3 cups semisweet chocolate chips (18 oz)
2 1/2 cups miniature marshmallows
1 can (14 oz) sweetened condensed milk (not evaporated)
1 teaspoon vanilla
3/4 cup broken pretzel sticks
1/2 teaspoon coarse sea salt
1/3 cup chopped salted cocktail peanuts

Steps:

  • Line 9-inch square pan with foil, extending foil 1 inch over 2 opposite sides of pan; spray foil with cooking spray.
  • In 8-cup microwavable measuring cup or large microwavable bowl, microwave chocolate chips, 2 cups of the marshmallows and the condensed milk uncovered on High 3 to 5 minutes, stirring every minute, until chips and marshmallows are softened and can be stirred smooth.
  • Stir in vanilla, pretzels and remaining 1/2 cup marshmallows. Immediately pour into pan. Press salt into fudge; sprinkle with additional peanuts. Refrigerate 2 hours or until firm.
  • Use foil to lift fudge from pan. Cut into 1 1/2-inch squares. Store in airtight container at room temperature.

1 (24 ounce) bag semisweet chocolate chips
1 (1 ounce) square unsweetened chocolate
2 teaspoons vanilla extract

Steps:

  • Line a 10x13-inch baking dish with parchment paper.
  • Mix sweetened condensed milk, chocolate chips, and unsweetened chocolate together in a microwave-safe bowl. Cook in the microwave on high for 30 seconds; stir. Continue cooking in microwave, stirring every 30 seconds, until chocolate is melted and smooth, 1 to 2 minutes. Stir.

This is a recipe I used to make many years ago but lost. I found it in an Annette Human cookbook - but in a microwave version. It's a delicious toffee apple pie. Annette calls it "Babsie Bloemfontein's apple tart". She suggests serving it with whipped cream. Although I'm not too keen on the appearance of microwave oven cakes, this one works well because of the fudge sauce.

75 g butter or 75 g margarine
200 g white sugar
3 eggs
140 g cake flour
7 ml baking powder
1 pinch salt
50 ml milk
1 (765 g) can unsweetened pie apples
ground cinnamon
250 ml cream
200 g soft brown sugar

Steps:

  • Spray a 2 l round dish (26cm in diamter) with non stick cooking spray.
  • Microwave the butter or margarine in a deep 2l dish for about 30 seconds on 100% power or until just melted. Add the white sugar and eggs and beat very well to dissolve all the sugar.
  • Sift the cake flour, baking powder and salt together over the egg mixture and fold it inches Stir in the milk.
  • Pour the batter into a pie dish and spread the apple pieces evenly over the batter.
  • Place the pie dish on an inverted saucer in the microwave oven. Microwave the tart, uncovered, for 12 minutes on 50% power, turning the dish regularly if the oven has no turntable. Sift a little ground cinnamon over the half-cooked tart. Microwave it, uncovered, (still on the upturned saucer), for another 10 - 12 minutes on 100% power, or until done, again turning the dish at regular intervals if there is no turntable.
  • Microwave the cream and soft brown sugar in a deep 2l dish, uncovered, for 10 minutes on 100% power, stirring frequently until the sugar has melted.
  • Spoon the hot sauce over the tart and allow it to cool to lukewarm or cold before serving.

2 tablespoons all-purpose flour
½ teaspoon salt
½ cup butter, melted
½ cup milk
1 (1 ounce) square unsweetened chocolate
cooking spray
½ cup chopped walnuts
2 tablespoons butter
1 teaspoon vanilla

Steps:

  • Mix sugar, flour, and salt together in a 2-quart glass mixing bowl. Stir in 1/2 cup melted butter and milk, then add chocolate.
  • Microwave on high power for 5 minutes. Remove from the microwave and stir until chocolate is melted and thoroughly mixed in.
  • Return to the microwave and cook to the soft ball stage or 245 degrees F (118 degrees C), about 4 minutes.
  • Meanwhile spray an 8x11-inch pan with cooking spray.
  • Quickly add walnuts, 2 tablespoons butter, and vanilla; stir until mixture begins to lose its sheen. Pour into the prepared pan and allow to cool, about 1 hour, before cutting into pieces.
