SPARKLING CHERRY LIME SODA

Steps:

• Add the sugar, water and 1/4 cup of the lime juice to a small saucepan. Bring to a boil, stirring until the sugar dissolves. Remove from heat and let cool.
• Add a few ice cubes to two chilled highball glasses. To each glass, add 2 ounces of the lime simple syrup and 1 tablespoon of the remaining lime juice. Divide the grenadine between the glasses and top off with club soda.
• Garnish with a lime wheel and 1 or 2 maraschino cherries.

SPARKLING CHERRY LIME SODA

Steps:

• Add the sugar, lime juice and 3/4 cup water to a small saucepan and bring to a boil, stirring until the sugar dissolves. Add the green food coloring, remove from the heat and let cool.
• Into 2 chilled highball glasses, add to each glass: a few ice cubes and 2 ounces of the lime syrup. Divide the grenadine between the glasses, then top off each with club soda. Garnish with a lime wheel and maraschino cherries.

SPARKLING CHERRY JUICE

Steps:

• Place the cherries in a saucepan off the stove, pour the sugar over the top and let them sit for 2 hours. Add the water, and stir to mix the cherries, sugar and water together until the sugar dissolves.
• Bring the cherry mixture to a boil, reduce the heat and simmer for 15 minutes. Strain liquid into another pan, pressing cherries with a spoon to extract all the liquid, and discard the cherries. Simmer the liquid over low heat until it is syrupy and coats the back of a spoon. Remove from heat and let cool. Pour syrup in a jar and store in the refrigerator.
• To serve, place 1 to 2 tablespoons of syrup in each glass, fill glasses with chilled sparkling water and stir to mix.

CHERRY-LIME SPARKLER

Steps:

• Place the pitted cherries in a large mixing bowl. Add the sugar, lime juice and salt. Stir until the cherries are evenly coated. Set aside at room temperature for 1 hour to macerate the cherries.
• Drain the cherry mixture, collecting and reserving all the juice. Thread the macerated cherries amongst 8 cocktail skewers and set aside for garnish.
• Stir together the reserved cherry juice and seltzer in a small pitcher.
• Fill 8 highball glasses with ice cubes. Pour the cherry sparkler over the ice and garnish each glass with a skewer of cherries and a sprig of mint. Serve immediately.

SPARKLING CHERRY LEMONADE

Steps:

• Combine cherries, lemon juice, sugar, and water in a high-powered blender. Blend until fully incorporated and smooth, about 1 minute; let foam subside or spoon off.
• Pour mixture into a pitcher, and stir in lemon-lime soda. Serve over ice, and garnish with cherries and lemons, if desired.

• In a blender combine cherry juice, club soda, sweet and sour mix, and one container of cherry sorbet. Blend till smooth. Before serving, scoop remaining sorbet into glasses or punch bowl.
