Here's an easy, make-ahead fruit salad that doubles as a light, refreshing dessert. It'll add sparkle to any occasion!

1/4 cup sugar
1 teaspoon grated orange peel
1 cup fresh orange juice
1 large orange, peeled, cut into bite-size pieces
1 large red apple, cut into bite-size pieces
1 large pear, cut into bite-size pieces
1 cup seedless green grapes
1 large banana, sliced
1 1/2 cups champagne or sparkling white grape juice

Steps:

  • In large bowl, stir sugar, orange peel and orange juice until sugar is dissolved. Gently stir in orange, apple, pear and grapes until coated. Cover; refrigerate at least 1 hour or overnight.
  • Just before serving, stir in banana and champagne. Spoon about 3/4 cup fruit with juice into each of 8 footed dessert cups.

Steps:

  • Open champagne and wine; place bottles in ice buckets filled with ice to keep cold, if desired. Pour each fruit juice into separate clear glass bottle or pitcher. Set out champagne flutes for guests to self-serve.
  • To make mimosa: Fill champagne flute with equal amounts champagne or wine and fruit juice of choice.

3 cups boiling water
2 (3 ounce) packages orange Jell-O
4 cups club soda, cold
1 (11 ounce) can mandarin orange segments, drained
2 cups fresh strawberries, sliced

Steps:

  • Stir boiling water into gelatin mix in large bowl at least 2 minutes until completely dissolved.
  • Stir in club soda.
  • Refrigerate 1 1/2 hours or until thickened, but not set.
  • Stir in oranges and strawberries.
  • Pour into 9x5 loaf pan sprayed with cooking spray. Or bundt pan. Or individuals cups.
  • Refrigerate 4 hours or until firm. Remove from pan if desired.
  • Store in refrigerator.
