GERMAN SPAGHETTINI
A hearty and flavorful beef, sausage, bacon and tomato sauce baked with spaghettini. Spaghettini is a thinner version of spaghetti.

Steps:
- In a skillet over medium heat, brown the ground beef until no pink shows; drain and remove from skillet. Brown Sausage in skillet until cooked through; drain.
- Combine in skillet with sausage: browned beef, bacon, tomato sauce, tomatoes and sugar. Simmer 45 minutes.
- Bring a large pot of lightly salted water to a boil. Add spaghettini pasta and cook for 8 to 10 minutes or until al dente; drain.
- Preheat oven to 300 degrees F (150 degrees C).
- Mix cooked spaghettini with tomato-meat mixture. Pour in casserole dish and bake for 30 minutes.

MENNONITE SPAGHETTI SAUCE (FROM BARBADOS)
I stayed with friend in Barbados in 2001, and this is her spaghetti sauce recipe. I thought the paprika and celery were interesting additions for a pasta sauce.

Steps:
- Sauté celery, onions, and peppers in oil until tender, about 10 minutes. Add ground beef, and stir to crumble. Don't wait for the beef to be completely cooked, just cook it long enough to scramble the meat.
- Add remaining ingredients, and simmer for 2 hours.
- Serve warm over spaghetti noodles.

This is Somali-style spaghetti sauce with my own little twist. We make this once a week in our house (my daughter craves it!). I hope you enjoy this as much as we do!

Steps:
- Place cilantro and garlic in a food processor; pulse until finely chopped.
- Toast cumin seeds in a small pot over low heat until fragrant, 2 to 3 minutes. Allow to cool, 5 minutes. Grind into a powder.
- Transfer ground cumin to a small bowl. Add Himalayan pink salt, turmeric, paprika, Italian seasoning, seasoning blend, and black pepper to make seasoning mix.
- Heat oil in a large pot over medium heat. Add ground beef; cook and stir until browned, about 5 minutes. Stir in 1/2 of the seasoning mix. Add onion; cook and stir until softened, about 5 minutes. Add potato and carrots. Cook, covered, stirring occasionally, until slightly softened, about 5 minutes.
- Stir tomatoes into the pot and bring sauce to a boil. Reduce heat to medium-low; stir in cilantro-garlic mixture and remaining 1/2 of the seasoning mix. Simmer, stirring occasionally, until flavors combine, 30 to 40 minutes. Thin sauce with water if it seems too thick.
- Bring a large pot of lightly salted water to a boil. Cook angel hair in the boiling water, stirring occasionally until tender yet firm to the bite, 4 to 5 minutes. Drain. Serve sauce over pasta.

SPICY BARBADOS PEPPER SAUCE
The sauce is good on just about anything from pork, chicken, and seafood. I like it on boneless-skinless chicken breast seasoned with fresh thyme, salt and pepper, broiled until about done then heavily basted with the sauce to finish. This recipe fills a Dutch oven over half the pan. Plenty for leftovers.

- Place the onion, red pepper, Scotch bonnet chiles, papaya, and garlic in a food processor. Pulse until finely chopped. Scrape into a large pot, and stir in the mustard powder, sugar, wine, vinegar, water, and lemon juice.

Steps:
- In large pot saute onion and garlic in olive oil until onion is softened.
- Add tomato paste and stir into olive oil until completely mixed .
- Stir in tomato sauce and tomatoes.
- Slowly mix in the 4 cups of water.
- Add bay leaves,.
- oregano, basil, salt, pepper, sugar and stir well.
- Bring to a boil then turn down and simmer for one hour.
- For your meatballs combine the beef, finely minced garlic, Italian bread crumbs, basil, oregano, parmesan cheese, eggs, salt and pepper and mix together well.
- Shape into 1 inch size meatballs and place on a cookie sheet.
- Bake meatballs in 350 degree oven for 20 minutes.
- Add meatballs to the sauce after 1 hour of cooking sauce.
- Continue to cook the sauce and meatballs 1 more hour or longer if you like.
- Uncover the sauce during the last half hour to thicken up the sauce.
- Cook pasta according to package directions.
- Serve sauce and meatballs over spaghetti.
