Well tons of people love BLT sandwiches and then there are the rest of us who do not like the taste of raw tomatoes (that would be ME!). As a kid we always had to eat what was prepared or we could tweak it a bit to our liking as long as my mom did not have to do extra work. So this was my take on the BLT as a kid and I still make it now when hubby wants BLTs.

2 slices bread, toasted if you'd like
2 slices cooked bacon, well drained
2 lettuce leaves, washed and patted dry
2 -3 tablespoons creamy peanut butter (to your liking on measurements)

Steps:

  • Toast your bread (I think this is very important but I've known others who like it untoasted).
  • Cook the bacon you need for this sandwich and any BLTs being served but for this sammy you'll need two crispy slices.
  • Spread the peanut butter on one toasted bread slice, top with the slices of bacon (broken to fit the length) and lettuce). Place other bread slice on top.
  • Slice diagonally if you want a fancy plate or directly across for those quick lunches (this is really just a joke here!).
  • Take a bite and then say YUMMMMMM.

This is my Low Carb Friend Mel's recipe. You can change up the veggies to be whatever you want.... the original recipe had 14.5 oz of canned tomatoes which I switched out fresh tomato. You could use mushrooms, asparagus, really anything!... Really versatile.

1 tablespoon olive oil
1 garlic clove, finely chopped
1/2 cup tomatoes (fresh, diced)
kosher salt and pepper
10 ounes baby spinach leaves
8 eggs, separated (yolks kept whole, if possible)

Steps:

  • Heat oven to 400°F.
  • Heat the oil in a medium skillet over medium-high heat. Add the garlic and cook for 1 minute. Add the tomatoes, 1/2 teaspoon salt, and 1/4 teaspoon pepper and simmer for 5 minutes. Add the spinach and cook until it begins to wilt, 1 minute. Transfer to a 2-quart baking dish.
  • Beat the egg whites until foamy, about 30 seconds, then pour them over the spinach mixture. Carefully place the whole yolks over the top.
  • Bake until the whites are set, 20 to 22 minutes. Divide among individual plates.

I tried for years to duplicate the crab salad that was made in the seafood market i used to work for, but never could. However, I came up with this one and prefer it a whole lot more. My daughter will hide with the batch I make and eat it all. She doesn't like to share. Serve with club-style crackers.

1 pound imitation crabmeat, flaked
½ cup finely chopped celery, or more to taste
½ cup reduced-fat ranch dressing (such as Hidden Valley Ranch® LIght)
⅓ cup mayonnaise (such as Hellmann's®/Best Foods®)
1 tablespoon white sugar
1 teaspoon minced fresh parsley

Steps:

  • Gently mix flaked imitation crab, celery, ranch dressing, mayonnaise, sugar, and parsley in a salad bowl until thoroughly combined. Refrigerate overnight, stirring occasionally. Stir again just before serving.
