LEMON-HERB MARINATED FETA

Lemon-Herb Marinated Feta image

Briny feta, tart lemon, bright herbs and hot pepper come together in perfect harmony here. Spoon this appetizer onto a round of buttery, toasted French bread for a perfectly balanced bite that you'll want to keep eating all night. That's right, this easy and elegant recipe is perfect for a party. It's low-effort, tastes great and is sure to impress, despite the fact that its ingredient list is short and mostly utilizes bits and bobs of ingredients you might already have on hand. Feta might be the exception to that rule, but that's exactly what we were going for when we developed this recipe: a way to showcase the divine flavor of this special cheese. So mix this up in advance of your next party, and watch your guests go gaga over this marinated app-there's no need to reveal how easy it was to make.

Marinated Feta Three Ways image

With just a few ingredients and some hands-off time, feta cheese can be transformed into a delicious appetizer to serve with crostini or as an accompaniment to grilled vegetables and meat. We came up with a trio of super versatile flavor combinations that are all made following the same method. By marinating the feta in glass jars, you'll be able to see the colors of the aromatics, for a beautiful and delicious gift too.

Categories     appetizer

Time 13h

Yield 2 servings

Number Of Ingredients 21

1 cup good-quality extra-virgin olive oil
3 cloves garlic, peeled and smashed
2 sprigs fresh thyme
2 sprigs fresh oregano
1 sprig fresh rosemary
1/2 teaspoon crushed red pepper flakes
2 strips lemon zest (about 3 inches long; see Cook's Note)
1 bay leaf
8 ounces feta, drained well from brine and cut into 1/2-inch pieces
1 cup good-quality extra-virgin olive oil
4 whole chipotle chiles in adobo
3 cloves garlic, smashed
1/2 teaspoon smoked paprika
8 ounces feta, drained well from brine and cut into 1/2-inch pieces
1 cup good-quality extra-virgin olive oil
3 canned whole artichoke hearts, drained and halved
4 sun-dried tomatoes in olive oil, roughly chopped
3 cloves garlic, smashed
1/2 teaspoon crushed red pepper flakes
3 strips lemon zest (about 3 inches long; see Cook's Note)
8 ounces feta, drained well from brine and cut into 1/2-inch pieces

Steps:

  • For each of the above combinations, place all ingredients except for the feta in a small saucepan and gently heat over medium low just until tiny bubbles begin to form, 4 to 6 minutes. Remove from the heat and allow to cool completely, about 1 hour.
  • Once the infused olive oil is cool, transfer half of the aromatics from the saucepan to a 16-ounce Mason jar followed by half of the feta. Repeat layering and then carefully pour the infused olive oil into the jar. Gently press the feta down if needed to ensure it is fully submerged and seal the jar with its lid (see Cook's Note). Place the jar in the refrigerator and allow the feta to marinate for at least 12 hours and up to 5 days.
  • Remove the jar from refrigerator at least 30 minutes before serving to allow the solidified olive oil to liquify.

LEMON, HERB & GARLIC MARINADE

Lemon, Herb & Garlic Marinade image

I've adapted this from a Jamie Oliver recipe. Jamie makes it with his 'flavour shaker' but as most people probably don't have one - you can use a mortar and pestle. Use this marinade for steak, chicken or fish. It imparts a wonderful flavour. We had it with steak and it made it beautifully moist and tender and lemony - quite a different taste for steak but absolutely delicious! Quantities given should make enough to marinade 2-3 steaks or 2 large chicken breasts or 4 fillets of fish.

