Steps:
- Score corn through middle of each kernel with a sharp knife. Grate corn from cob or cut kernels from cob with a very sharp knife (do not cut so deeply as to include part of cob). Put kernels in a 4-cup glass or ceramic bowl. Mash slightly with a potato masher until a milky liquid is exuded. Add sugar, salt, paprika and pepper and stir. Cover tightly with polyvinyl microwave plastic wrap. Cook at 100 percent 1 minute. Uncover and stir. Reserve.
- In an 8-cup measure, heat oil at 100 percent 15 minutes, until a microwave thermometer registers 375 degrees Fahrenheit. To the corn, add egg yolks, flour and baking powder and stir. Beat egg whites until stiff. Fold into corn mixture.
- Drop corn mixture by the tablespoon into hot oil. Depending upon shape of measuring cup, you will be able to cook 6 to 10 fritters at a time. Cook, uncovered, 45 seconds at 100 percent. Turn fritters over with a slotted spoon. Cook 45 seconds longer, until fritters are golden brown. Remove and drain on paper towel.
- Heat oil at 100 percent 5 minutes between batches. Continue making fritters with remaining batter. Do not remove container of oil from microwave oven until it cools. Serve fritters immediately with nectarine sauce, maple syrup or creme fraiche and caviar.

JIMMY'S CLAM AND CORN FRITTERS
Came up with these because my son loves clam fritters and I love corn hush puppies! So instead of French fries for your next fried seafood dinner, give these a try!

Steps:
- Mix cornmeal, cream-style corn, clams, onion, flour, baking powder, salt, and sugar in a bowl until batter is thoroughly combined. If batter is too thick, stir in milk, about 1 tablespoon at a time.
- Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
- Scoop about 1 heaping tablespoon of batter per fritter and gently drop into the hot oil; deep-fry in small batches of 3 or 4 fritters until golden brown, 3 to 4 minutes. Drain fritters on paper towels.

CORN FRITTERS
Steps:
- Mix together the corn, flour, milk, Parmesan, red bell peppers, cornmeal, jalapenos, sugar, baking powder, cayenne, turmeric, 1 teaspoon salt and the egg in a large bowl.
- Heat 4 to 5 inches oil in a Dutch oven or large heavy-bottomed pot over high heat to 360 degrees F. Working in batches, drop 4 to 5 spoonfuls of the batter into the hot oil and cook, turning occasionally, until browned and crisped, about 2 minutes. Drain on paper towels and sprinkle with salt while still hot. Serve with Black Pepper and Honey Sour Cream.
- Combine the sour cream, honey and black pepper in small bowl.
CORN FRITTERS PRESIDENT JIMMY CARTER'S

- In a mixing boil combine corn kernels, sugar, salt, pepper and diced red pepper. Stir in egg yolks, one at a time. Fold in flour. In a clean bowl beat the egg whites until stiff. Fold into the batter. In a large cast iron skillet heat oil over medium heat; gently drop in heaping tablespoons of the batter to make around 12 fritters.
- Fry fritters to golden brown turning to cook evenly; allow two minutes frying time for each side so that the fritters are puffed up and cooked through; using a slotted spoon transfer onto paper towel. Drain well and serve hot.
- For breakfast dish arrange in a baking sheet and dust with confectioners sugar. Glaze under hot broiler for one to two minutes and serve at once with honey or maple syrup.

CHEF'S MARKET CORN FRITTERS
Steps:
- Mix all the ingredients except the oil together until well blended.
- Heat 1/2-inch vegetable oil in a wide frying pan over medium-high heat. Drop the batter by heaping tablespoonfuls into the hot oil being careful not to overcrowd them in the pan. Cook, turning once, until browned on both sides, about 1 minute per side. Drain and serve warm.

- Heat the oil in a nonstick skillet over medium heat.
- In a large bowl, mash the grits with a potato masher. Add the bean mix, baking mix, cheese, eggs and corn, and stir until well blended and incorporated.
- Using a small ice cream scoop, drop the batter by the heaping tablespoon full into the skillet. Cook until cooked through and golden brown, about 3 minutes per side. Repeat with the remaining batter. Remove the fritters to a plate lined with a brown paper bag or paper towel to drain.
- While the fritters are cooking, in a medium bowl, combine the sour cream, parsley and season with salt and pepper.
- Transfer the fritters to a serving dish and serve with the sour cream mixture on the side.

- In a medium bowl, stir together the flour, baking powder, salt and pepper. Make a well in the center, and pour in the egg, milk, whole kernel corn, and cream-style corn. Mix until all ingredients are combined.
- Heat the lard in a skillet over medium-high heat. Drop tablespoon-sized dollops of batter onto the hot skillet, and fry for 2 to 3 minutes on each side, or until golden brown. Serve with butter and salt, and a cold glass of milk.

- In a large saucepan, heat 2 inches of oil to 350°F.
- Meanwhile, in a medium bowl, whisk the all-purpose flour with the cornmeal, baking powder, 1 1/4 teaspoons of salt and a pinch of pepper.
- Add the eggs, clam broth and beer and whisk until the batter is smooth.
- Fold in the scallops, scallions, onion and jalapeño.
- Working in batches, drop heaping teaspoons of the batter into the oil and fry, turning occasionally, until golden brown all over, about 7 minutes.
- Using a slotted spoon, transfer the fritters to paper towels.
- Serve with tartar sauce and lemon slices or wedges.

- In a large bowl, beat the egg yolks until foamy. Add the half-and-half, flour, and salt, combining well. Stir in the corn.
- Melt the lard in a frying pan over medium-high heat. (Once melted, it should be about 2 inches deep.) Heat until the oil sizzles when a small amount of batter is dropped into it.
- Reduce the heat to medium, and drop in tablespoonfuls of the batter, frying the fritters on both sides until golden brown. (To prevent the fritters from touching and maintain the oil's temperature, do not crowd the pan.) Set the fritters on paper towels to remove the excess oil, and set each batch aside to keep warm while frying the remaining batter.
