These soft and tender biscuits are made with cultured butter, which is made with cream that is cultured, or fermented, before it is churned. Cultured butter can be made at home, but it is becoming easier to find in supermarkets. It's worth seeking out. Any true butter fanatic should try it at least once.

335 grams all-purpose flour (2 2/3 cups)
75 grams cake flour (3/4 cup)
10 grams baking soda (2 teaspoons)
4 grams baking powder (1 teaspoon)
6 grams fine sea salt (2 teaspoons)
15 grams granulated sugar (1 1/2 tablespoons)
2 sticks salted, cultured butter, chilled and cubed (1 cup)
1 1/2 cups buttermilk, chilled
1 large egg
1 tablespoon milk

Steps:

  • Heat oven to 425 degrees. Line a baking sheet with parchment paper.
  • In a large bowl, whisk together flours, baking powder, baking soda, salt and sugar.
  • Using a pastry cutter or fork, quickly cut butter into flour mixture until it forms pea-size crumbs and is uniformly mixed. (For flaky biscuits, you want the butter to remain cold.) Make a well in center of mixture and pour in buttermilk. Stir together until it just forms a moist, slightly tacky dough.
  • Turn dough out onto a lightly floured surface. Knead 2 or 3 times, then pat out into a 3/4-inch-thick round. Using a 2-inch round cutter, cut the biscuits. Do not twist the cutter; doing so prevents proper rising. To prevent sticking, dip the cutter lightly in flour between biscuits. Also, do not reroll scraps, but pat them together and cut into rounds. Transfer biscuits to baking sheet.
  • Whisk egg and milk together with a fork. Generously brush egg wash on top of each biscuit. Bake until brown, 15 minutes. Serve hot.

This deceptively simple recipe can come out a million different ways with some very minor variations on the ingredients and amounts. This one's my favorite - flaky, but not dry; chewy, but not tough; crisp in just the right spots.

2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
¼ teaspoon baking soda
7 tablespoons unsalted butter, chilled in freezer and cut into thin slices
¾ cup cold buttermilk
2 tablespoons buttermilk for brushing

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Line a baking sheet with a silicone baking mat or parchment paper.
  • Whisk flour, baking powder, salt, and baking soda together in a large bowl.
  • Cut butter into flour mixture with a pastry blender until the mixture resembles coarse crumbs, about 5 minutes.
  • Make a well in the center of butter and flour mixture. Pour in 3/4 cup buttermilk; stir until just combined.
  • Turn dough onto a floured work surface, pat together into a rectangle.
  • Fold the rectangle in thirds. Turn dough a half turn, gather any crumbs, and flatten back into a rectangle. Repeat twice more, folding and pressing dough a total of three times.
  • Roll dough on a floured surface to about 1/2 inch thick.
  • Cut out 12 biscuits using a 2 1/2-inch round biscuit cutter.
  • Transfer biscuits to the prepared baking sheet. Press an indent into the top of each biscuit with your thumb.
  • Brush the tops of biscuits with 2 tablespoons buttermilk.
  • Bake in the preheated oven until browned, about 15 minutes.

1 cup buttermilk, chilled

Steps:

  • Heat the oven to 425 degrees. Line a rimmed baking sheet with parchment.
  • In a bowl, whisk together flours, baking powder, sugar and salt. Using a pastry cutter or fork, quickly cut in 8 tablespoons butter until it forms pea-size crumbs and is uniformly mixed it (for flaky biscuits you want the butter to remain cold).   • Turn dough out onto a lightly floured surface. Knead 2 or 3 times, then pat out into a 3/4-inch-thick round. Using a 2-inch round cutter, cut the biscuits. Twisting the cutter prevents proper rising; to prevent sticking, dip the cutter lightly in flour between biscuits. Do not re-roll the scraps, but pat them together and cut into rounds. Transfer biscuits to the baking sheet.
  • Melt remaining 1 tablespoon butter. Brush butter lightly over the tops of biscuits. Bake until puffed and golden, about 15 to 20 minutes. Cool 5 minutes before serving.

