I developed this recipe because of my love for eggnog and my dislike of the thought of drinking raw eggs. I spent quite a long time and much trial and error before being confident enough to finalize this recipe. Tastes just like the real thing! Enjoy!

5 cups milk, divided
½ cup white sugar
1 (3.4 ounce) package instant vanilla pudding mix
1 ½ teaspoons rum-flavored extract
¼ teaspoon ground nutmeg
¼ teaspoon ground allspice
¼ teaspoon ground ginger

Steps:

  • Blend 2 cups milk, sugar, pudding mix, rum-flavored extract, nutmeg, allspice, and ginger in a blender on medium-high speed until smooth; pour into a pitcher. Stir remaining 3 cups milk into mixture. Refrigerate eggnog until thickened, at least 1 hour. Stir well before serving.

3 cups milk, divided
3 cups half-and-half cream, divided
3 egg yolks
3/4 cup sugar
3 large ripe bananas
1/2 cup light rum
1/3 cup creme de cacao
1-1/2 teaspoons vanilla extract
Whipped cream and baking cocoa, optional

Steps:

  • In a large heavy saucepan, combine 1-1/2 cups milk, 1-1/2 cups cream, egg yolks and sugar. Cook and stir over medium-low heat until mixture reaches 160° and is thick enough to coat the back of a metal spoon., Place bananas in a food processor; cover and process until blended. Pour milk mixture into a pitcher; stir in the banana puree, rum, creme de cacao, vanilla, and remaining milk and cream. Cover and refrigerate for at least 3 hours before serving., Pour into chilled glasses. Garnish with whipped cream and sprinkle with cocoa if desired.

1/2 cup butter, softened
1-1/2 cups sugar
2 large eggs
1 cup mashed ripe bananas (about 2 medium)
1/4 cup eggnog
1 teaspoon vanilla extract
1-3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon ground nutmeg, divided
1/4 teaspoon salt
1/8 teaspoon baking soda

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in bananas, eggnog and vanilla. In another bowl, whisk flour, baking powder, 1/4 teaspoon nutmeg, salt and baking soda; gradually beat into banana mixture., Transfer to a greased 9x5-in. loaf pan; sprinkle with remaining nutmeg. Bake 50-60 minutes or until a toothpick inserted in center comes out clean. Cool in pan 10 minutes before removing to a wire rack to cool.

Truly the best vegan eggnog recipe I've ever had! This cashew free, dairy free, and egg free eggnog tastes identical to the Christmas classic nog and is super creamy, thick, sweet, and full of warming nutmeg!

2 cups oat milk*
2 tbsp sweetened condensed coconut milk or oat milk
1/4 cup coconut sugar or 2-4 tbsp of maple syrup (depending on desired sweetness)
1 tbsp arrowroot powder
2 tsp nutmeg
1 tsp cinnamon
2 tsp vanilla extract

Steps:

  • Measure out all ingredients.
  • In a large pot on the stove, whisk together all of the ingredients until combined. Vigorously whisk until there are not more clumps of arrowroot starch.
  • Then turn the stovetop heat on to medium-high, and heat the vegan eggnog until right before it boils. You should see a few bubbles appear at the top. Reduce the heat to low, and whisk until it thickens, about 3-4 minutes.
  • Remove the eggnog from the heat and allow the eggnog to cool for 5 minutes. Then carefully pour the eggnog into an airtight glass and store allow the mixture to cool until it's not warm anymore. Then you can place the eggnog safely in the fridge to chill for 1-2 hours.
  • Serve with or without alcohol and enjoy!
