3 cups milk
6 eggs
1 ½ cups flour
⅔ cup cocoa powder
7 tablespoons sugar
4 cups whipped cream
1 cup heavy cream
4 tablespoons sugar
6 oz chocolate
1 tablespoon butter
¼ cup powdered sugar, optional for topping

Steps:

  • Make the crepes by melting the butter and allowing it to brown slightly. Set aside.
  • In the same pot, warm the milk. Remove from heat.
  • In a bowl, whisk flour, cocoa powder, and sugar. Mix in eggs.
  • Gradually mix in butter and warm milk. Chill.
  • On a nonstick skillet over medium heat, pour ¼ cup (60 ml) of crepe batter, and tip the pan to cover the entire bottom surface. Cook until bottom surface of crepe begins to brown, then flip.
  • Cool crepe. Repeat until all of the crepe batter is used.
  • Stack crepes on top of each other, with whipped cream between each layer. Once assembled, trim edges for a cleaner look, if desired.
  • For the ganache, bring the heavy cream and sugar to a boil, and pour over chocolate and butter. Let cool.
  • Spread over the crepe cake.
  • Top with sifted powdered sugar (optional).
  • Enjoy!

1 cup flour
1 ½ cups milk
2 eggs
1 tablespoon butter, melted
2 tablespoons sugar
1 pinch salt
6 oz cream cheese, at room temperature
2 tablespoons sugar
1 teaspoon gelatin
1 ½ cups heavy cream
15 strawberries, sliced
2 kiwis, sliced
2 bananas, sliced
powdered sugar, for serving

Steps:

  • Whisk together eggs, sugar and salt.
  • Sift in flour and mix. Add melted butter and mix.
  • Then gradually add the milk until no clumps remain.
  • In a nonstick skillet over medium heat, pour ¼ cup (60 ml) of crepe batter, and tip the pan in a circular motion to cover the entire bottom surface. Cook until the bottom surface of crepe begins to brown, then flip.
  • Repeat until all of the crepe batter is used. Cool crepes.
  • Combine cream cheese and sugar and whisk. Add gelatin and whisk until smooth.
  • Add whipped cream and mix well.
  • Stack crepes on top of each other, with cream and fruits (strawberry, kiwi, banana) between each layer.
  • Wrap cake in plastic. Refrigerate for 4 hours.
  • Top with sifted powdered sugar (optional).

Entered for safe-keeping. From Melissa Winner, Gulfport, MS, as entered in Cuisinart Stand Mixer competition, and later entered on Food Network's Ultimate Recipe Showdown as Ruby Red Grapefruit Cake. I prefer a glaze such as this on my Bundt cakes, so no refrigeration is needed, although Paula Deen likes a cream cheese frosting on hers (see Recipe #324804). This can also be made as two 9-inch layers, which would work better with the cream cheese frosting. Ms. Winner recommends serving with dreamsicle ice cream and a sprig of mint.

2 cups white sugar

1 1/2 teaspoons baking soda
1/2 teaspoon kosher salt

1 cup canola oil
1 banana, smashed
1/2 cup ruby red grapefruit juice, freshly squeezed
1/2 cup orange juice, freshly squeezed
12 ounces sour cream
2 tablespoons orange zest
1 teaspoon grapefruit zest
1/4 cup grapefruit juice
2 cups confectioners' sugar
1 tablespoon orange zest
1 tablespoon grapefruit zest
1/4 cup pecans, finely chopped

Steps:

  • PREPARE BUNDT CAKE:.
  • Preheat oven to 350 degrees Fahrenheit. Spray a large Bundt pan or 10-inch tube pan with nonstick baking spray with flour like Baker's Joy, or use Recipe #78579.
  • Sift together flour, sugar, baking powder, baking soda and salt.
  • Then put mixture into a stand mixer add eggs, and mix until combined.
  • Then add oil; mix until blended.
  • Next add grapefruit juice, orange juice, and banana, and mix until smooth and creamy.
  • Add sour cream and zests; just mix until combined and smooth.
  • Put cake batter into the prepared pan and bake for about 35 to 45 minutes or until a toothpick inserted in the center comes out clean.
  • When done turn pan onto serving platter let stand about 15 minutes then poke small holes in top. I use a straw; be neat about it.
  • PREPARE GLAZE:.
  • Mix juice and sugar until combined. If it is too thick add more juice a tablespoon at a time.
  • Stir in zest and pecans.
  • Pour glaze on partially cooled cake.
  • Let cool about 1 hour and serve.

One thousand crepes may seem over the top, but there's no exaggeration when it comes to the luxurious taste and texture of this layered dessert. Inspired by the creations of pastry chef Emy Wada at her cake boutique, Lady M, here's a way to enjoy traditional French crepes by stacking about 20 of them between fluffy cream and light fruit curd to create an airy, elegant cake.

