½ cup ketchup
⅓ cup brown sugar
1 tablespoon lemon juice
1 teaspoon dry mustard
2 pounds lean ground beef
3 slices bread, shredded
¼ cup diced onion
1 egg, beaten
1 cube beef bouillon, crumbled
3 tablespoons lemon juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a small bowl, combine ketchup, brown sugar, 1 tablespoon lemon juice and dry mustard until smooth.
  • In a large bowl, combine ground beef, shredded bread, onion, egg, bouillon, 3 tablespoons lemon juice, and 1/3 cup of the ketchup mixture until well mixed. Form into a loaf and place in a 9x5 inch loaf pan.
  • Bake 1 hour. Pour off fat. Pour reserved ketchup mixture over loaf. Bake 10 minutes more.

1/2 cup ketchup
1/4 cup brown sugar
4 teaspoons cider vinegar
1 tablespoon extra virgin olive oil
1 medium onion, chopped
2 cloves garlic, minced
2 large eggs, lightly whisked
1/4 cup milk
1 tablespoon Worcestershire sauce
2 teaspoons Dijon mustard
1 teaspoon salt
1/2 teaspoon ground pepper
1/2 teaspoon dried thyme
1/4 teaspoon hot pepper sauce
2 pounds ground meat*
2/3 cup crushed saltine crackers (about 16 crackers)
1/3 cup minced fresh parsley

Steps:

  • Combine ketchup, brown sugar and cider vinegar in a small bowl.
  • Preheat the oven to 350ºF. Line a rimmed baking sheet with foil. Set aside.
  • Heat a skillet over medium-high heat. Add the oil, and once shimmering, add the onion and cook until tender. Add the garlic and cook an additional minute, then remove from the heat to cool slightly.
  • In a medium bowl, combine the eggs, milk, Worcestershire sauce, mustard, salt, pepper, thyme and hot pepper sauce. Mix until combined.
  • In a large bowl, combine the meat, crackers, parsley, and cooked onion and garlic mixture. Add the egg mixture and mix just until combined.
  • Transfer the mixture to the prepared baking sheet. Form into a loaf about 9×5-inches.
  • Brush half of the glaze over the meatloaf.
  • Bake for 30 minutes, then spread the remaining glaze over the top and sides of the meatloaf.
  • Return to the oven and bake until the meatloaf registers 160ºF on an instant read thermometer, about another 20-30 minutes.
  • If desired, you can turn on the broiler for the last couple minutes to really thicken up the glaze.
  • Cool for 10-15 minutes before slicing to serve.

2 lbs ground beef (85% or 90% lean)
1 med onion (finely chopped)
2 large eggs
3 garlic cloves (minced)
3 Tbsp ketchup
3 Tbsp fresh parsley (finely chopped)
3/4 cup Panko breadcrumbs
1/3 cup milk
1 ½ tsp salt (or to taste)
1 ½ tsp Italian seasoning
¼ tsp ground black pepper
½ tsp ground paprika
3/4 cup ketchup
1 ½ tsp white vinegar
2 ½ Tbsp brown sugar
1 tsp garlic powder
½ tsp onion powder
¼ tsp ground black pepper
¼ tsp salt

Steps:

  • Line a 9"x5" loaf pan with parchment paper and preheat oven to 375°F.
  • In a large bowl, add all of the ingredients for the meatloaf. Mix well to combine.
  • Add meat to the loaf pan, gently press meat down and shape evenly and bake meatloaf at 375˚F for 40 minutes.
  • In a small bowl, mix all of the ingredients together for the sauce. Spread the sauce over meatloaf then return to oven and bake additional 15-20 minutes or until the internal temperature is 160˚F. Rest meatloaf 10 minutes before slicing. Drizzle with baking juices from the pan.

Red Wine Meatloaf is full of bold flavors, is filling and makes for great leftovers during the week! Cabernet Sauvignon enhances the flavor of the beef and seasonings and lends a hand in creating this mouthwatering meatloaf!

2 tbsp ghee
1/2 C finely chopped onion
1/2 C finely chopped celery
3 cloves of garlic, minced
1 tsp Italian seasoning
1 C tomato sauce
1/4 C red wine such as cabernet sauvignon
3 tbsp chopped fresh basil
2 tbsp chopped fresh Italian parsley
1/3 C gluten free breadcrumbs
1 1/2 lbs lean (90/10) ground beef (I used grass-fed beef)
1 lb ground pork
1 tsp ground black pepper
1 tsp salt
Extra chopped parsley for garnish.

