, to taste. Garnish with Parmesan and serve.

8 ounces goat cheese

1/2 cup freshly grated Parmesan

Steps:

  • For the topping: Preheat the oven to 400 degrees F.
  • Mix together the panko, olive oil and salt in a small bowl. Set aside.

1 pound butternut squash, peeled and cut into 1/4-inch cubes
6 tablespoons extra-virgin olive oil
1 tablespoon plus 1 teaspoon salt, optional
1 pound penne pasta
1 large onion, finely chopped
4 tablespoons grated Parmigiano cheese
2 tablespoons chopped fresh parsley
1 teaspoon black pepper

Steps:

  • 1. Preheat the oven to 425°F.
  • 2. Toss the squash cubes in a bowl with 1 tablespoon of the oil and 1/2 teaspoon of the salt (if using) and mix well. Spread onto a baking pan in a single layer and roast for 20 to 30 minutes until soft. Increase the oven temperature to broil and broil the squash for 2 minutes more.
  • 3. When the squash is almost done, bring a large pot of water to a boil over high heat. Add 1 tablespoon of the salt (if using) and the penne and cook according to the package instructions until al dente. Reserve 1/3 cup of the cooking water and drain the pasta.
  • 4. Place half of the squash into a blender along with the reserved pasta water and puree until it is smooth. It should have the consistency of tomato sauce.
  • 5. Put 2 tablespoons of the oil in a large pan over low heat. Add the onion and the remaining 1/2 teaspoon of salt (if using) and cook until the onion is softened.
  • 6. Add the squash puree and roasted squash cubes to the onion, and sauté for 1 minute.
  • 7. Stir in the drained pasta, and remove the pan from the heat.
  • 8. Stir in the Parmigiano, parsley, and pepper, and drizzle with the remaining 3 tablespoons of oil.

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a baking sheet with olive oil or line with parchment paper.

2 medium acorn squash (about 1-1/2 pounds each), peeled and cut into 2-inch cubes
1 large butternut squash (5 to 6 pounds), peeled and cut into 2-inch cubes
3 tablespoons olive oil
2 tablespoons minced fresh thyme
2 tablespoons minced fresh rosemary
1 tablespoon kosher salt
1 teaspoon coarsely ground pepper
1 log (11 ounces) fresh goat cheese, crumbled
2 tablespoons coarsely chopped fresh parsley
1 tablespoon maple syrup, warmed slightly

Steps:

  • Preheat oven to 425°. Toss squashes with oil and seasonings. Transfer to 2 foil-lined 15x10x1-in. baking pans., Roast squash, stirring once, until soft and some pieces are caramelized, 30-35 minutes.   • Fill a 4-quart kettle three-fourths full with salted water and bring water to a boil for pasta.

1/4 cup olive oil

3/4 pound penne pasta
3 ounces pancetta, sliced 1/4 inch thick and finely chopped
2 shallots, thinly sliced crosswise
1/4 teaspoon crushed red pepper, flakes
10 fresh sage leaves, coarsely chopped or torn
1/2 cup finely grated pecorino Romano cheese, plus more for serving
1/2 teaspoon freshly ground black pepper

Steps:

  • Preheat oven to 400 degrees. Place butternut squash on a rimmed baking sheet and toss with 1 tablespoon of olive oil; season with salt. Transfer to oven and roast until squash is browned and tender, about 15 minutes.
  • Bring a large pot of water to a boil over high heat. Generously salt water and return to a boil. Add pasta and cook until al dente, according to package directions. Drain pasta, reserving 1/2 cup cooking liquid. Set pasta and reserved cooking liquid aside.
  • Meanwhile, heat remaining 3 tablespoons olive oil in a large skillet over medium-low heat. Add pancetta and cook until just crisp, 4 to 5 minutes. Add shallots, crushed red pepper, and sage. Cook until shallots are soft, 4 to 5 minutes. Add penne and squash and toss gently, adding reserved pasta cooking liquid as necessary to moisten.
  • Add cheese and black pepper and cook, tossing gently, until pasta and squash are heated through. Serve immediately with more grated cheese, if desired.

6 -8 garlic cloves, sliced
3 tablespoons extra virgin olive oil
2 teaspoons kosher salt
1 lb penne
6 ounces fresh goat cheese
1 cup loosely packed fresh basil leaf, torn into pieces
additional kosher salt
fresh ground black pepper

Steps:

  • Preheat the oven to 250 degrees F.
  • Line 2 large baking sheets with parchment paper or wax paper. Halve each tomato and place cut side up in 1 flat layer on the baking sheets. Put a slice of garlic on top of each tomato half. Drizzle the tomatoes with 1 tablespoon of the olive oil and sprinkle on the salt. Roast until the tomatoes are dried around the edges but still moist, about 2 hours(be careful not to burn the garlic). I check after about a 1/2 hour and push the garlic down into the tomato.
  • Crumble the goat cheese into large chunks and refrigerate until ready to serve the pasta.
  • Cook the pasta in salted boiling water according to the package directions. Remove 1 cup of the cooking liquid and reserve. Drain the pasta well and return to the pot. Add the tomatoes, goat cheese, basil, reserved cooking liquid, and remaining 2 tablespoons olive oil. Toss well and season with salt and pepper. Serve warm. Enjoy!
