This maple-flavored cake with candied walnuts honors beloved my grandpa, who made maple syrup when I was a child. This cake honors his memory and has proven to be a favorite with family and friends throughout the years. -Lori Fee, Middlesex, New York

1/2 cup unsalted butter, softened
1-1/2 cups packed light brown sugar
3 large eggs, room temperature
1 teaspoon maple flavoring or maple syrup
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup buttermilk
CANDIED WALNUTS:
1 tablespoon unsalted butter
1-1/2 cups coarsely chopped walnuts
1 tablespoon maple syrup
1/4 teaspoon salt
FROSTING:
2 cups unsalted butter, softened
1 teaspoon maple flavoring or maple syrup
1/4 teaspoon salt
5 cups confectioners' sugar
1/4 to 1/2 cup half-and-half cream
3 tablespoons maple syrup, divided

Steps:

  • Preheat oven to 350°. Line bottoms of 3 greased 9-in. round baking pans with parchment; grease parchment., Cream butter and brown sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in maple flavoring. In another bowl, whisk together flour, baking powder, baking soda and salt; add to creamed mixture alternately with buttermilk, beating after each addition., Transfer to prepared pans. Bake until a toothpick inserted in center comes out clean, 11-13 minutes. Cool in pans 10 minutes before removing to wire racks; remove paper. Cool completely., For candied walnuts, in a large skillet, melt butter over medium heat; saute walnuts until toasted, about 5 minutes. Stir in maple syrup and salt; cook and stir 1 minute. Spread onto foil; cool completely., For frosting, beat butter until creamy. Beat in maple flavoring and salt. Gradually beat in confectioners' sugar and enough cream to reach desired consistency., Place 1 cake layer on a serving plate; spread with 1 cup frosting. Sprinkle with 1/2 cup candied walnuts and drizzle with 1 tablespoon maple syrup. Repeat layers., Top with remaining layer. Frost top and sides of cake. Top with remaining walnuts and syrup.

1 cup(s) pure maple syrup
1 1/4 cup(s) all purpose flour
2 teaspoon(s) baking powder
pinch(es) salt
1 cup(s) walnuts, coarsely chopped
FROSTING
2 tablespoon(s) unsalted butter
1 cup(s) sifted powdered sugar
- pure maple syrup, as needed

Steps:

  • Preheat oven to 350F. Lightly coat an 8-square baking pan with nonstick cooking spray.
  • Beat together butter, eggs, and syrup.
  • Sift together flour, baking powder, and salt, and stir into butter mixture gradually. Beat with whisk until smooth fold in walnuts.
  • Pour into a greased square pan and bake 25 to 30 minutes, or until a wooden pick inserted in center comes out clean.
  • Let cool completely in pan on wire rack before frosting.
  • To make frosting, Melt butter and blend in the powdered sugar. Add just enough maple syrup yo bring it to spreading consistency.
  • Frost top of cake and serve.

1 cup butter or 1 cup margarine, softened
1 1/2 cups granulated sugar
1/2 cup brown sugar, packed
2 1/4 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup milk
1 tablespoon maple flavoring
5 eggs
1 1/2 cups walnuts, chopped
1 cup powdered sugar
1 tablespoon milk (add extra by tsp if needed)
1/2 teaspoon maple flavoring
walnut halves (to garnish)

Steps:

  • In mixer bowl cream butter and sugars until fluffy.
  • In another bowl combine flour, baking powder and salt.
  • In measuring cup combine milk and maple flavoring, and beat into butter mixture alternatively with flour mixture.
  • Beat in eggs 1 at a time.
  • Mix in 1 1/2 cups chopped walnuts.
  • Turn into greased 9 or 10 inch tube pan and bake in lower third of 300-degree oven 1 hour to 1 hour 15 minutes, just until pick inserted into center comes out clean.
  • Cool in pan 15 minutes, then turn out onto rack to cool completely.
  • Drizzle with maple glaze and garnish with walnuts.
  • Maple Glaze:
  • In a small bowl mix 1 cup sifted powdered sugar with 1 to 1 1/2 tablespoons
  • Milk to make a glaze of thick pouring consistency. Stir in 1/2 teaspoons maple flavoring.

We first enjoyed this delicious cake at a Mennonite Church potluck dinner, courtesy of a wonderful baker named Vera. She didn't have a title for her cake, so I named it myself. The texture of this cake is like a big pound cake, and the taste reminds me of tutti-frutti!

1 1/2 teaspoons vanilla
1 cup vegetable oil
1/2 cup banana-pineapple-strawberry juice concentrate
2 cups powdered sugar
1 dash milk

Steps:

  • Mix all ingredients together.
  • Pour into greased/floured bundt pan.
  • Bake at 350* for 44-55 minutes.
  • Glaze with juice concentrate, dash of milk and enough powdered sugar to make glaze.
