MIKE'S GREAT RED BEANS AND RICE
This is probably the best Red Beans and Rice you will ever have. Everytime i make it my family just devours. It's really great with hot sauce and corn bread.

Steps:
- Brown hamburger and onions.
- Pour in chicken broth.
- Then mix in the red kidney beans, kielbasa, garlic, Cajun seasoning and cayenne pepper.
- Bring to boil and let simmer for 60 minutes.
- Cook one cup of rice and when done mix into pot.
- Mix the flour and cold water to make a slurry and pour into pot to thicken sauce.
- Serve and enjoy.

- In a skillet cook sliced sausage for about 2 minutes.
- Add onion, garlic, and bell pepper, and saute till veggies are tender.
- Add beans and tomatoes with thier juice.
- Season with thyme, caynne, and salt and pepper to taste.
- Serve over rice.

- In a rice cooker, combine rice, water, spices, bell pepper and onion. Start cooker.
- After 10 minutes, stir in ham. (If you have a bit of ham bone, throw that in too). Allow cooker to finish its cycle.

- In large skillet heat oil on medium heat. Add green peppers, onions and garlic. Cook until tender.
- Add salt, pepper, bayleaf, diced tomatoes and beans. Simmer 20 minutes on low.
- Remove bay leaf, mash about 1/2 of the beans and tomatoes.
- Add rice, stir until combined.
- Sprinkle on cheddar cheese, cover and allow to cook on low until cheese is melted.

RED BEANS & RICE WITH TVP
This is from Bob's Red Mill. I like to use TVP now and again, it has a good amount of protein and iron in it, and it's such a versatile product. This involves dried beans so plan ahead or sub tinned. This is also a no-fat recipe (zero oil). I halved the original recipe as it made a whole heck of a lot. Adjust the chili powder based on the type you are using. (Prep time doesn't include over night soaking).

Steps:
- Soak the beans in plenty of water overnight. Drain and rinse well.
- Cook the soaked beans in a large pot with the onion, garlic and boiling water.
- In a separate pot, cook the brown rice according to package directions.
- After beans have cooked 45 minutes, add TVP, chili powder and cumin. Continue cooking until beans are tender, about 20-30 more minutes.
- Most of the liquid should have cooked into the beans and TVP. Add salt to taste.
- Mix the cooked rice with the cooked beans, add a pinch of cayenne or hot sauce if desired.

EASY RED BEANS AND RICE