2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon sugar
1 teaspoon fine salt
7 tablespoons cold unsalted butter, sliced
3/4 cup buttermilk, plus more, for brushing

Steps:

  • Preheat the oven to 450 degrees. Line a baking sheet with parchment.
  • Whisk the flour, baking powder, baking soda, sugar and salt together in a medium bowl. Rub 2 tablespoons of the cold butter into the flour with your fingertips until completely absorbed. Work the remaining 5 tablespoons of cold butter into the flour with your fingertips until pea-sized bits of butter remain. Use a rubber spatula to stir the buttermilk into the flour until the mixture comes together into a shaggy dough.
  • Dust a cutting board or work surface with flour and turn the dough out onto it. Pat the dough into a 1/2-inch thick rectangle. Fold dough in thirds, like a letter, and then pat into a 3/4-inch thick rectangle. Cut biscuits out using a 2 1/2-inch round biscuit cutter and put on the prepared baking sheet. Press together the remaining scraps of dough and cut out more biscuits. Brush the biscuit tops with buttermilk.
  • Bake until the tops are lightly browned, about 15 minutes. Cool on the pan at least 5 minutes. Serve warm or at room temperature.

1 tablespoon sugar
2 tablespoons baking powder
1 teaspoon salt
¾ cup cold or frozen butter
1 large egg
1 cup cold buttermilk

Steps:

  • Preheat the oven to 425 degrees F and line a baking sheet with parchment paper or a baking mat.
  • In a large bowl, combine the flour, sugar, baking powder, and salt. Whisk together to combine well.
  • Use a cheese grater to grate the butter into the flour mixture. Then use a pastry cutter or a fork to combine the butter and flour mixture well (you can use a fork for the whole process but using a cheese grater first works super well - I recommend it). The goal is to have pea-sized pieces of butter mixed into your flour mixture.
  • Make a well in the center of the flour mixture and add the egg and buttermilk. Use a fork to whisk the two together and slowly bring in the flour mixture.
  • Stir until the biscuits just come together, taking care not to over mix.
  • Turn the dough onto a lightly floured surface and finish combining by lightly kneading the dough together.
  • Roll the dough into a 2-inch-thick slab. Use a biscuit cutter to cut out as many biscuits as you can and place them on the prepared sheet, 1 inch apart.
  • Re-roll the dough and cut more biscuits until you have used all of the dough, adding a bit of flour to your work surface and rolling pin as needed. You should end up with 9-12 biscuits.
  • Bake the biscuits for 15-18 minutes until the tops are very golden brown.
  • Remove from the oven and serve right away.

2 medium baked sweet potatoes, scooped and chilled *about 2 cups
2 c self rising flour
1/2 - 2/3 c buttermilk
1/4 c lard, chilled

Steps:

  • 1. Preheat oven to 350*F. Prick sweet potatoes with fork and microwave on high 8-10 minutes or untill tender. Remove and cool a little. Cut in half, and with a spoon ,scoop out flesh. Chunk it up a little, but do not mash. You want good size chunks. Cool in fridge or freezer til cold. Also chill lard.
  • 2. While potatoes are cooling ... In large bowl sift flour and cut in lard. (you want pea size pieces) Add in sweet potatoes and stir lightly with spatula.
  • 3. Add buttermilk , a little at a time and fold together to make a soft dough.
  • 4. Turn out onto lightly floured counter and knead about 6 or 7 times. Do not over knead . Roll out with rolling pin to about 1/2" thickness.
  • 5. Cut out with a 2 1/4" cookie or biscuit cutter and place on sprayed baking sheet, not touching.
  • 6. Bake 20 - 30 minutes. Serve warm with butter.

2 c self rising flour
1/3 c lard, chilled
2/3 - 3/4 c buttermilk

Steps:

  • 1. Preheat oven to 375 degrees. Measure flour then sift into large bowl.
  • 2. cut lard into flour or flour hands and roll lard into little snakes and pinch off pea size pieces.
  • 3. Make a well in center of flour and add in buttermilk, starting with 2/3 cup and work flour into center. Add more buttermilk alittle at a time if needed.
  • 4. Turn out onto floured table and knead gently 4 or 5 times. Lightly dust rolling pin and dough with flour then roll out dough , rolling 1st one way then opposite way to about 1/2 - 3/4 in thick. Cut with floured biscuit cutter or use a soup can with both ends cut off. Gather leftover dough and knead back together , roll, and cut. Repeat till dough is used up.
  • 5. Spray cookie sheet with non-stick spray or using a paper towel, apply light coating of lard. Place biscuits 1/2 inch apart. Brush tops with buttermilk. Bake 15 - 20 minutes. Brush tops with alittle melted butter as soon as you take them out.

  • Measure self-rising flour into a large mixing bowl. Cut cold butter into small pieces (I usually cut it into ~12 pieces per stick) and add to flour. Use your fingers (or a pastry blender) to work the butter into the flour.
