MEXICAN SP(ICED) CHOCOLATE SORBET

A lot of people have ice cream makers collecting dust in their basement. Go ahead and get it out. You know you want to. Cook time is chill and freeze time.

Number Of Ingredients 5

1 cup sugar (more if you like)
3/4 cup cocoa (Hershey's Dark is good)
2 cups water for low-fat sorbet (or milk (skim, 1% or 2%, your choice)
2 ounces dark chocolate (can double if you like) or 2 ounces semisweet chocolate, chopped (can double if you like)
1 pinch cayenne (or more, entirely optional but is a nice surprise in a frozen dish)

Steps:

  • Combine the sugar and cocoa in a saucepan to get rid of lumps. Stir in 2 cups of water or milk and put it over medium-high heat. (Feel free to make part of this coffee if you like ( *whistles innocently*)
  • Bring to a simmer and cook for 2 minutes. Take off heat and stir in the chocolate. Stir until it's melted.
  • Let the mixture cool, and then refrigerate until cold.
  • Pour into ice cream maker and freeze according to manufacturer's directions. The one I used was so easy: pour in, turn on, wait for magic to happen.
  • Store in freezer for extra firmness.

These ingredients are traditionally found in Mexican cuisine, and when combined in the form of a dessert, the result is out-of-this-world good! The flavor profile of our Mexican chocolate cookies is rich, warming and simply irresistible. Try adding our cayenne chocolate cookies to your seasonal cookie tray, or have fun experimenting with a truly exciting new recipe. Remember, no whisk, no reward!

1 1/4 cups Gold Medal™ All-Purpose Flour
1/4 cup unsweetened baking cocoa
1 teaspoon ground cinnamon
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon ground red pepper (cayenne)
1/2 cup butter, cut into pieces
1 cup semisweet chocolate chips
3/4 cup granulated sugar
2 eggs
2 teaspoons vanilla
3 tablespoons Demerara (raw) sugar

Steps:

  • Heat oven to 350°F. In small bowl, mix flour, cocoa, cinnamon, baking powder, salt and red pepper; set aside.
  • In 2-quart saucepan, heat butter and chocolate chips over low heat, stirring occasionally, until melted. Remove from heat; stir in granulated sugar. Pour into large bowl. Beat in eggs with spoon one at a time until blended. Beat in vanilla. Stir in flour mixture until well blended. Cover and refrigerate 30 minutes.
  • Shape dough into 36 (1 1/4 -inch) balls. Lightly butter hands if dough is sticky when shaping into balls. Place 2 inches apart on ungreased cookie sheets; flatten slightly. Sprinkle about 1/4 teaspoon of Demerara sugar over top of each cookie.
  • Bake 8 to 10 minutes or until edges are set. Cool 2 minutes; remove from cookie sheets to cooling rack. Cool completely, at least 20 minutes. Store covered in airtight container.

  • Cook chiles and canela sticks in a large skillet over medium, turning occasionally, until lightly toasted and fragrant, about 4 minutes. Transfer chiles to a spice grinder; process until very finely ground, about 30 seconds. Reserve 3/4 teaspoon ground chiles for almonds; set remaining ground chiles and canela sticks aside.
  • Preheat oven to 350°F. Whisk together brown sugar, egg white, ground canela, and reserved 3/4 teaspoon ground chiles in a large bowl until well combined. Stir in almonds. Transfer mixture to a parchment paper–lined baking sheet, and spread into a single layer. Sprinkle with flaky sea salt. Bake in preheated oven until almonds are dry and toasted, 15 to 20 minutes, stirring once after 10 minutes. Let almonds cool completely; roughly chop, and set aside.
