SPICY CURTIDO (PICKLED CABBAGE SLAW)
Curtido is a lightly pickled cabbage slaw common in Central America. Using a half jalapeno gives it some real zip but you can always dial back on it if you want. (Note: these instructions are not meant for long term canning.)

Steps:
- Thinly slice the 1/2 head of cabbage, 1/2 onion and 1/2 jalapeno. Grate the carrot.
- Combine the remaining ingredients in a bowl: 1 cup vinegar, 1.5 cups water, 1 teaspoon Mexican oregano, freshly cracked black pepper, 2 teaspoons salt (Kosher or sea salt).
- Add the liquid mixture to the veggies and combine well. Crush the cabbage a bit so that it will fit into the jars.
- Fill two pint-sized Mason jars with the veggies and top with the brine.
- Seal well and let pickle overnight in the fridge.

MEXICAN LASAGNA
My whole family loves this beefy lasagna flavored with taco seasoning. Even my picky five-year-old will eat it. Serve with shredded lettuce, fresh sliced tomatoes, olives and sour cream.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet over medium-high heat, brown the ground beef, and stir in the taco seasoning and tomatoes. Line a 9x13-inch baking dish with half the tortillas. Spoon the beef mixture into the dish, then top with the remaining tortillas. Spread salsa over the tortillas and sprinkle with the cheese.
- Bake at 350 degrees F (175 degrees C) for 20 to 30 minutes, or until cheese is melted and bubbly.

PUPUSAS
From the streets of El Salvador, these are masa 'cakes' with a filling that is fried. The usual fillings are meat or cheese but there is no reason why beans etc could not be used.

Steps:
- Mix the masa harina, water into a dough which is soft but not sticky. Be prepared to add more flour if necessary. If it is too dry, add more water.
- To make a 3 inch round pupusa, take about half a cup of dough and roll it into a ball. flatten with your hand.
- Put the filling in the centre [in this case, cheese, cilantro, salt and pepper].
- Work the edges up over the filling and again form a ball, completely enclosing the filling.
- Flatten each ball to about 1/4 inch or less and cook the pupusas on a hot, lightly oiled griddle for about 3 minutes per side, or until both sides are lightly browned.
- Serve warm.

Steps:
- Place the cabbage in boiling water for no more than one minute. Discard the water.
- Put the cabbage in a large bowl and add grated carrots, sliced onion, cayenne, oregano, olive oil, salt, brown sugar, vinegar, and water.
- Let chill in refrigerator at least two hours before serving.

In a small saucepan, combine vinegar, salt, and sugar a cook over medium heat, stirring, until salt and sugar are just dissolved. Pour brine over vegetables and toss to combine. - Sautee onions, garlic and green pepper in oil until tender.
- Add tomatoes (drained), salsa and cumin, bring to a boil.
- Simmer for two minutes.
- Drain and rinse beans and add to others. If you are using, add ground beef here.
- In a 9X13 pan, layer 1/3 of the bean mixture, then tortillas then 1/2 of the cheese.
- Repeat with 1/3 of the beans then tortillas then the rest of the beans and put the remaining cheese on top.
- Bake in a 350 degree oven for 35 minutes and serve with sour cream.
- Option: Add ground cooked ground beef to the bean mixture for non-vegetarian version.

Steps:
- Mix the cabbage with the onion and carrots in a heatproof bowl. Heat the vinegar, sugar and 1 tsp salt in a pan over a low heat until dissolved, then pour over the vegetables and mix well.
- Put the slaw in the fridge for at least 30 mins or until ready to serve. Just before serving, stir through the coriander leaves and season well, to taste.

Steps:
- Boil lasagna noodles according to package directions. Drain and set aside.
- Combine cottage cheese and egg in a small bowl, and stir to mix well. Set aside.
- Place the ground beef in a large nonstick skillet over medium heat.
- Cook, stirring to crumble, until the meat is no longer pink.
- Add the tomatoes, tomato paste, beans, chiles, and chili powder, and stir to mix well.
- Cook, uncovered, stirring frequently, for about 10 minutes, or until the mixture is thick.
- Remove the skillet from the heat and set aside.
- Coat a 13x9 inch pan with cooking spray, and line the bottom of the pan with one layer of lasagna noodles.
- Spread half of the meat mixture over the noodles, dot with half the cottage cheese mixture, and top with half the shredded cheese.
- Repeat the layers using the remaining ingredients.
- Cover the pan with foil, and bake at 350*F for 25 minutes.
- Remove the foil, and bake for 5 minutes longer, or until heated through and the cheese is melted and bubbly.
- Remove the pan from the over, and let sit for 10 minutes before cutting into squares and serving.

- Place cabbage in a fine mesh strainer. Very slowly pour boiling water over the cabbage. Rinse with cold water. Drain well, pressing out as much water as possible.
- Add cabbage to large bowl. Add carrot, onion, jalapeno, oregano, and vinegar and toss well to combine. I like to put it all in a bowl with a lid and shake it.
- Curtido tastes best after it has marinated for several hours or days, but you can enjoy it fresh if you’d like.
