MAGIC SYRUP
I've never been a big fan of maple syrup, so I started making this for special pancake and waffle breakfasts. When they know I'm cooking, my nieces and nephews beg for 'breakfast for dinner' so they can have this syrup on top!

Steps:
- Combine sugar, buttermilk, and butter in a large saucepan over medium heat; cook and stir until melted and smooth, about 4 minutes. Stir in vanilla extract. Add baking soda and stir until syrup is frothy and doubles or triples in volume, about 1 minute.

SATURDAY MORNING SYRUP
This syrup can be made with any liqueur of your choice! I used cream sherry and it was amazingly good! I got this recipe from a food friend named Reecespieces. Its so easy to make! I served this over strawberry waffles, as you can see in my photo.

Steps:
- Heat Sugar and Corn Syrup until sugar is completely dissolved.
- Add liqueur of choice.
- Allow to simmer for at least 3 minutes.
- For a thinner syrup add more liqueur.
- For a thicker syrup add more sugar or cook longer.
- When desired results are reached, cool liquid in pan over an ice bath. Syrup will thicken as it cools.
- You can use any liqueur for this syrup, Irish Cream, Coffee Liqueur, Amaretto, and Hazelnut Liqueur. It goes great on pancakes, waffles and French Toast, or use it to drizzle over cake with a dollop of whipped cream.
SATURDAY MORNING PANCAKES
Our family has pancakes every Saturday morning and this is the recipe that I've been using for years. My son likes it so much, he doesn't even use syrup. The rest of my family only uses real maple syrup.

Steps:
- Preheat to medium heat a large non-stick griddle. We use a double burner griddle.
- In a large mixing bowl, mix together the dry ingredients.
- In another bowl, beat the egg and then mix together the remaining moist ingredients.
- Dump the wet ingredient mixture to the dry mixture.
- Stir until everything is just blended. You will still have some lumps. (O.K. to break up any very large lumps).
- Put a very light coat of oil onto the pan. I do this by putting a small amount of oil onto the pan and spread out using part of a paper towel and a spatula.
- Put about 1/6 of the batter onto the hot skillet (I can cook 3 at a time). Cook until the edges appear dry and top of pancake bubbly. The bottom should be golden brown before turning.
- Turn and cook until golden on the other side.
- Serve with real maple syrup and butter.
- Makes 6 large pancakes.

SATURDAY MORNING SYRUP
You can use any liqueur for this syrup. Have fun with it. I've used Irish Cream, Coffee Liqueur, Amaretto, and Hazelnut Liqueur. It goes great on pancakes, waffles and French Toast, or use it to drizzle over cake with a dollop of whipped cream. It's perfect for a lazy Saturday morning brunch. Amounts are all a 1:1:1 ratio, so adjust as needed for the amount you would like to make.

- To cook out the alcohol simmer for two to three minutes.
- For thinner syrup or a stronger liqueur flavor, add more liqueur to taste.
- For a thicker syrup, add more sugar.
- When desired results are reached, cool liquid in pan over an ice bath. Syrup will thicken as it cools.
