This is the easiest, best toffee I have ever made. Everyone who tries it wants the recipe.

1 pound butter
1 cup white sugar
1 cup packed brown sugar
1 cup chopped walnuts
2 cups semisweet chocolate chips

Steps:

  • In a heavy saucepan, combine butter, white sugar, and brown sugar. Cook over medium heat, stirring constantly until mixture boils. Boil to brittle stage, 300 degrees F (150 degrees C) without stirring. Remove from heat.
  • Pour nuts and chocolate chips into a 9x13 inch dish. Pour hot mixture over the nuts and chocolate. Let the mixture cool and break it into pieces before serving.

This recipe makes 3 dozen cookies, takes 15 minutes to put together - chills for one hour in the fridge before slicing. It can be prepared ahead and the dough freezes well.

1 cup butter
2 cups all-purpose flour
1 cup confectioners' sugar
1 pinch salt

Steps:

  • Combine the butter, flour and confectioners' sugar together. At first it will have a pie crust consistency. Roll into one large log and wrap in wax paper or plastic wrap. Chill for at least one hour.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Slice chilled log into 1/4 inch thick slices. Place cookies on a baking sheet. Bake in preheated oven until edges just begin to turn golden, about 10 minutes. Watch carefully so they don't burn.

1/2 cup(s) butter, softened
1 box(es) yellow cake mix
2 large eggs
1 tablespoon(s) water
1 package(s) heath toffee bits
1/2 to 1 cup(s) pecans, chopped

Steps:

  • pre-heat oven to 350*F.
  • Mix butter, add cake mix, eggs & water. Mix well with hand mixer.
  • Add toffee bits and pecans, mix by hand. If you like lots of nuts, feel free to add 3/4 to 1 Cup of pecans.
  • Spoon onto ungreased cookie sheet and bake at 350* for 10 minutes for small cookies. For larger cookies bake for 12-13 minutes. Transfer to cooling rack. They won't look done, but when they cool, they solidify, still being a soft chewy cookie.

  • Add toffee bits and pecans, mix by hand.
  • Spoon onto ungreased cookie sheet and bake at 350 degrees for 10 minutes.
  • Transfer to cooling rack.
