Mel's Russian Chicken Dish image

A different version of sweet and sour chicken which includes some fruit as a nice surprise. I was not sure of the ounces in a package of the onion soup mix, but it is one envelope of dry mix. It has always been a hit in our family. I hope yours will enjoy it too.

6 boneless skinless chicken breasts
1 (1 1/4 ounce) envelope onion soup mix
1/2 cup hot water
8 ounces orange marmalade (or apricot preserves)
1 (15 ounce) can mandarin oranges (drained)
1 (16 ounce) can pineapple chunks, in juice (drained)
8 ounces Russian salad dressing (if you cannot find use Catalina Dressing)

Steps:

  • Preheat oven to 350 degrees.
  • Spray a casserole or baking dish with non-stick cooking spray.
  • Place chicken breasts in dish.
  • In 4 cup measure or bowl, mix together onion soup mix and water.
  • Add to soup mix, the marmalde and russian dressing, mixing well.
  • Pour dressing mixture over chicken.
  • Bake for 30 minutes or until chicken reaches internal temperature of 180 degrees.
  • Serve over brown rice or cooked noodles.

Italian cooks call it Pollo Alla Cacciatora - a variation on Chicken Cacciatore, with bacon for a twist, and lots of flavor! Serve with pasta or roast potatoes if desired.

4 tablespoons olive oil
1 (3 pound) whole chicken, cut into pieces
6 slices bacon, diced
2 onions, chopped
1 cup fresh sliced mushrooms
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh basil
1 teaspoon salt
freshly ground black pepper
1 cup white wine
1 pound tomatoes, diced

Steps:

  • Heat oil in a large skillet; brown chicken; remove. Add bacon and saute over medium heat for about 2 minutes.
  • Add onions and mushrooms and continue to saute until onions are translucent. Return chicken to skillet; sprinkle with parsley, basil, salt and pepper. Add wine and tomatoes. Cover and let simmer for 25 to 30 minutes, turning chicken once during cooking. Remove chicken from skillet and pour sauce over chicken.

Air frying perfectly crisps frozen chicken and mini waffles. Cook in batches if necessary-keep finished popcorn chicken and waffles warm in a 200 degrees F (93 degrees C) oven while you work. Drizzle or serve with maple syrup for dipping.

15 ounces frozen mini waffles
20 4- to 6-inches wooden skewers
1 cup halved fresh strawberries
¼ cup fresh blueberries
¼ cup fresh raspberries

Steps:

  • Preheat the oven to 200 degrees F (93 degrees C). Preheat an air fryer to 400 degrees F (200 degrees C).
  • Arrange popcorn chicken in a single layer in the air fryer basket. Cook chicken for 7 minutes, then flip and cook until lightly browned and crispy, 2 to 3 minutes more. Transfer chicken pieces to a baking sheet; keep warm in the preheated oven.
  • Meanwhile, arrange half the waffles in a single layer in the air fryer basket. Cook for 90 seconds; flip and continue to cook until light brown in spots and crispy, about 20 seconds more. Transfer to baking sheet. Repeat with remaining waffles.
  • Thread 2 waffles and 2 pieces of chicken onto each of 8 skewers. Thread berries onto remaining 12 skewers.

So simple! The carrots make it almost sweet, and it's a cinch to make gravy for mashed potatoes from the cooking juices.

4 pounds skinless, boneless chicken breast meat
1 medium head cabbage, quartered
1 pound carrots, cut into 1 inch pieces
water to cover
4 cubes chicken bouillon
1 teaspoon poultry seasoning
¼ teaspoon Greek-style seasoning
2 tablespoons cornstarch
¼ cup water

Steps:

  • Rinse chicken and place in slow cooker. Rinse cabbage and place on top of chicken, then add carrots. Add enough water to almost cover all. Add bouillon cubes and sprinkle liberally with poultry seasoning. Add Greek seasoning to taste (as you would salt and pepper). Cook on low for 8 hours OR on high for 4 hours.
  • To Make Gravy: When you're nearly ready to eat, pour off some of the juice and place in a saucepan. Bring to a boil. Dissolve cornstarch in about 1/4 cup water (depending on how thick you like your gravy). Add to saucepan and simmer all together until thick. If desired, season with additional Greek seasoning. Serve gravy over chicken and potatoes, if desired.