1 3/4 cups all-purpose flour
2 tablespoons granulated sugar
1/2 teaspoon baking powder
1/4 teaspoon kosher salt
3 large eggs
2 1/4 cups whole milk
1 teaspoon pure vanilla extract
Unsalted butter, for the pan
1/2 cup grapefruit juice
1 tablespoon freshly squeezed lemon juice
2 large eggs plus 1 large egg yolk
3/4 cup granulated sugar
4 tablespoons unsalted butter, cubed, at room temperature
2 cups heavy cream
1 cup confectioners' sugar
Candied oranges, for garnish, recipe follows
1 navel orange
1 cup granulated sugar

Steps:

  • For the crepes: In a large bowl, whisk together the flour, sugar, baking powder and salt. In a separate medium bowl, whisk together the eggs, milk and vanilla. Whisk the wet ingredients into the dry ingredients until fully incorporated.
  • Using an immersion blender, mix the batter until silky smooth and very thin, 2 to 3 minutes, to break up all egg proteins and fully blend the flour. (You may also use a regular blender.) Refrigerate the batter for at least 1 hour before use.
  • Heat a nonstick crepe pan over medium heat. Add a small bit of butter to grease the pan. Pour 1/4 cup of the batter into the center of the pan. Use a ladle or the back of a large spoon to spread the batter out as thinly as possible, using a circular motion.
  • Cook the crepe until air bubbles on the top are formed and starting to pop, and the bottom is light brown, about 1 minute. Flip the crepe with an offset spatula or pancake turner and allow to cook on second side until golden brown, 1 minute. Transfer the crepe to a plate or baking sheet to cool.
  • Continue this process with the rest of the batter. It may not be necessary to butter the pan every time, as long as the crepes continue to freely release. You should have about 18 crepes.
  • Allow the crepes to completely cool to room temperature.
  • For the filling: Bring the grapefruit and lemon juice to a simmer in a medium saucepan. Whisk the eggs, egg yolk and sugar together in a medium bowl. When the grapefruit juice begins to simmer, temper the egg mixture by adding a small amount of hot liquid to the eggs while constantly whisking. Add the warmed egg mixture back to the pot and continue to cook over medium heat, continuously whisking. When the mixture is thick enough to coat the back of a spoon, transfer to a medium bowl (strain through a fine-mesh strainer if necessary). Finish by whisking in the butter. Cool completely in the refrigerator.
  • Add the heavy cream and confectioners' sugar to the bowl of a stand mixer fitted with the whisk attachment and beat until soft peaks form.
  • Once the curd has completely cooled, fold about 1/4 of the whipped cream into it, then add all of the curd mixture to the bowl of remaining whipped cream and gently fold it in, taking care not to deflate the whipped cream. This will be your filling for the crepe cake.
  • One layer at a time, add a heaping scoop of grapefruit cream and spread out to the edges of the crepe. Top with another crepe and repeat process until the last layer of crepe is placed on top. Spread the remaining grapefruit cream on top and decorate with candied oranges.
  • Preheat the oven to 200 degrees F and line a baking sheet with a silicone mat. Slice the orange crosswise into very thin slices, about 1/8 inch thick. Bring the sugar and 1 cup water to a boil in a medium saucepan over medium-high heat. Add the orange slices, lower the heat to medium low and simmer for 15 minutes. Drain the orange slices and spread them out on the prepared baking sheet. Bake for 1 hour. Remove the orange slices from the pan and allow to cool and harden on a wire rack.
  • To create an ombre pattern of citrus slices, candy 2 slices from each type of citrus:
  • Meyer lemon, navel orange, tangerine, Cara Cara orange, ruby grapefruit and blood orange.

  • With a sharp paring knife, cut the stem and tip end off of the oranges and lemons, cutting through the pith (aka the white part) to expose the fruit on both ends. Perpendicular to the cut ends, make 4 evenly spaced slices all the way through the rind to divide the peel into quarters. Use your fingers to carefully peel the sections of rind and pith away from the fruit. On a cutting board, use the back of your knife to scrape some of the pith away from the rind (the less pith you leave, the sweeter the peel will be.) Then, slice the rind into strips. (I twisted some of my strips of peel to give them a curly shape!)
  • In a small pan over low heat, melt the butter and cook until lightly browned. Pour into a heatproof dish and allow to cool slightly.
  • In a medium bowl, whisk together the egg, egg yolks, cornstarch, sugar, and salt. Keep the whisk in the bowl and arrange the bowl on a slightly damp dish towel and set aside. (The damp towel will help keep the bowl from moving or sliding while you are whisking later.)
  • Chill the bowl and beater of a stand mixer in the freezer for 15 minutes. Add the heavy cream and sugar to the chilled bowl and whip to stiff peaks with the chilled beater. Store the whipped cream, covered, in the refrigerator for up to 12 hours before using.
