ADOBO-RUBBED CHICKEN

2 tablespoons vegetable oil
1 small white onion, chopped
2 cloves garlic, roughly chopped
10 guajillo chiles, stemmed, seeded, deveined and cut into 2-inch pieces
1 cup chicken broth, preferably organic
Salt and freshly ground black pepper
1 (3 1/2 to 4-pound) whole chicken, backbone removed and flattened slightly
12 corn tortillas, warmed
Lime wedges, for serving

Steps:

  • Preheat the oven to 375 degrees F.
  • Heat the oil in heavy, medium saucepan over medium heat. Add the onions and cook until translucent, about 5 minutes. Add the garlic and cook for 3 minutes longer. Add the chiles and cook until darkened on both sides, about 1 minute. Add the broth and bring to boil. Continue boiling until the chiles are soft, about 5 minutes. Transfer the mixture to blender and puree. Season with salt and pepper.
  • Preheat a grill or large grill pan over medium-high heat.
  • Meanwhile, rub the adobo mixture all over the chicken, using about half of the adobo. Sear the chicken, breast-side down, until grill marks appear, about 6 minutes. Brush some adobo sauce on the other side of the chicken. Turn the chicken breast-side up, place in a baking pan and transfer to the oven. Cook the chicken, basting with the extra adobo sauce every 20 minutes, until a meat thermometer registers an inner temperature of 165 degrees F, about 40 minutes. Serve with corn tortillas to prepare tacos and lime wedges.

1 cup white vinegar
1/4 cup soy sauce
1 whole garlic bulb, smashed and peeled
2 teaspoons kosher salt
1 teaspoon coarsely ground pepper
1 bay leaf
2 pounds bone-in chicken thighs or drumsticks
1 tablespoon canola oil
1 cup water

Steps:

  • In a shallow dish, combine the first 6 ingredients. Add chicken; refrigerate, covered, 20-30 minutes. Drain, reserving marinade. Pat chicken dry., In a large skillet, heat oil over medium-high heat; brown chicken. Stir in water and reserved marinade. Bring to a boil. Reduce heat; simmer, uncovered, until chicken is no longer pink and sauce is slightly reduced, 20-25 minutes. Discard bay leaf. If desired, serve chicken with cooking sauce.

Made this recipe years ago and have modified it somewhat from the original. Once you make it, it will be your favorite. Best when the chicken is marinated 2 days but can be done when marinated for 24 hours. For the chicken breast, I normally buy 1/2 a breast per person. If the breast are large, I cut each breast in half.

4 boneless chicken breasts
2 tablespoons fresh lemon juice
9 ounces orange juice (or mixture of citrus juices)
1/2 teaspoon ground cinnamon
2 tablespoons adobo seasoning (Chef Marino)
3 garlic cloves (minced)
1 teaspoon dried basil leaves
2 tablespoons achiote paste
2 tablespoons red wine vinegar
1/2 teaspoon black pepper
1/4 cup canola oil

Steps:

  • Combine all ingredients except Chicken Breast. Thoroughly mix the.
  • ingredient with a blender. Pour mixture over chicken. Cover and refrigerate 4 hours or overnight. Remove chicken from marinade. Reserve some of the marinade for brushing. Cover and grill chicken 5 to 6 inches from medium-hot coals for 5 to 8 minutes. Turn chicken. Cover and grill, turning and brushing with marinade 2 or 3 times, until done, about 10 minutes longer.

This recipe is for the Filipino Adobo, as opposed to the Mexican Adobo sauce. While the recipe calls for chicken, an equal amount of beef, pork or combination of the three works perfectly.

2 1/2 lbs chicken pieces
3 -4 cloves garlic, minced (I prefer to smash the cloves, which is more traditional)
1/3 cup white vinegar
1/4 teaspoon black peppercorns, cracked
1 bay leaf
1/3 cup soy sauce
3/4 teaspoon salt (or to taste (I leave this out))
to taste vegetable oil (for sauteing) or to taste vegetable oil cooking spray (for sauteing)
3 -4 medium potatoes, cut in 1 in. pieces (optional)
to taste water (to cover)

Steps:

  • Combine all ingredients in a deep glass or stainless steel sauce pan.
  • Bring to a boil over medium heat, then reduce heat to medium low.
  • Cover and simmer for about 30 minutes or until the meat is very tender.
  • Gently turn the meat occasionally during the course of cooking.
  • Remove the meat from the sauce and pan-fry in a little oil until browned on all sides.
  • Transfer to a serving platter or bowl and cover with sauce. Serve with warm steamed rice.
  • While the recipe says to saute the meat after it's cooked, I usually brown the meat before adding the remainder of the incredients. I have no idea what difference this makes, if any.

This is a very tasty and easy-to-make Filipino chicken dish made with soy sauce, garlic, and vinegar. I can just as easily double or triple the chicken in this recipe to serve guests at a party. Serve over rice with just a little of the sauce (not too much).

1 ½ cups water
¾ cup vinegar
3 tablespoons honey
1 ½ tablespoons minced garlic
3 bay leaves

3 pounds skinless, boneless chicken thighs

Steps:

  • Preheat an outdoor grill for high heat, and lightly oil grate.
  • In a large pot, mix soy sauce, water, vinegar, honey, garlic, bay leaves, and pepper. Bring the mixture to a boil, and place the chicken into the pot. Reduce heat, cover, and cook 35 to 40 minutes.
  • Remove chicken, drain on paper towels, and set aside. Discard bay leaves. Return the mixture to a boil, and cook until reduced to about 1 1/2 cups.
  • Place chicken on the prepared grill, about 5 minutes on each side, until browned and crisp. Serve with the remaining soy sauce mixture.

2 tablespoons vinegar
3 garlics, crushed
1 cup water
¼ cup cooking oil
1 tablespoon white sugar
salt, to taste
whole peppercorn

Steps:

  • In a container or a plastic food bag, combine soy sauce and garlic then marinade the chicken for 30 minutes.
  • Place a medium pan on medium heat and add oil, once the oil is hot put the marinated chicken and brown (about five minutes).
  • Pour in the remaining marinade and add water, then bring to a boil.
  • Add the dried bay leaves and whole peppercorn. Simmer for 30 minutes or until the chicken is tender.
  • Add the vinegar, stir and simmer for 10 more minutes.
  • Add the sugar, salt, and stir. Then remove from heat.
  • Enjoy!
