1 ½ tablespoons olive oil
1 lb ground beef
1 medium red onion, diced
1 clove garlic, minced
1 jalapeño, minced
1 teaspoon salt
1 teaspoon pepper
1 teaspoon ground coriander
1 teaspoon cumin
4 scallions, diced
1 cup frozen peas, defrosted
2 tablespoons fresh cilantro, chopped
3 cups all-purpose flour
¼ teaspoon salt
2 teaspoons olive oil
1 cup water, plus 2 tablespoons more
1 tablespoon flour, mixed with 1 tablespoon of water
3 cups canola oil
lime wedge, for serving

Steps:

  • In a large pan over medium-high heat, heat the olive oil. Once hot, add the ground beef. Use a spatula to break apart the meat and cook for 3 minutes. Add onion and cook until beef is brown and onion is translucent, about 4 minutes.
  • Add the garlic, jalapeño, salt, pepper, coriander, cumin, and scallions to the meat. Cook for 2 minutes. Add the peas and cilantro, then cook for another 2 minutes. Remove the meat filling from the heat and let cool.
  • In a large bowl, combine the flour, salt, olive oil, and water. Use your hand or a spatula to mix together. Once the dough pulls away from sides of the bowl, transfer to a lightly floured surface and knead for 4 minutes or until the dough is smooth and soft.
  • Shape dough into a ball and brush with olive oil. Cover with plastic wrap and a warm damp tea towel. Let rest for 30 minutes.
  • Remove tea towel and plastic wrap and roll the dough out into a 10-inch (25-cm) long log. Cut into 10 even sections. Take one section and roll it into a ball. Place the ball on a lightly floured surface and use a rolling pin to roll it out into a thin circle about 10 inches (25-cm) in diameter. Repeat with the remaining dough. Stack the dough circles as you roll them out, sprinkling a bit of flour between each one and keeping them covered with plastic wrap so they don't dry out.
  • In a greased large pan over high heat, place one of the circles of dough and cook for 10 seconds on each side. Repeat with remaining dough.
  • Cut one of the par-cooked dough circles into four quarters. Take one quarter and, with the round side closest to you, fold the bottom half to the right. Use the flour paste to seal the fold. Repeat with the left side, crossing over your previous fold to create a cone like pocket. Fill the pocket with meat filling, then fold the remaining tip of the dough towards you and seal with flour paste. Repeat with the remaining dough and filling.
  • In a large, deep pan, heat the canola oil to 350°F (180°C). Once the oil is at the correct temperature, carefully place 4-6 sambusas in the pan. Fry for about 5 minutes, flipping once, until light, golden brown. Remove from oil and drain on paper towels.

1 medium onion, finely chopped

2 teaspoons ground coriander

1 (6 ounce) package frozen peas
½ cup water
1 tablespoon minced pickled jalapeno pepper

vegetable oil for frying

Steps:

  • Heat a large skillet over medium heat. Add ground beef, onion, and garlic; cook until beef is browned and crumbly, 5 to 7 minutes. Reduce heat to low.
  • Mix in coriander, cumin, salt, turmeric, chile powder, and ginger. Add peas and water; bring to boil. Cover and simmer, stirring occasionally, about 25 minutes. Uncover and cook over medium heat, stirring frequently, until any remaining liquid evaporates.
  • Stir jalapenos and garam masala into the beef mixture. Remove from heat and stir in lemon juice; let cool until safe to handle, at least 15 minutes.
  • Drop about 1 tablespoon of the beef mixture onto the center of a wonton wrapper. Moisten edges with water, fold them over the filling, and seal. Repeat with remaining filling and wonton wrappers.
  • Heat about 1/2 inch oil in a large saucepan over medium-high heat. Add samosas in batches; fry until browned, 1 to 2 inches per side.

2 large potatoes, peeled
1 cup frozen peas, thawed
2 tablespoons vegetable oil
½ teaspoon cumin seeds
1 bay leaf, crushed
2 large onions, finely chopped

Steps:

  • Bring a medium saucepan of lightly salted water to a boil. Stir in potatoes and peas. Cook until potatoes are tender but still firm, about 15 minutes. Drain, mash together and set aside.
  • In a large saucepan over medium high heat, heat the oil. Brown cumin seeds and bay leaf. Mix in onions and ground beef. Cook until beef is evenly brown and onions are soft, about 5 minutes. Mix in garlic, fresh ginger root. Season with black pepper, salt, cumin, coriander, turmeric, chili powder, cinnamon and cardamom. Stir in the mashed potato mixture. Remove from heat and chill in the refrigerator for 1 hour, or until cool.
  • Heat oil in a large, heavy saucepan over high heat.
  • Mix cilantro and green chile peppers into the potato and beef mixture. Place approximately 1 tablespoon of the mixture onto each phyllo sheet. Fold sheets into triangles, pressing edges together with moistened fingers.
  • In small batches, fry until golden brown, about 3 minutes. Drain on paper towels and serve warm.

