SESAME BEEF BITES

A really quick-yet-elegant finger food perfect for holiday parties!

2 tablespoons sesame oil
1 tablespoon rice vinegar
1 green onion, minced
1 clove garlic, minced
2 teaspoons hoisin sauce
¼ teaspoon chili garlic sauce
1 pound beef tenderloin, cut into 3/4 inch cubes
¼ cup teriyaki sauce
½ teaspoon sesame seeds

Steps:

  • Whisk together the sesame oil, vinegar, green onion, garlic, hoisin sauce, and chile garlic sauce in a large glass or ceramic bowl. Add the beef tenderloin cubes and toss to evenly coat. Cover the bowl with plastic wrap and marinate at room temperature for 10 minutes, or in the refrigerator up to 8 hours.
  • Preheat the oven's broiler and set the oven rack about 6 inches from the heat source. Line a baking sheet with aluminum foil.
  • Spread the beef cubes onto the prepared baking sheet. Bake in the preheated oven until cooked to your desired degree of doneness, about 8 minutes for medium-well. Transfer to a bowl and toss with teriyaki sauce. Skewer each piece of beef with a toothpick and place onto a serving platter. Sprinkle with sesame seeds to serve.

2 eggs
1/4 cup milk
2 tablespoons chopped roasted red peppers
2 tablespoons sliced green onions
2 tablespoons chopped fresh cilantro (can use 2 tsp dried)
1/4 teaspoon salt
6 ounces pepper jack cheese, shredded
1 (15 ounce) package refrigerated pie crusts, room temp

Steps:

  • Heat oven to 350 degrees F.
  • Spray 24 mini muffin pan cups with cooking spray.
  • Combine all ingredients except cheese and pie crusts in small bowl.
  • Stir in cheese and set aside.
  • Cut each pie crust into 12 rounds using 2 1/2 inch cookie cutter.
  • Press each round into a muffin cup.
  • Evenly pour egg mixture into crust lined muffin cups.
  • Bake for 23 - 33 minutes or until golden brown.

1 lb ground beef
1 cup cheddar cheese, shredded
1 cup monterey jack cheese, shredded
1 (4 ounce) can chopped green chilies, drained
1/2 cup enchilada sauce
2 large eggs, beaten
tortilla chips

Steps:

  • Preheat the oven to 350 degrees.
  • In a large skillet, brown the ground beef and drain.
  • Add the cheddar cheese, monterey jack cheese, green chilies, enchilada sauce and eggs to the browned beef.
  • Pour the combined mixture in an 8x8inch baking dish.
  • Bake at 350 degrees for 35-40 minutes.
  • A knife inserted in the center should come out clean.
  • The top should be a golden brown.
  • When done, remove from the oven.
  • Cool in the pan for 15 minutes.
  • Cut in 36 squares.
  • Serve with chips.

1 lb ground beef or 1 lb sausage
1 cup shredded cheddar cheese
1 cup shredded monterey jack cheese
1 (4 ounce) can chopped green chilies, fresh are better
1/2 cup of bottle green taco sauce
2 large eggs, beaten

Steps:

  • Preheat oven to 350.
  • Cook ground beef until done; drain off fat.
  • Stir in cheeses, chilies, taco sauce and eggs.
  • Spray an 8x8 baking dish with cooking spray.
  • Transfer meat mixture to the prepared baking dish.
  • Bake for about 40 minutes or until knife inserted comes out clean.
  • Let cool for 15 minutes.
  • Cut into squares.
