CLASSIC DINER MEAT LOAF

Here's a traditional recipe for a family favorite. Buy the leanest ground beef you can find for this home-style meat loaf.

⅔ cup fat-free milk
½ cup refrigerated or frozen egg product, thawed (see Tip)
2 cups soft whole wheat bread crumbs
2 green onions, thinly sliced
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme or oregano, crushed
¼ teaspoon salt
⅛ teaspoon ground black pepper
1 ½ pounds 90% or higher lean ground beef
¼ cup ketchup
1 tablespoon balsamic vinegar
1 clove garlic, minced

Steps:

  • Preheat oven to 350 degrees F. Line a 2-quart rectangular baking dish with foil; set aside. In a large bowl, combine milk and egg. Stir in bread crumbs, green onion, Worcestershire sauce, thyme, salt, and pepper. Add ground beef; mix well. Shape meat mixture into an 8x5-inch rectangle in the prepared baking dish.
  • Bake for 50 minutes. Spoon off fat. Meanwhile, in a small bowl, combine ketchup, vinegar, and garlic. Spread over top of meat loaf. Bake about 10 minutes more or until meat is done (160 degrees F).
  • Let stand for 10 minutes before serving. Spoon off any fat. Cut into slices.

1 egg
1/2 cup seasoned bread crumbs
1/4 cup chopped onion
1/2 teaspoon seasoned salt
2 pounds lean ground beef
4 medium potatoes, quartered
1/2 pound fresh or frozen cut green beans
1 can (14-1/2 ounces) stewed tomatoes

Steps:

  • In a large bowl, combine the first four ingredients. Crumble beef over mixture and mix well. Shape into a loaf in a greased roasting pan. Arrange potatoes and green beans around loaf. Pour tomatoes over all. , Cover and bake at 350°: for 2 hours or until the meat is no longer pink and a thermometer reads 160°.

1 lb lean (at least 80%) ground beef
1 clove garlic or 1/8 teaspoon garlic powder
1 small onion
2 slices bread with crust
1/4 cup milk
2 teaspoons Worcestershire sauce
1 teaspoon chopped fresh or 1/4 teaspoon dried sage leaves
1/4 teaspoon salt
1/4 teaspoon ground mustard
1/8 teaspoon pepper
1 large egg
1/3 cup ketchup, chili sauce or barbecue sauce

Steps:

  • Heat the oven to 350°F. In a large bowl, break up the beef into small pieces, using a fork or spoon.
  • Peel and finely chop the garlic. Peel the onion, and chop enough of the onion into small pieces to measure 3 tablespoons. Wrap remaining piece of onion, and refrigerate for another use. Add the garlic and onion to the beef.
  • Tear the bread into small pieces and add to beef mixture.
  • Add the milk, Worcestershire sauce, sage, salt, mustard, pepper and egg to the beef mixture. Mix with a fork, large spoon or your hands until the ingredients are well mixed.
  • Place the beef mixture in an ungreased baking pan. Shape the mixture into an 8x4-inch loaf in the pan, then spread the ketchup over the top.
  • Bake uncovered 50 to 60 minutes until meat and juices are no longer pink or until a meat thermometer inserted in the center of the loaf reads 160°F and center of loaf is no longer pink*. Let the loaf stand 5 minutes so it will be easier to remove from the pan. Remove loaf from pan and cut into slices.

1 small Spanish onion, 1/4-inch dice
Kosher salt and freshly cracked black pepper
2 cloves garlic, minced
1/2 cup whole milk
1 tablespoon unflavored gelatin
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
1 teaspoon hot sauce, such as Tabasco
2 large eggs
2 pounds ground chuck
1 cup crushed butter crackers, such as Ritz
1/3 cup fresh parsley, minced
1/2 cup smoky BBQ sauce, such as Rufus Teague Smoky Apple
4 tablespoons brown sugar
4 tablespoons apple cider vinegar
Roasted Russet Potatoes with Garlic and Rosemary:
2 tablespoons olive oil
1 pound russet potatoes, cubed, rinsed and dried
Kosher salt and freshly cracked black pepper
2 teaspoons fresh rosemary, minced
2 cloves garlic, minced
1 pound green beans
Olive oil, for the pan
1 lemon, zested and juiced
Kosher salt and freshly cracked black pepper

Steps:

  • For the meatloaf: Preheat the oven to 350 degrees F.
  • Heat a skillet over medium heat, add the oil and saute the onions until translucent, 3 to 5 minutes. Season with salt, add the garlic and saute for 1 to 2 minutes without letting the garlic brown. Remove from the heat and cool.
  • In a large bowl, whisk together the milk, gelatin, mustard, Worcestershire, hot sauce and eggs and season with salt and pepper. Let it sit for 5 minutes so the gelatin can bloom.
  • Add the meat along with the crackers, parsley and cooked onion and garlic; mix with your hands until evenly combined. Place the meat mixture on a parchment-lined sheet tray. Using your hands, and without overworking the meat, form into 6 football-shaped free-form loaves.
  • For the glaze: In a small bowl, combine the BBQ sauce, brown sugar and apple cider vinegar.
  • Slather the glaze over the meatloaves and bake, basting again halfway through, until the meat registers 165 degrees F, about 1 hour. Let rest for 20 minutes.
  • For the roasted russet potatoes with garlic and rosemary: Heat the olive oil in a 12-inch nonstick skillet over medium-high heat. Add potatoes cut-side down and cook, without moving, until golden, 6 to 7 minutes.
  • Flip the potatoes using a fish spatula and lower the heat to medium low. Cover and cook until the potatoes are knife-tender, 7 to 8 more minutes.
  • Toss the potatoes with salt and pepper. Add the rosemary and garlic, cover again, take off the heat and let infuse for an additional 45 seconds using the residual heat left in the skillet. Taste, adjust the seasoning if necessary and serve.
  • For the green beans: Bring a pot of water to a boil. Set up an ice bath. Blanch the green beans in the boiling water until bright green and tender, a few minutes. Remove from the water and immediately plunge into the ice bath.
  • Meanwhile, heat a saute pan with olive oil over medium-high heat. Toss the green beans in the pan with the lemon zest and juice and salt and pepper to taste until warmed through, 2 to 3 minutes.

1 tablespoon olive oil, plus more for greasing
1 large yellow onion, diced
3 cloves garlic, minced
2 tablespoons tomato paste
1 cup panko breadcrumbs
1 cup whole milk
2 lb ground beef
2 large eggs, beaten
½ cup fresh parsley, roughly chopped
1 tablespoon worcestershire sauce
½ teaspoon dried thyme
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
½ cup ketchup

Steps:

  • Preheat the oven to 350°F (180°C). Line a rimmed baking sheet with foil.
  • Heat the olive oil in a large pan over medium-high heat. Once the oil begins to shimmer, add the onion and cook, stirring often, until softened and golden brown, about 7 minutes. Add the garlic and cook, stirring constantly, until aromatic, about 1 minute. Add the tomato paste and cook, stirring often, until the tomato paste turns deep red in color, about 2 minutes. Remove the pan from the heat and let the onion mixture cool to room temperature.
  • In a large bowl, stir together the panko and milk. Add the ground beef, eggs, parsley, Worcestershire sauce, thyme, salt, pepper, and the onion mixture and use your hands to combine. Do not overmix!
  • Shape the beef mixture into a 10 x 5-inch loaf on the prepared baking sheet. Brush the top and sides with ketchup.
  • Bake the meatloaf until the top is browned and the internal temperature reaches 160°F (70°C), about 50 minutes.
  • Slice and serve.

1/4 cup Heinz 57 steak sauce (or 1/4 cup ketchup mixed with 2 tsps Worchestershire sauce)
1/3 cup dry breadcrumbs
1/2 teaspoon salt
1/8 teaspoon pepper
2 teaspoons dried parsley
1 teaspoon seasoning salt
black pepper
3 medium baking potatoes, peeled and sliced 1/4 inch thick
3 medium onions, peeled and sliced 1/4 inch thick
3 carrots, peeled and sliced 1/2 inch thick

Steps:

  • Preheat oven to 375°F and lightly grease the bottom of a 13x9x2 inch baking pan.
  • Combine beef, milk, egg, steak sauce, bread crumbs, salt and pepper and shape into a loaf in the center of the baking pan.
  • Combine the parsley, salt and pepper.
  • Add the vegetables in layers around the loaf, sprinkling each layer with the parsley mixture.
  • Cover tightly with foil and bake for 1 hour or until vegetables are tender.
  • Uncover and bake another 10 minutes to brown the meatloaf.