1 cooking apple , peeled, cored and finely chopped
zest and juice 1 orange
50g dried ready-to-eat apricots , chopped
25g shelled pistachios
50g dried cranberries
175g sultanas
1 tsp cinnamon
½ tsp grated nutmeg
2 tbsp brandy
1 tbsp clear honey
50g butter , melted and kept warm
6 sheets filo pastry (270g pack)
icing sugar , to decorate

Steps:

  • Mix together the fruit, dried fruit, nuts, spices and brandy. Leave the mixture in the fridge for 30 mins to allow the flavours to develop, then stir in the honey. Heat oven to 200C/180C fan/gas 6. Arrange the filo sheets with the short side facing you and, using scissors, cut the stack in 3 vertically, to make long strips. Brush the top 3 strips with melted butter.
  • Working quickly, put 1 heaped spoonful of mincemeat at the top of the first strip. Fold one corner of the pastry over it to form a triangle, then continue folding alternately left and right to form a triangular package, until you've used up all the strip. Repeat with the other strips, brushing with butter before folding.
  • Place on a baking sheet and brush each one with more melted butter. Bake for 15-20 mins until crisp and golden. Dust with icing sugar and serve warm (reheat later in a low oven if necessary).

2 cups all-purpose flour
3 tablespoons ghee or canola oil
1/2 teaspoon salt
1/2 teaspoon caraway seeds
3/4 cup cold water
5 medium potatoes, peeled and chopped
6 tablespoons canola oil, divided
1 cup fresh or frozen peas, thawed
1 teaspoon minced fresh gingerroot
1 teaspoon garam masala
1/2 teaspoon cumin seeds
1/2 teaspoon salt
Optional: Fennel seed, crushed coriander seeds, caraway seeds or amchur (dried mango powder)

Steps:

  • In a large bowl, combine flour, ghee, salt and caraway seeds until mixture resembles bread crumbs. Gradually stir in enough water to form a firm dough. Turn onto a lightly floured surface; knead until smooth and elastic, 6-8 minutes. Cover and let rest for 1 hour., Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat and cook until just tender, 8-10 minutes; drain. Set aside to cool slightly. In a large skillet, heat 3 tablespoons oil over medium heat. Add potatoes and cook until potatoes start to cling to the skillet, about 5 minutes. Stir in peas, ginger, garam masala, cumin seeds and salt; cook until heated through, about 2 minutes. Stir in optional ingredients as desired. Set aside., Divide dough into 6 pieces. Roll 1 piece of dough into a 10x6-in. oval. Cut dough in half. Moisten straight edge with water. Bring 1 corner of half moon up to meet the other corner of the half moon, forming a cone. Pinch seam to seal. Fill with 3-4 tablespoons potato mixture. Moisten curved edge of dough with water; fold over top of filling and and press seam to seal. Gently press the bottom of the samosa to flatten slightly. Repeat with remaining dough and filling., Preheat air fryer to 350°. Brush the samosas with the remaining 3 tablespoons oil. In batches, arrange in a single layer without touching in the air-fryer basket. Cook until golden brown, about 15 minutes.

These are easy a little time consuming but worth it. Make a spicy beef packet, great for potluck or finger food snack. Brought them to a get together and everyone enjoyed them told me I could make them again. This is a recipe I got from another site made a few changes to suit what I had on hand.

3 large potatoes, peeled and diced
1 cup frozen peas
2 tablespoons vegetable oil
1/2 teaspoon cumin seed
1 bay leaf
2 large onions, finely chopped
1 lb ground beef
4 garlic cloves, crushed
1/2 teaspoon fresh gingerroot
1/2 teaspoon ground black pepper
1 1/2 teaspoons salt
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon ground turmeric
1 teaspoon chili powder
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cardamom
1/2 teaspoon cayenne pepper
1 quart oil (for deep frying)
2 eggs
1/4 cup cold water
50 egg roll wraps
3/4 cup sweet chili sauce, mango chutney or 3/4 cup plum sauce

Steps:

