4 medium whole wheat flour tortillas (8 to 10-inch diameter)
Hummus, any variety or Garlicky White Bean Spread (recipe follows)
Fresh salad greens (such as baby spinach, arugula, mixed salad greens or thinly sliced Romaine)
Vegetables:
Grape tomatoes halves, shredded carrots, red bell pepper strips, thinly sliced cucumber, thinly sliced red onion

Steps:

  • 1) Spread each tortilla evenly with hummus, as desired, leaving 1/4-inch border around edge. Top with equal amounts salad greens and vegetables, as desired. Top evenly with and beef slices. Roll up tightly. 2) Garlicky White Bean Spread: Combine 1 can (15-1/2 ounces) great Northern or cannellini beans, rinsed, drained, 2 tablespoons water, 1 tablespoon lemon juice,1 tablespoon olive oil, 1 teaspoon white wine vinegar, 1 small clove garlic, minced and 1/2 teaspoon salt in blender or food processor. Blend until smooth.

1 small red onion, chopped
1 cucumber, finely diced
1 cup plain yogurt
1 teaspoon minced garlic
1 teaspoon dried dill
1/2 teaspoon ground black pepper
1/4 teaspoon salt
1 spinach flat bread wraps (or pita bread)
3 plum tomatoes, chopped
4 ounces feta cheese

Steps:

  • In large skillet, cook beef and onion. Drain.
  • In medium bowl, stir together cucumber, yogurt, garlic, dill, pepper and salt.
  • Spoon 2 tablespoons cucumber mixture down center of each wrap. Top with beef mixture, tomatoes and feta. Roll up. Serve with remaining cucumber mixture.

1 Tbsp. chopped fresh mint
1 large navel orange, chopped
1/2 cup chopped red onions
1 pkg. (4 oz.) ATHENOS Traditional Crumbled Feta Cheese
1 beef skirt steak (3/4 lb.)
4 flour tortillas (10 inch)

Steps:

  • Heat greased grill to medium heat.
  • Mix dressing and mint until blended. Combine oranges, onions and cheese in medium bowl. Add half the dressing mixture; mix lightly.
  • Grill steak 5 to 6 min. on each side or until cooked to medium doneness (160°F), brushing frequently with remaining dressing mixture.
  • Remove steak from grill; let stand 5 min. Cut steak across the grain into thin slices. Top tortillas with meat and orange mixture; roll up.

1 jalapeno pepper, seeded and minced
3 garlic cloves, minced
1 boneless beef chuck roast (2 to 3 pounds)
1/2 teaspoon salt
1/2 teaspoon pepper
1 can (8 ounces) tomato sauce
1/4 cup lime juice
1 tablespoon chili powder
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
6 flour or whole wheat tortillas (8 inches)
Optional toppings: Torn romaine, chopped tomatoes, sliced avocado and sour cream

Steps:

  • Place onion, jalapeno and garlic in a 4-qt. slow cooker. Sprinkle roast with salt and pepper; place over vegetables.
