1 medium onion

Steps:

  • In a pot that will comfortably hold all ingredients, brown sausage (1 inch pieces or smaller) with chopped onion.
  • The more you brown them, the better it will taste.
  • Don't worry about a little bit of charring.
  • Toss in peeled, cut potatoes and cook slightly to coat potatoes with juices.
  • Add enough water to not quite cover potatoes.
  • Salt lightly.
  • Cook until potatoes fall apart with fork and the liquid has thickened, stirring occasionally.

2 tsp vegetable oil
4 med red potatoes (sliced 1/4" thick)
1 lbs kielbasa sausage (cut in 1-inch pieces)
1 sm yellow onion (chopped)
⅓ cup green bell pepper (chopped)
⅓ cup red bell pepper (chopped)
⅓ cup yellow bell pepper (chopped)
2 tbsp Worcestershire sauce
2 tbsp orange juice
½ tsp basil (chopped)
¼ tsp salt
1 tsp black pepper

Steps:

  • Heat the oil in a heavy skillet over medium-high heat. Add the potatoes, cover the pan, and cook for 6 minutes, stirring occasionally. The potatoes should be browned and just crisp-tender.

1 tablespoon olive oil
1 (16 ounce) package smoked kielbasa
6 medium potatoes
1 red bell pepper
1 green bell pepper
1 large yellow onion
Old Bay Seasoning
seasoning salt

Steps:

  • Cut potatoes (scrubbed with skins left on) into bite-sized pieces.
  • Thinly slice both bell peppers and the onion.
  • Quarter Kielbasa length-wise and cut into bite-sized pieces.
  • In a large skillet, heat olive oil over medium heat.
  • Place Kielbasa and potatoes in skillet. Season with Old Bay and Seasoning Salt. Cover and cook 25 minute or until potatoes are almost tender. Stir occasionally.
  • Add peppers and onion. Cook 5 minute or until peppers and onion are just tender. Adjust seasoning if needed.

1 (12 ounce) package frozen sweet white corn (i.e. John Cope's)
1 cup chopped sweet onion (i.e. Vidalia)
3 tablespoons olive oil, divided (any kind)

Steps:

  • Heat a large non-stick skillet over low heat, add 1 T olive oil and the kielbasa.
  • Increase heat to medium-low and cook , stirring and turning the meat until it's warmed through.
  • Add remaining oil and the onions, increase heat to medium-high and continue to cook until onions have softened.
  • Add the full bag of Simply Potatoes and the corn, cover and continue to cook, stirring occasionally, until until corn and potatoes are thoroughly hot, and the onions and potatoes have started to brown.
  • Serve and enjoy!
