I come from a huge family, and it seems there is always a potluck occasion. No matter what time of year, this hearty, crowd-pleasing Italian casserole is always a hit. It's easy to make and serve. -Rita Goshaw, South Milwaukee, Wisconsin

1-1/2 pounds bulk Italian sausage
1-1/2 pounds ground beef
1 cup chopped onion
1 cup chopped green pepper
2 cans (15 ounces each) tomato sauce
2 cans (6 ounces each) tomato paste
1/2 cup water
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon salt
1 teaspoon pepper
1/8 teaspoon garlic powder
2 cans (8-3/4 ounces each) whole kernel corn, drained
2 cans (2-1/4 ounces each) sliced ripe olives, drained
1 package (16 ounces) wide noodles, cooked and drained
8 ounces cheddar cheese, cut into strips

Steps:

  • In a Dutch oven over medium heat, cook sausage, beef, onion and green pepper until meat is no longer pink; drain. Add the tomato sauce, tomato paste, water and seasonings; bring to a boil. Reduce heat; cover and simmer for 15 minutes. Add corn and olives. Cover and simmer for 5 minutes. Stir in noodles. , Pour into two greased 13-in. x 9-in. baking dishes. Top with cheese. Cover and bake at 350° for 25-30 minutes or until heated through.

1/2 lb ground beef
1/2 cup chopped onion
1/2 cup chopped green pepper
2 tablespoons minced garlic
1 (15 ounce) can tomato sauce
1 (6 ounce) can tomato paste
1/4 cup water
1 teaspoon basil
1 teaspoon oregano
1 teaspoon garlic powder
1 teaspoon salt and pepper
8 ounces wide egg noodles, cooked and drained
4 ounces shredded cheddar cheese
2 ounces shredded mozzarella cheese

Steps:

  • In dutch oven, saute sausage, beef, onion, green pepper, and garlic until meats are no longer pink; drain.
  • Add tomato sauce, paste, water, and seasonings.
  • Bring to a boil, reduce heat and simmer for 5 minutes.
  • Stir in noodles.
  • Put in 13x9 pan and sprinkle with cheeses.
  • Bake at 350* for 30 minutes or until cheese is browned and bubbly.

1 Italian sausage link, casing removed
1 small onion, sliced
1 small zucchini, sliced
Dash pepper
1 bacon strip, cooked and crumbled
1/4 cup shredded Parmesan cheese
1 cup spaghetti sauce, divided
2 tablespoons chopped sweet red pepper
1/2 cup shredded part-skim mozzarella cheese
12 slices pepperoni
Dash each dried oregano, thyme and basil

Steps:

  • Cook spaghetti according to package directions. Meanwhile, crumble sausage into a small skillet; add onion. Cook over medium heat until meat is no longer pink; drain., Drain spaghetti. Arrange zucchini in a shallow 1-qt. baking dish coated with cooking spray; sprinkle with pepper. Layer with bacon, Parmesan cheese, 1/2 cup spaghetti sauce, spaghetti, remaining sauce, red pepper, sausage mixture, mozzarella cheese and pepperoni. , Sprinkle with herbs. Bake, uncovered, at 350° for 30-35 minutes or until vegetables are tender.

1 (12 ounce) package jumbo pasta shells
8 ounces ricotta cheese (or cottage cheese)
6 tablespoons butter or 6 tablespoons margarine, melted
2 (8 ounce) cans tomato sauce
1 cup mushroom, sliced
1 green pepper, diced
1 cup pepperoni, thinly sliced
2 (6 ounce) packages mozzarella cheese, presliced
1/2 lb ground beef (or turkey)
dried oregano
black pepper

Steps:

  • Cook shells as directed on package. Drain.
  • Sauté ground beef. Mix cottage or ricotta cheese, butter, and tomato sauce until well blended.
  • Stir in mushrooms and green pepper, blending well. Add oregano and pepper.
  • Place layer of cooked shells in bottom of lightly buttered casserole. Cover with layer of cottage cheese mixture. Top with half of the pepperoni. Place 2 slices Mozzarella cheese on top. Crumble 1/3 ground beef evenly over cheese.
  • Repeat layers until all ingredients are used, ending with Mozzarella cheese on top, ringed with pepperoni slices.
  • Bake at 350 degrees F for 45 minutes until hot and bubbly.
