THREE-CHEESE BAKED EGGS WITH ROASTED PEPPERS
I've made this recipe several times and it's always one of the first ones I think about when we're having guests for breakfast or brunch. It's even simpler if you use the jarred roasted peppers. It's always been a hit.

Steps:
- Roast peppers on racks of gas burners over high heat, turning with tongs, until skins are blackened, 10 to 12 minutes.
- Or broil peppers on a broiler pan about 5 inches from heat, turning occasionally, about 15 minutes.)
- Transfer to a bowl and cover tightly with plastic wrap, then let stand 20 minutes.
- When cool enough to handle, peel peppers, discarding stems and seeds, and cut into 1/3-inch dice.
- Preheat oven to 350°F
- Sift together flour, salt, and baking powder into a small bowl.
- Beat eggs in a large bowl with an electric mixer at medium-high speed until doubled in volume, about 3 minutes.
- Add butter, flour mixture, and cheeses and mix well at low speed, then stir in peppers and scallions.
- Pour into a buttered 10-inch (6-cup) glass pie plate and bake in middle of oven (or lower third of oven if baking with bacon) until top is golden brown and a tester comes out clean, 30 to 35 minutes.
- Let stand 5 minutes before serving.

- Preheat the oven to 350 degrees F (175 degrees C). Lightly spray a square baking pan with cooking spray.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and chop when cool enough to handle.
- Whisk eggs and milk together in a bowl. Mix in bell peppers, onion, cilantro, salt, and pepper.
- Arrange croutons in the bottom of the prepared pan. Layer with chopped bacon, then pepper Jack, Cheddar, and Swiss cheeses. Pour the egg mixture over the top.
- Bake in the preheated oven until set, 30 to 40 minutes. Remove from the oven and let sit for 20 minutes before serving.

- Preheat the oven to 375°F. Heat a 12” cast-iron skillet over medium heat. Add enough olive oil to just coat the bottom. Once hot, add the chorizo. Break up the chorizo into small pieces and sear until brown on all sides, stirring often. Transfer the chorizo to a plate.
- To the same skillet, add the sliced onions and peppers. Season with a pinch of salt. Sauté until caramelized and tender. Stir in the garlic. Let cook another minute or so.
- Add the chipotles, adobo sauce, and fire-roasted tomatoes. Stir well and bring to a simmer. Stir in the reserved chorizo. Simmer the mixture for about 10 minutes over medium-low heat until thickened. Top the sauce with the shredded cheese. Make 6 “wells” in the sauce and crack the eggs into them. Bake for 10-12 minutes until the eggs are set.
- Top the baked eggs with slices of avocado, shaved radishes, sliced scallions, and cilantro leaves. Serve with warm, charred tortillas on the side.

- Heat olive oil in a pan with deep sides and saute onions and jalapeños 2 minutes. Add ground cumin and cayenne pepper and saute 2-3 minutes more. Add diced tomatoes with juice, black beans, and diced green chilies to the pan and let cook at very low simmer for 15-20 minutes, or until the mixture is slightly thickened.
- Using the back of a spoon, make an indentation in the mixture, and crack an egg into the little pocket. Repeat around the pan with all eggs. Spoon the rest of the mixture around eggs, avoiding the yolk.
- Place skillet (ovenproof or cover handle with tin foil) in oven for about 5 minutes, or until the eggs are starting to look set but are still fairly wet looking. Remove and change oven to broil (Be careful not to burn yourself!)

- Cut bell peppers in half through the stem end. Remove ribs and seeds. Place the peppers in the pan cut-side up and sprinkle with 1/8 teaspoon each salt and pepper.
