GRILLED MEDITERRANEAN CHICKEN VEGETABLE KABOBS



Grilled Mediterranean Chicken Vegetable Kabobs image

Fun and tasty! A rosemary-lemon marinade gives these grilled kabobs loads of flavor.

1/4 cup lemon juice
3 tablespoons olive or vegetable oil
2 teaspoons chopped fresh rosemary leaves or 1 teaspoon dried rosemary leaves
1/2 teaspoon salt
1/4 teaspoon pepper
4 cloves garlic, finely chopped
1 lb boneless skinless chicken breasts, cut into 1 1/2 inch pieces
1 medium red bell pepper, cut into 1-inch pieces
1 medium zucchini or yellow summer squash , cut into 1-inch pieces
1 medium red onion, cut into wedges
1 lb fresh asparagus spears
1/4 cup crumbled feta cheese (1 oz)

Steps:

  • In shallow glass or plastic bowl, or resealable food-storage plastic bag, mix all marinade ingredients. Add chicken, stirring to coat with marinade. Cover dish or seal bag; refrigerate, stirring occasionally, at least 30 minutes but no longer than 6 hours.
  • Heat coals or gas grill for direct heat. Remove chicken from marinade; reserve marinade. Thread chicken, bell pepper, zucchini and onion alternately on each of four 15-inch metal skewers, leaving about 1/4-inch space between each piece. Brush vegetables with marinade.
  • Cover and grill kabobs over medium heat 10 to 15 minutes, turning and brushing frequently with marinade, until chicken is no longer pink in center. Add asparagus to grill for last 5 minutes of grilling, turning occasionally, until crisp-tender. Discard any remaining marinade.
  • Sprinkle feta cheese over kabobs. Serve kabobs with asparagus.

Steps:

1 yellow squash or zucchini, cut into half moons
8 ounces baby bella mushrooms, trimmed
1 cup grape tomatoes
6 ounces brussels sprouts, halved,
1 medium onion, cut into chunks
3-4 garlic cloves, minced
1/2 cup chopped fresh parsley
kosher salt
1/2 teaspoon dried oregano
1/2 teaspoon Aleppo pepper ((or 1/2 to 1 teaspoon red pepperflakes))
1/3 cup extra virgin olive oil
juice of two lemons

Steps:

  • Prepare 8 to 10 skewers (if using bamboo or wooden skewers, soak them in water for at least 30 minutes).
  • Chop the vegetables and garlic and place them in a large mixing bowl. Add the parsley and season with Kosher salt, oregano and pepper flakes. Add the olive oil and lemon juice. Toss to combine.
  • Set the vegetables aside for 20 minutes while you heat the grill (Or you can marinate them in the fridge for a few hours until you are ready).

2 bell peppers, cut into 1 inch chunks
2 small eggplants, cut into 1 inch chunks
10 button mushrooms (or mushrooms of your choice)
2 medium yellow onions, peeled and cut into 1 inch chunks
1/4 cup balsamic vinegar
1 tablespoon Dijon mustard
1 teaspoon rosemary
1 teaspoon oregano
5 cloves garlic, peeled and chopped
3 tablespoons olive oil
salt
cracked pepper

Steps:

  • Put the vegetable pieces into a large bowl.
  • Combine remaining ingredients in another bowl and whisk until blended.
  • Pour marinade over veggies and toss to coat.
  • Cover bowl and marinate in refrigerator for several hours or overnight.
  • Drain vegetables, reserving marinade.
  • Thread the vegetables onto metal skewers.
  • Put the skewers on a broiler pan and cook under the broiler for 10-15 minutes , turning occasionally.
  • Baste with the marinade several times during the cooking process.
  • These are also excellent grilled on the barbecue.
  • Excellent with couscous or wild rice.

  • Place wooden skewers on a flat tray with sides and cover with water. Soak skewers for a minimum of 30 minutes to prevent them from catching fire on the grill.
  • Prepare Marinade: Zest lemon and squeeze out juice over medium sized bowl. Whisk in remaining ingredients and mix until everything is well incorporated. Set marinade aside.
  • Prepare Veggies: slice zucchini and squash in half lengthwise and then into 1" pieces. Cut onion into quarters and then eighths, scrub mushrooms and snap off stems. Stem, seed and core peppers and then slice into pieces that are similar in size to the other veggies.
  • Place all veggies except mushrooms (the mushrooms will act like sponges and soak up all of the liquid--so give the other veggies a chance!!) into bowl with marinade and mix well. Toss in mushrooms and continue to stir until all vegetables are coated. Cover and let sit for at least 30 minutes, or up to 6 hours.
