MILLET PIE
This is the best meatless meat pie you'll ever have! Millet and oats are the base, Christmas meat pie spices are the secret! Even non-vegetarians will be fooled! This makes a pretty big pie, it is possible to make two with this much filling. Serve with ketchup, fruit, onion chutney, or anything that means 'Holidays' to you!

Steps:
- Bring 1 cup water and oats to a boil in a saucepan; reduce heat and simmer until water is absorbed, 10 minutes. Bring 1 1/2 cups water and millet to a boil in a separate saucepan; reduce heat and simmer until water is absorbed and millet is tender, 20 minutes.
- Preheat oven to 350 degrees F (175 degrees C).
- Combine oats, millet, onion, carrot, celery, potato, safflower oil, tamari, allspice, nutmeg, cloves, salt, and black pepper together in a large bowl; mix well.
- Press 1 pie crust pastry into a 9-inch pie pan. Pour filling into pie crust. Top with second pie crust pastry; pinch edges together. Pierce a few areas of the top crust to allow pie to ventilate during baking. Brush top crust with beaten egg.
- Bake pie in the preheated oven until crust is golden brown, about 40 minutes.

CHEDDAR-BROCCOLI MILLET PIE
This recipe is from Mother Earth News Dec 2008/Jan 2009, part of an article about cooking with millet. Next time I try it I'm going to chop up a smoked sausage and add that. I've called for a 3 1/2 quart sauce pan, the original called for 2 1/2 which I found too small. It did not specify how the onions should be cut up, I diced them. My cooking time is only for the baking, I did not put in the 30 minutes sauteing/boiling time, and my prep time is only a guess.

Steps:
- Heat a 3 1/2 quart heavy sauce pan over medium-high heat for a few.
- seconds, then add the oil.
- Add the onions and saute, lowering the heat as they soften.
- Cook until golden and sweet.
- Add the millet and stir, cooking until the grains are hot to the touch and fragrant.
- Add the stock, salt, thyme and carrot, and bring to a boil.
- Cover tightly and lower heat to the lowest setting.
- Cook for 30 minutes.
- Quickly add broccoli to the pan.
- Re-cover again and let stand for 5 minutes.
- Uncover, fluff and let cool.
- Preheat oven to 400 degrees.
- In a large bowl, stir the millet with the cheese and eggs and scrape into a greased pie pan.
- Bake for 45 minutes, until golden on top and firm to the touch.
- Slice and serve warm.

MILLET PATTIES
A flavorful combination with millet, a healthy whole grain of African/Asian origin. I used a rice cooker to prep the millet which was easy as pie. The vegetables were chopped in a food processor. [3 1/2 cups of millet is the amount resulting from cooking my 3/4 cup of raw millet as listed.]

Steps:
- Place 3/4 cup raw millet in a saucepan with 2 cups of water (or use a rice cooker).
- Simmer until water is absorbed, fluff and allow to cool.
- Add all ingredients and 1/2 cup breadcrumbs to the millet and mix.
- Form into patties and press into remaining breadcrumbs to coat.
- Place on parchment paper or Silpat on a baking sheet.
- Cook in 400 degree oven for 20-25 minutes until crisp.
- Serve with cashew gravy (recipe #505153).