Provided by Kookaburra

Categories     Lemon

Time 10m

Yield 1/2 cup, 2-4 serving(s)

Number Of Ingredients 8

1 teaspoon fresh rosemary (leaves only)
1/2 teaspoon fresh thyme leaves or 1 teaspoon dried thyme
1 pinch lavender flowers (optional) or 1 pinch lavender leaves (optional)
1/2 teaspoon freshly ground black peppercorns
1 pinch sea salt
2 garlic cloves, peeled and sliced
1/2 lemon, juice and zest of, finely grated
4 tablespoons extra virgin olive oil

MARINATED FETA WITH HERBS AND PEPPERCORNS

Marinated Feta With Herbs and Peppercorns image

The best recipes often make a good ingredient great through minimal effort. For this easy appetizer, start with good-quality feta, preferably in brine, which is creamier than the squeaky supermarket varieties. Many commercial fetas use only cow's milk and can taste somewhat one-note, so look for one that contains both sheep's and goat's milk, which provide the cheese's signature tang. Dice the feta, toss it with preserved lemon, peppercorns and chile, and refrigerate overnight. Spoon it onto crostini, or serve it alongside eggs, fish, salad, grilled or roasted vegetables or atop a bowl of pasta.

Provided by Alexa Weibel

Categories     dinner, easy, lunch, dips and spreads, finger foods, salads and dressings, appetizer, side dish

Time 10m

Yield About 2 1/2 cups

Number Of Ingredients 8

3/4 cup extra-virgin olive oil, plus more if needed
3 tablespoons finely chopped fresh parsley
3 tablespoons finely chopped preserved lemon, or 4 strips fresh orange zest plus 1 tablespoon juice (from 1 orange)
1 red serrano chile, very thinly sliced (optional)
4 teaspoons finely chopped fresh oregano
1 tablespoon any combination of whole pink, green, white and black peppercorns, crushed or coarsely chopped
8 ounces firm Greek feta, in brine
Crostini or crackers, for serving

Steps:

  • In a medium bowl, stir together the olive oil, parsley, preserved lemon, chile, oregano and peppercorns.
  • Cut the feta into 1/2-inch cubes and add them to the olive oil mixture. Gently fold together until feta is evenly coated. Transfer to a jar or lidded container and drizzle with more olive oil, if needed to immerse the feta. Refrigerate for at least 24 hours.
  • Remove from refrigerator at least 30 minutes before serving to allow solidified olive oil to return to liquid form. Serve with crackers or crostini, or spoon on top of seared fish, grilled or roasted vegetables, pasta or salad.

LEMON HERB MARINADE

Lemon Herb Marinade image

This easy Lemon Herb Marinade can be whipped up in 10 minutes. Zesty herbs and simple ingredients work together to elevate chicken, fish or pork. Feel free to switch up the herbs you use in this Lemon Herb Marinade. For example, for a lemon-rosemary marinade, consider substituting parsley for the basil and rosemary for the thyme. A good rule of thumb when mixing up marinades is, for fish, chicken and pork, light herbal notes tend to work well. This lemon and herb marinade is not to be missed.

  • Combine currants and lemon juice in a small bowl; let stand at room temperature 1 hour. Drain currants, and set aside.
  • While currants soak, bring 1/2 inch of water to a boil in a large pot over high. Place chard in a large steamer basket. Place basket over boiling water, and cover. Reduce heat to medium-low, and steam until chard has just wilted, about 10 minutes. Stir in cilantro, mint, and parsley. Cover and steam until herbs have wilted, about 3 minutes. Remove herb mixture, and spread in a single layer on a rimmed baking sheet; let cool 10 minutes. Squeeze cooled herb mixture to remove excess water; finely chop.
  • Heat 3 tablespoons oil in a large skillet over medium-high until shimmering. Add coriander and Aleppo pepper, and cook, stirring constantly, until spices smell fragrant and darken, about 10 seconds. Immediately stir in chopped herb mixture and chopped thyme; reduce heat to low. Cook, stirring often, until moisture evaporates, about 10 minutes. Stir in salt, preserved lemon, 1 tablespoon oil, and drained currants. Remove from heat, and let cool completely, about 30 minutes.
  • Shape mixture into 24 (11/4-inch) balls (about 1 tablespoon each). Place 4 herb balls and 4 feta cubes in each of 6 (8-ounce) jars with lids. Pour in enough oil to cover mixture (about 1/2 cup per jar). Place 1 smashed garlic clove, 1 thyme sprig, and 1 lemon peel strip in each jar. Attach lids, and refrigerate at least 4 hours or up to 5 days. Bring to room temperature, about 30 minutes, before serving. Serve with crostini or crackers.