  • In a medium saucepan bring some lightly salted water to boil for potatoes.
  • Add potatoes and frozen peas.
  • Cook until potatoes are tender about 15 minutes.
  • Drain, set aside.
  • Heat oil in a large saucepan over medium-high heat.
  • Brown cumin seeds and bay leaf.
  • Add in onions and ground beef.
  • Saute until beef has all been browned and the onion is soft, about 5 minutes.
  • Add garlic, fresh ginger.
  • Season with black pepper, salt, cumin, coriander, turmeric, chili powder, cinnamon, cayenne pepper and cardamom.
  • Stir in the potato mixture.
  • Remove from heat and chill in the refrigerator for 1 hour, or until cool.
  • Remove bay leaves.
  • In the meantime, make an egg-wash beating the egg and water in a small bowl.
  • Heat oil in a large sauce pan or fryer on high to 350 degrees Fahrenheit.
  • Brush both sides of a spring roll wrapper with egg-wash.
  • In the corner of the wrapper place about 1 tablespoon of meat and potato mixture.
  • Fold wrapper into triangles, (There is usually a diagram on the spring roll wrapper package) pressing edges together making sure edges are sealed.
  • Fry until golden brown, in small batches, about 3 minutes.
  • Drain on paper towels and serve warm.
  • Can be eaten cold but taste better warm.
  • Use sweet chili sauce, mango chutney or plum sauce for dipping.

2 tablespoons cold butter
2 tablespoons yogurt
1 large baking potato, like Idaho or russet, peeled and roughly chopped
1 large carrot, roughly chopped
2 tablespoons corn, grapeseed, or other neutral oil, or more butter
1 tablespoon minced garlic
1 tablespoon peeled and minced fresh ginger
1 medium onion, diced
1/2 pound ground meat: pork, beef, lamb, chicken, or turkey
1 teaspoon ground turmeric
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground cinnamon
1/2 cup thawed frozen or fresh green peas
Corn, grapeseed, or other neutral oil for deep-frying, optional

Steps:

  • Combine the flour with a large pinch of salt, the butter, and the yogurt in a food processor; turn on the machine and, a few seconds later, add about 1/2 cup water. Let the machine run, adding a little more water if necessary, until a dough ball forms. Knead the dough for a moment by hand, adding a little more flour if necessary, and wrap it in plastic.
  • Put the potato and carrot in a pot and add salted water to cover. Bring to a boil and cook until quite soft, 10 to 20 minutes; drain and mash.
  • Put the 2 tablespoons oil in a large skillet, preferably nonstick, over medium-high heat. A minute later, add the garlic, ginger, and onion and cook, stirring occasionally, until the onion softens, about 5 minutes. Add the meat and stir-fry, separating the clumps, until it loses its pinkness, about 5 minutes. Stir in the spices, some pepper, and a large pinch of salt. Add the mashed potatoes and carrots and the peas and cook for another minute, stirring to combine. Remove from the heat, taste and adjust the seasoning, and cool. (You can prepare both the dough and the filling to this point a day or so ahead and refrigerate until ready to proceed.)
  • Sprinkle a work surface with flour, then divide the dough into quarters. Cover three of the pieces and divide the fourth into 6 pieces; roll each piece into a round ball. Roll each ball out to a 3-inch diameter. When you have rolled out the first 6, put about 1 tablespoon of the filling in the center of each. Brush the rim (you can use your fingertip) with a little water, then fold over and seal. Keep covered with plastic wrap while you repeat with the remaining dough.
  • Preheat the oven to 350°F or put at least 3 inches of oil in a saucepan or other deep vessel, turn the heat to medium-high, and heat the oil to about 350°F. If you're baking, put the samosas on a nonstick or lightly greased baking sheet and bake until golden brown, about 30 minutes. If you're deep-frying, cook as many as will fit without crowding in the hot oil until lightly browned, about 3 minutes, turning once or twice. Drain on paper towels and serve hot. (Or keep them warm in a low oven or serve at room temperature, but in any case within an hour.)
  • Vegetarian Samosas
  • Simply substitute 1/2 cup chopped cabbage and 1/2 cup mashed cooked beans for the meat. Or try the following.
  • Potato-and-Pea Samosas
  • Step 1 remains the same. In step 2, omit the carrot and use 3 large potatoes. Omit the ginger, onion, and meat and mash the potatoes with the spices along with 2 tablespoons yogurt and 1 stemmed, seeded, and minced jalapeño (or 2 smaller chiles or hot red pepper flakes to taste). Cook the peas briefly in boiling salted water to cover; drain and add to the potato mixture, then taste and adjust the seasoning. Skip step 3 and proceed with steps 4 and 5.
