Meatloaf Cupcakes with Mashed Potato Icing image

Turn the idea of a traditional cupcake upside down with this clever recipe. After savoring these meatloaf cupcakes with mashed potato "icing," you may never make meatloaf the same way again.

2 eggs, beaten
2 lb lean (at least 80%) ground beef
1 cup Progresso™ panko crispy bread crumbs
1 small red onion, finely chopped
1 tablespoon coarsely chopped fresh Italian (flat-leaf) parsley
2 cloves garlic, finely chopped
2/3 cup ketchup
2 teaspoons Worcestershire sauce
Salt and pepper
6 large potatoes, peeled, cubed
1/4 cup herb butter
1/4 to 1/2 cup milk
Salt and pepper

Steps:

  • Heat oven to 350°F. Spray 18 regular-size muffin cups with cooking spray.
  • In large bowl, mix Meatloaf ingredients until well combined. Divide mixture evenly among muffin cups, pressing mixture down firmly.
  • Bake 35 to 40 minutes or until meat thermometer inserted in center of loaves reads 160°F. Cool slightly in muffin cups.
  • While loaves are baking, in 3-quart saucepan, place potatoes in generously salted cold water. Heat to boiling. Reduce heat; cook potatoes until fork-tender. Drain; return to saucepan. Add butter and 1/4 cup milk; mash until creamy and smooth, adding more milk as necessary. Season with salt and pepper. Make sure mashed potatoes are creamy and smooth so they can be piped onto meatloaves.
  • Place potatoes in 10-inch decorating bag without tip. Starting at outside of loaf and in circular motion, pipe potatoes onto each meatloaf. If desired, garnish with additional parsley. Remove from muffin cups.

1 egg (lightly beaten)
1/2 cup oatmeal (or breadcrumbs)
1/2 cup onion (diced)
1/2 cup ketchup (plus extra for the top if desired)
1 cup mozzarella cheese (shredded)
1/2 cup Parmesan cheese
1/2 cup spinach (chopped, drained, excess water pressed out with a paper towel)
2 Tablespoons pine nuts
1 pound lean ground beef
4 cups Prepared Mashed Potatoes

Steps:

  • Preheat oven to 350F.
  • Add all of the ingredients except for the ground beef and mashed potatoes to a large bowl and mix well.
  • Add ground beef and mix just until combined.
  • Portion about a 1/4 cup of the meatloaf mixture into the compartments of a muffin pan.
  • Bake uncovered for about 25 minutes or until the internal temperature reaches 165 degrees Fahrenheit.
  • Remove from oven and allow to cool for about 5 minutes.
  • Use a knife to frost each meatloaf cupcake with the prepared mashed potatoes.

Make your own bite-sized meatloaf muffins and top them off with a dollop of mashed potatoes for frosting.

Number Of Ingredients 21

For the meatloaf -
2 TBSP olive oil
2 medium carrots, diced
1 small red onion, diced
1/2 cup sliced green onions
4 garlic cloves, minced
1/3 cup frozen chopped spinach
1/3 cup ketchup, plus more for drizzling
2 TBSP worcestershire
1/2 tsp pepper
1 tsp salt
1 pound ground beef
1 pound mild Italian sausage, casings removed
2 eggs, lightly beaten
1/2 cup bread crumbs, panko or traditional will work
1/3 cup minced Italian flat leaf parley
For the potatoes -
4 medium russet potatoes, peeled and halved
1/2 cup whole milk, warm
2 TBSP butter
1/4 tsp salt, omit salt if using salted butter

Steps:

  • Preheat your oven to 350 degrees.
  • Heat the oil over medium heat in a large sauce pan. Add the carrots, onions, garlic, and spinach. Cook and stir for 5 minutes and then cover and cook for another 5 minutes, stirring occasionally. Break up the spinach as you go. Once the veggies are soft, mix in the 1/3 cup ketchup, worcestershire, salt and pepper. Stir until evenly coated and remove from heat. Let cool.
  • In a large bowl, combine the remaining ingredients. Add the cooled veggies and mix with your hands until everything is fully incorporated, about 5 minutes. Divide the meat mixture into two muffin tins sprayed with cooking oil. Drizzle ketchup on top of each muffin. Bake for 30 minutes, rotating the pans halfway through. If you only have one muffin pan, these can be made in batches, refrigerating the leftover meat until it is needed.
  • While the meatloafs are baking, add the potatoes to a pot of salted water. Bring to a boil and boil until fork tender, about 20 minutes. Drain the water and mash with a potato masher until smooth. Fold in the warm milk. Allow to cool slightly.
  • Once the meatloafs are ready, remove them from the muffin tins and set on a platter or plate.
  • Mix the butter and salt into the potatoes and spoon it into a gallon sized zip top bag. Snip off a small bit of one of the corners. Pipe the potatoes on top of each meatloaf. Serve immediately and refrigerate any unused portion.

1 cup crushed saltine crackers
½ cup chopped onion
½ cup chopped green bell pepper
⅓ cup milk
1 egg
1 tablespoon Worcestershire sauce

1 teaspoon seasoned salt
½ cup ketchup
½ cup brown sugar
4 cups mashed potatoes
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix ground beef, saltine crackers, onion, green bell pepper, milk, egg, Worcestershire sauce, garlic, black pepper, and seasoned salt together in a bowl.
  • Stir ketchup and brown sugar together in a bowl. Spoon ketchup mixture into the bottom of each muffin cup of a 6-cup muffin tin.
  • Fill muffin cups with beef mixture, leaving 1/2-inch space on the top.
  • Bake in the preheated oven until no longer pink in the center, about 30 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Drain fat from muffin cups.
  • Top each 'cupcake' with mashed potatoes and Cheddar cheese.
  • Continue baking until cheese is melted, about 10 minutes.

1 large egg, lightly beaten
1/2 cup dry bread crumbs
1/2 cup finely chopped onion
1/2 cup finely chopped green pepper
1/4 cup barbecue sauce
1-1/2 pounds lean ground beef (90% lean)
3 tablespoons ketchup
Additional ketchup, optional

Steps:

  • Preheat oven to 375°. Mix the first 5 ingredients. Add beef; mix lightly but thoroughly. Press about 1/3 cupful into each of 12 ungreased muffin cups., Bake 15 minutes. Brush tops with 3 tablespoons ketchup; bake until a thermometer reads 160°, 5-7 minutes. If desired, serve with additional ketchup. , Freeze option: Bake meat loaves without ketchup; cover and freeze on a waxed paper-lined baking sheet until firm. Transfer meat loaves to an airtight freezer container; return to freezer. To use, partially thaw in refrigerator overnight. Place meat loaves on a greased shallow baking pan. Spread with ketchup. Bake in a preheated 350° oven until heated through.

½ cup chopped onion
1 cup dry bread crumbs
