CREAM OF POTATO AND VEGETABLE SOUP

Cream of Potato and Vegetable Soup image

I made this potato soup for a family get-together and people were scraping the bottom of the pot. It is very good and easy to put together. I used milk to keep it more healthy, but I'm sure the half-and-half would make it even better.

CREAMY LOADED POTATO SOUP

Creamy Loaded Potato Soup image

This Creamy Loaded Potato Soup is smooth, creamy, and delicious. It can only be described as serious comfort food in a bowl that's quick and easy to make. A simple recipe perfect for a cold day.

Provided by Joanna Cismaru

Categories     Lunch     Soup

Time 55m

Number Of Ingredients 13

6 medium potatoes (cut into cubes and cooked)
8 slices bacon (thick cut)
1 onion (chopped)
4 cloves garlic (minced)
1 teaspoon basil (dried)
1 teaspoon oregano (dried)
1/2 teaspoon salt (or to taste)
1/2 teaspoon pepper (or to taste)
1/2 cup all-purpose flour
3 cups chicken broth (low sodium)
2 cups heavy cream
cheddar cheese
green onions

Steps:

  • Cook the potatoes: Add the cubed potatoes to a pot of salted boiling water and cook until fork tender, about 15 minutes. You can alternatively bake them in the oven at 425 F degrees for about 45 minutes until fork tender.
  • Cook the bacon: Cook the bacon until crisp, then crumble into small pieces or cut it first into small pieces then fry. Transfer the bacon to a plate lined with paper towels. Reserve 2 tbsp of the rendered bacon fat and discard the rest.
  • Saute veggies: In a large Dutch Oven or soup pot add the bacon fat and onion; cook the onion until soft and translucent, should take about 5 minutes. Add the garlic and cook for another 30 seconds until aromatic. Stir in the dried basil, oregano, salt and pepper.
  • Make the soup: Sprinkle the flour over the veggies and stir. Cook for about one minute to get rid of the raw flour taste. Add the chicken broth a cup at a time, stirring to remove any of the lumps as necessary. Once all the broth has been added, add in all the heavy cream. Bring to a boil.
  • Finish the soup: Add the cooked potatoes and cook for another 10 minutes over medium-low heat, stirring occasionally. The soup should thicken nicely. Stir in half the bacon bits and reserve the other half for topping over the soup. Taste for seasoning and adjust as necessary.
  • Serve and add toppings: Spoon into bowls, top with remaining bacon and load it up with your favorite toppings.

SIMPLE VEGETABLE SOUP WITH CREAMER POTATOES

Simple Vegetable Soup with Creamer Potatoes image

A quick mid-week meal that will warm everyone's stomach! This simple vegetable soup with Creamer potatoes is vegan and GF!

Provided by Kacey

Categories     Main Course

Time 1h45m

Number Of Ingredients 16

2 lbs Creamer potatoes (I used The Little Potato Company's Dynamic Duo)
1 lb carrots, diced
2 onions, diced
8 oz button mushrooms, cubed
3 celery stalks, sliced
4 garlic cloves, minced
1 cup roughly chopped napa cabbage
8 cups broth (or more if you like an even stockier soup!)
1 tbsp. tomato paste
2 bay leaves
10 sprigs of fresh thyme, left on stalks
10 sage leaves, left on stalks
Pinch of cayenne
Salt and pepper
Fresh parsley
Olive oil

Steps:

  • In a large pot, add a tablespoon of oil or two and set over medium-high heat. When hot, add in the onions, carrots, and celery. Cook for about 5 minutes. Stir in garlic and cook for another minute. Add the tomato paste and cook for another 3 minutes, stirring often. Add in all the remaining ingredients except for the potatoes and parsley. Bring to a boil, leave uncovered, and simmer for 30 minutes. Add potatoes and simmer for another hour.
  • Remove fresh herbs (that is why we keep them on the stems!) Pour into bowls and serve with fresh parsley!
  • *I find using a food processor saves time and effort when chopping the veggies. I also used napa cabbage because the taste is very subtle compared to regular cabbage, so do not exchange the two.

The whole family will love this creamy & comforting leek and potato soup! It's made with 7 plant-based ingredients, takes only 30 minutes to cook, and is rich in flavor.

Provided by Bethany Kramer

Time 37m

Number Of Ingredients 9

2 lbs Yukon Gold potatoes, peeled and diced
4 1/2 cups vegetable broth

1-2 Tablespoons oil, vegan butter, or butter
3 garlic cloves, minced
salt & black pepper
fresh thyme sprigs
chives, chopped

Steps:

  • Rinse and drain leeks: in a small bowl add chopped leeks and rinse thoroughly before draining.
