MINCEMEAT WALDORF SALAD



Mincemeat Waldorf Salad image

Number Of Ingredients 8

2 envelopes unflavored jello
1 cup apple cider cold
2 cups apple cider cold
1/2 cup sugar
2 tablespoons lemon juice
1 cup apple chopped Red Delicious
1 cup mincemeat prepared
1/2 cup celery chopped

Steps:

  • In a medium saucepan, mix gelatin and cider, let stand for 1 minute. Stir over low heat until gelatin is dissolved. Remove from heat.Stir in cider, sugar and lemon juice until sugar is dissolved chill until mixture mounds when dropped from a spoon.Gentle stir in apples, mincemeat and celery. Spoon into a 5-cup mold. Cover and chill until firm.To serve, unmold onto a chilled plate.

2 large Gala or Honeycrisp apples, unpeeled and chopped (about 3 cups)
2 cups chopped celery
1/4 cup raisins
1/4 cup chopped walnuts, toasted
1/3 cup reduced-fat mayonnaise
1/3 cup plain yogurt

Steps:

  • Combine apples, celery, raisins and walnuts. Add mayonnaise and yogurt; toss to coat. Refrigerate, covered, until serving.
