MAMIE EISENHOWER'S MILLION DOLLAR FUDGE
Steps:
- In a heavy saucepan over medium heat, bring the sugar, salt, butter and evaporated milk to a boil. Boil for 6 minutes.
- Meanwhile, place the pecans, marshmallow fluff and chocolate in a large bowl. Pour the boiled syrup over the chocolate mixture. Beat until chocolate is all melted.
- Spray a 15 1/2 by 10 1/2 by 1-inch jelly-roll pan with a nonstick cooking spray and pour fudge into pan. Let harden at room temperature before cutting into 1-inch squares (can be placed in the refrigerator or freezer to speed hardening process).
S'MORES FUDGE
Whipped this up for a birthday present and it was too excellent not to share! This is an excellent treat for your next holiday party or backyard barbecue! The amount of graham crackers and marshmallows used is based on personal preference. Feel free to experiment using more or less!

Steps:
- Line an 11x7-inch baking dish with parchment paper. Sprinkle half of the graham cracker crumbs on bottom of dish.
- Melt chocolate chips, sweetened condensed milk, butter, and vanilla extract in top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching.
- Pour half of melted chocolate mixture into prepared baking dish; sprinkle about half of the miniature marshmallows over the top, covering the chocolate mixture. Repeat with the remaining chocolate mixture and graham crackers, respectively.
- Refrigerate until solid, 3 hours to overnight.

- Line an 8 inch square baking dish with parchment paper, leaving 2 inches hanging over the ends.
- Cook sweetened condensed milk and chocolate chips in a sauce pan over medium heat and stir frequently until chocolate is melted and mixture is smooth.
- Remove from heat and stir in 3/4 cup M and M candies.
- Pour into prepared baking dish, using a spatula to smooth out the top.
- Sprinkle remaining M and M candies over the top, pressing slightly into the mixture.
- Refrigerate for at least 2 hours and then cut into squares.

MEMA'S FUDGE
My grandmother's fudge recipe...just about the only one I'll eat. Keep it stored in an airtight container, it tends to dry out pretty easy. Please note the cook time includes the chill time.

- Combine sugar, cocoa, and milk in a medium saucepan.
- Cook over medium-high heat until reaches softball stage (238 degrees).
- Do not stir unless it threatens to burn!
- Remove from stove and add butter and vanilla.
- Beat with a mixer for 5 to 6 minutes, then add peanut butter and pecans.
- Spread into a lightly butter 9x13 pan.
- Chill until firm, about 2 hours.
- Cut into 1" squares.

- Stir together sugar, milk, cocoa, corn syrup, and salt in a 2-quart saucepan. Bring mixture to a boil over medium-high heat, and cook until a candy thermometer registers 240°. Remove mixture from heat; add butter, and let melt. (Do not stir.) Let cool 10 to 15 minutes or until pan is cool to the touch. Stir in vanilla.