Steps:

  • Preheat your oven to 350.
  • Heat the ghee in a skillet over medium heat. Add the onion, celery, garlic and Italian seasoning and cook until the onion and celery are tender, about 10 minutes. After cooking the veggies, remove from heat and set aside to allow to cool for a few minutes.
  • While the veggies are cooking, chop your basil and Italian parsley.
  • Add the chopped basil, Italian parsley, tomato sauce and breadcrumbs to the cooked veggies.
  • Place the ground beef and ground pork in a large mixing bowl. Pour the veggie mixture into the bowl with the meat and season with salt and pepper. Add the red wine. Gently mix together.
  • Press the meat mixture into an 8x4 loaf pan and form the top into a rounded shape.
  • Bake for 45 minutes or until the internal temp is 150. Ovens can vary so it may take more or less time. My convection oven took about 50 minutes.
  • Remove the meatloaf from the oven and drain any excess liquid. There will most likely be a lot of excess liquid due to the fat content of the beef and pork.
  • Allow the meatloaf to cool for 10-15 minutes and then carefully remove from the loaf pan and slice.

2 large eggs
1 medium yellow onion, cut into quarters
1 medium carrot, peeled and ends cut off, cut into large chunks
1 stalk celery, cut into large chunks
1 clove garlic, peeled
1 ½ pounds ground meat ( (preferably a combination of beef, pork, veal, or turkey 93/7))
¾ cup dried bread crumbs
¼ cup chopped fresh parsley, ( additional for garnish if desired)
¼ cup milk
¼ cup ketchup
1 tablespoon Worcestershire sauce
1 teaspoon kosher salt
½ teaspoon coarsely ground black pepper
¼ cup ketchup
2 tablespoons packed brown sugar
1 tablespoon red wine vinegar

Steps:

  • Preheat oven to 350ºF. Spray a 9" by 5" loaf pan with nonstick cooking spray.
  • In a large bowl, lightly beat two eggs.
  • Place onion, celery, carrot, and garlic in a food processor and pulse until finely chopped. Add to bowl with eggs.
  • Add ground meat, bread crumbs, parsley, milk, 1/4 cup ketchup, Worcestershire, salt, and pepper. Mix to combine. Go ahead and use your hands. Don't over mix; ingredients should be just combined. Press lightly into prepared pan.
  • In a small bowl, combine 1/4 cup ketchup, brown sugar, and red wine vinegar. Brush meatloaf with half of ketchup mixture and bake for 35 minutes.
  • Brush with remaining ketchup mixture; return to the oven and bake for another 55 minutes or until middle of the loaf reaches at least 165ºF when checked with an instant-read thermometer. Internal temperature will continue to rise as the meatloaf rests.
  • Let meatloaf rest 15 minutes before removing from pan or slicing.

1 cup crushed saltines (25-30 crackers)
1/3 cup milk
1/4 to 1/2 cup minced fresh parsley
2 large eggs (lightly beaten)
2 teaspoons onion powder (see note to use fresh onions)
3 garlic cloves (finely minced or 1 teaspoon garlic powder)
1 tablespoon Dijon mustard
3 tablespoons Worcestershire sauce
1 1/2 teaspoons salt (I use coarse, kosher salt - use slightly less for table salt)
1/2 teaspoon black pepper (I use coarse black pepper - use slightly less for finely ground)
2 pounds ground meat (I use half ground beef/half ground pork - see note)
2/3 cup ketchup or BBQ sauce (or a combination)
2 tablespoons brown sugar
2 tablespoons apple cider or red wine vinegar

Steps:

  • For the meatloaf, in a large mixing bowl, add the crushed saltines and milk and let the mixture sit for 5-10 minutes. Add the parsley, eggs, onion powder, garlic, Dijon mustard, Worcestershire sauce, salt and pepper. Mix well.
  • Add the ground meat and mix until evenly and well combined. (You can use a food processor for all of the above if you want a an even more well combined spice and meat mixture.)
  • For the glaze, combine the ketchup (or BBQ sauce), brown sugar, and vinegar and whisk to combine.
  • Preheat the oven to 375 degrees F. Line a baking sheet with foil and lightly grease with cooking spray.
  • Pile the meat mixture in the middle of the prepared pan and shape into a loaf about 9 inches long and 4 inches wide (it doesn't have to be perfect; just try to get it an even thickness throughout).
  • Spoon the glaze over the meatloaf. Bake for 45-50 minutes until an instant-read thermometer registers 160 degrees F in the center of the meatloaf.
  • Loosely tent with foil and let the meatloaf rest for 10-15 minutes before slicing and serving.
